Back in the 80s, the only cook-ing oil in your pantry may havebeen all-purpose vegetable oil (theexact vegetable a mystery).Today, there are more than a

dozen options. Don’t be stuck inthe oily dark ages. This year use this handy guide

recommended by nationally rec-ognized expert Chef Gerard Viver-ito to determine which cooking oilsyou need to add and subtract fromyour culinary collection. The Everyday Healthy OilsEach of these healthy fats de-

serves a place in your pantry.1. Olive oil. Rich in monounsat-

urated fat, this oil is great for yourheart and skin health. Useit for salad dressings and driz-

zling over breads, but don’t use forhigh-temperature applications. This healthy oil starts to degradebefore you hit 400 degreesFahrenheit.2. Butter. There’s no need to

avoid this tasty fat. The mythabout saturated fat has beenbusted. Butter is fine to use inmoderation for adding flavor toveggies or potatoes.3. Malaysian palm oil. This up-

and-coming healthy tropical oil isa popular replacementfor harmful trans fat. This non-

GMO, balanced, and ultra-nutri-tious oil can already be found inmany of your favorite packagedfoods. It tolerates heat extremelywell, so it’s an ideal all-purposecooking oil. All palm oil isn’t thesame. Look for Malaysian certifiedsustainable palm oil. TheMalaysian palm industry adheres

to the 3Ps sustainability model.4. Coconut oil.Another tropical

oil which is gaining in popularity, coconut oil’s mediumchain fatty acids (also found in

grass-fed butter and palm oil) areeasily utilized as body fuel, whichmay help you manage yourweight. Coconut oil’s naturalsweetness makes it a great choicefor baking. The Special Occasion OilsThese oils have limited uses,

and often a high price.5. Avocado oil. Avocado oil is

rich in nutrients, because it is ex-tracted from the fruit’s flesh. Thisprocess is similar to olive andpalm oil production. Avocado oiltolerates heat up to 500 degrees, which makes it great for broiling.6. Macadamia nut oil.Although

more commonly used a beautyaid, this sweet and butteryoil is good for your health, too. It

contains a 1:1 ration of omega-3to omega-6 fatty acids. Why is thisimportant? Many health expertsbelieve the Western diet containstoo many inflammatory omega-6s.Try macadamia nut oil in salads.7. Flaxseed oil. Flaxseed oil is

nutritious, yet delicate oil. It beginsbreaking down at just225 degrees, so can’t be ex-

posed to heat. This oil is extremelyrich in heart-healthy

Omega-3, but unfortunately, many people find its flavor unap-pealing. Consider adding ateaspoon of flaxseed oil to your

next smoothie to reap its healthbenefits.8. Sunflower oil. Sunflower oil

is rich in skin, brain, and heart-healthy vitamin E tocotrienols. Un-fortunately, it’s also high ininflammatory compounds, so in-stead of cooking with it, rub someon your cuticles or use it to smoothyour hair. Get your tocotrienolsfrom Malaysian certified sustain-able palm oil, nature’s richestsource. The Genetically Modified OilsIf you’re trying to avoid bad-for-

you or genetically modified foods, put these oils on your “do not buy’list. More than 90 percent of thesecrops are growing using geneti-cally modified seed.9. Soybean oil. Soybean oil is

often very highly refined and usedin highly processed foods. 10. Canola oil. Canola oil is

high in caloric content and often ishydrogenated (aka full of transfat). 11. Corn oil. Corn oil is high in

inflammatory Omega-6 fatty acids. 12. Cottonseed oil. Cottonseed

oil is relatively low in healthyOmega-3 fatty acids and high insaturated fats.

Rain is a hotcommodity thesedays. When it rains, it is safe

to say that I will likelycancel all plans, or at thevery least, relocate themto my house so I can siptea and near an openwindow while listeningto the pitter patter ofraindrops in the back-yard.

Actually, with the highwinds, it’s more like I haveto stay at home sitting onthe edge of my seat waitingfor my fence to fall down.Regardless, the rain is stillquite welcome!I have always been early

to rise and enjoy a home-made breakfast on theweekends if I am notbrunching all over midtown. One of my rediscovered

new favorite breakfasts islemon poppy seed pan-cakes. I remember the firsttime I had these bad boyswas during my husband’s“dirty thirty” birthday week-end. Paired with a strong cup

of coffee or tea, these pan-cakes have the perfectamount of zest to perk youup after an evening of invig-orating beer-fueled team

sports or to help you gainenough energy to notspend the rest of your rainyday napping in bed.Lemon Poppy Seed Pan-

cakesDifficulty Level (0-10

(Meyer lemons are in sea-son right now, find a friendwho has a tree!)• juice from two large

lemons• 3 tbsp butter, melted• 1 egg• 2 tsp vanilla extract1/3 cup poppy seedsInstructions:

• Whisk together the dryingredients, sans poppyseeds.• In a separate bowl,

blend the wet ingredientstogether and fold in thepoppy seeds.• Add both sets of ingredi-

ents together and mix justuntil combined, lumps arecompletely fine!Cook on a lightly greased

griddle or pan on mediumheat until lightly golden onboth sides.
