Mexican Street Corn Salad

Strawberry Lemonade Bars

Dressing:½ cup plain nonfat yogurt1 Tbsp lime juice 1 tsp honey ½ tsp paprika¼ tsp cumin

Ingredients:

Instructions:1) Mix all dressing ingredients and set aside.2) Heat oil over medium/high heat in a large saute pan then add garlic and corn. Cook about 15 minutes, flipping frequently, until corn begins to char a bit. Gently toss with lime juice and salt.**3) In a large bowl, combine corn mix, black beans, pepper, onion, cilantro, and cheese. Drizzle sauce over and serve either warm or cold. Perfect over tacos, as a chip dip, or by itself!

Ingredients:Crust:1/4 cup sugar1/2 cup butter room temperature1 1/2 cup flour1/4 tsp salt

Instructions:For the Crust:1) Beat together sugar and butter until light and creamy.2) Gradually beat in flour and salt until the mixture is crumbly.3) Press mixture into a 9 in. x 13 in. pan and bake at 350 degrees for 17 minutes.

Filling:3/4 cup Lemon JuiceZest of one Lemon2 TBSP Lemonade Drink Mix optional8-10 Strawberries roughly 1/2 cup1 1/2 cup sugar3 eggs1/4 cup flour1/2 tsp baking powder1/4 tsp salt

Salad:Splash of oil4 ears corn about 3 cups of kernels1 clove garlic minced2 Tbsp lime juice¼ tsp salt1 cup canned black beans, drained and rinsed1 red bell pepper seeded and chopped½ cup chopped red onion½ cup packed fresh cilantro chopped½ cup feta

For the Filling:1) Place all filling ingredients in a blender and blend until smooth.2) Pour into the hot crust when it’s finished baking.3) Bake for an additional 25 minutes or until the middle is set.4) Sprinkle with confectioners sugar.5) Serve warm or chill in refrigerator until later use.

NEW Foods For 2018- Ahi Tuna Poke Bowl: Ahi tuna, avocado, mango and pico de gallo tossed in Hawaiian ginger-soy sauce served cold over rice with fried wonton.

- Bananas Foster French Toast: Cinnamon swirl French toast topped with slices of fresh bananas in an orange-rum flavored caramel sauce and finished with a dollop of whipped cream.

- BBQ Split: Scoops of BBQ pulled pork, mac & cheese and coleslaw served side-by-side with a pickle spear.

- Blueberry Rhubarb Cobbler: A blend of organic blueberries and rhubarb topped with a cornmeal biscuit and whipped cream.

- Firecracker Shrimp Stuffed Avocado: Guld white shrimp tossed with lime, onion, black beans, tomato and fire-roasted corn in a garlic aioli drizzled with cilantro-infused olive oil, stuffed in avocado halves and served open-face with flatbread.

- Nordic Waffles: Fresh-made waffle wraps in seven varieties: All-day breakfast, berries & cream, cinna-sugar butter, slammin’ salmon on-a-stick, s’more, turkey chipotle club and vegetarian viking.

- Pepperoni Chips w/ Roasted Red Pepper Queso: Thinly sliced fried pepperoni chips served with a warm roasted red pepper cheese sauce.
