Shopping List Meal by Meal :

Monday – Chicken Tikka Traybake with Rice and Cauliflower and green beans

Chicken thighs – skin on and bone in. Tikka curry paste 1 cup basmati wholegrain rice 750ml Chicken stock 1 head of cauliflower Handful fresh coriander 1 onion 2 cloves garlic 1 tsp Turmeric 1 tsp Cumin 1 tsp Ground coriander Green Beans

Tuesday – Breaded Pesto Salmon with sweet potato wedges and green beans

4 Salmon fillets 2 tbsp Pesto Panko breadcrumbs Sweet potatoes Green beans

Wednesday – Veggie lentil curry with crunchy croutons 100g Lentils – green or red or a mix Half a cauliflower – cut into florets Handful of broccoli florets 500ml Vegetable stock 1 Onion – finely chopped 2 garlic cloves – crushed (1 for croutons) ½ Butternut squash – cut into chunks (or you can use frozen!) 2 Carrots – cut into chunks 400g tin of chopped tomatoes 1tsp each of ground coriander, turmeric, cumin, cumin seeds 1tbsp mild curry powder Sourdough bread or alternative for croutons Fresh coriander, flaked almonds and coconut yogurt to serve

Thursday – Lemony fish parcels with cous cous 1 Lemon – juice and zest 1 clove of garlic - crushed 1 Courgette – cut into discs White wine – splash! Cous cous - I buy a pack of lemon and coriander couscous but plain

is fine too. Vegetable stock (as much as needed for your cous cous, see packet

for instructions) Mixed fish – fish pie mix Broccoli – cut into small florets

Friday – Honeyed Turkey skewers with mini hassleback potatoes

Turkey fillets 1 Lemon – juice and zest 2 tbsp Honey ½ inch of Ginger - grated 1 Garlic clove - crushed 2 tbsp Soy Potatoes – new potatoes or mini potatoes Carrots Peas

Saturday – Beef casserole with dumplings Beef casserole meat 3 Carrots 2 Parsnips 500ml Beef stock 1 Onion 2 cloves of garlic -crushed 1 tsp Mixed dried herbs 2 tsp Worcestershire sauce Big squirt of tomato puree 400g Tinned tomatoes Big glug of red wine Cavelo NeroFor the Dumplings: 250g self raising flour 125g cold butter 1 tsp garlic powder 1 tsp fresh rosemary – finely chopped

Sunday – Roast Pork with Carrot and Parsnip Crisps Boneless pork leg Potatoes – Maris Piper Handful of fresh sage Savoy cabbage 3-4 Carrots 2-3 Parsnips Splash of white wine (optional) 1 tbsp flour 3 Granny Smith apples – cored and peeled and cut into chunks 1 tbsp Apple cider vinegar 2 tbsp caster sugar

I’ve tried to vary the meal plan as much as I can whilst at the same time making use of veggies and ingredients bought for one meal to use in another so I’m hoping there is a good mix and overlap as well as mixing it up enough so that you don’t feel like you’re eating the same thing every day!!
