Tender’s Take on Change of Season We have been blessed with a number of tal- ented bartenders in recent years. With a new seasonal menu, we are giving spe- cial consideration to our squeakers and pay- ing homage to their dedication, ingenuity and positive attitude. We asked them to write a brief summary of their flagship contributions to our new seasonal cock- tail list, and without a moment’s hesitation, re- ceived page long essays detailing their processes and ideas. Suffice to say, we were delighted to taste test their drinks. 日本のお茶会 (Japanese Tea Party) was cre- ated to emulate the clean, delicate and floral fla- vours of central Japan. Yamazaki Distillers Re- serve is infused with “Japanese Garden” green tea which consists of rose petals, oolong green tea and dehydrated strawberry. This is balanced with the sandalwood, white peach and light raspberry notes imparted on the whisky from the Mizunara cask (Japanese white oak). The resulting infusion is robust in light fruit and green tea which is paired with Gekkeikan sake; a notoriously delicious and fruity Japanese rice wine. To combat the overall delicateness of the drink Genmaicha tea and ginger is added; a rich tra- ditional roasted rice and Sencha green tea pair- ing. This compliments the sandalwood notes in the whisky nicely and adds depth to the over- all drink. Let Japanese Tea Party transport you to the midst of central Japan. かんぱい! (Cheers!) Breakfast at A’Marios. Inspired by a culinary obsession and with a strong Italian background, Breakfast at A’Marios speaks a rich combination of earthy umami and decadent sweeteners. 日本のお茶会 (Japanese Tea Party) was cre-ated to emulate the clean, delicate and floral fla-vours of central Japan. Yamazaki Distillers Re-serve is infused with “Japanese Garden” green tea which consists of rose petals, oolong green tea and dehydrated strawberry. Habitation Saint-Etienne – 2005 Extra Vieux Islay Single Malt Finish Rhum Agricole

After seven years of maturation in tradition-al oak barrels, this rum has spent over twelve months finishing in Islay Single Malt whisky casks. It is a terrific neat spirit that marries tradi-tions of French Agricole Rhum and Single Malt Scotch whisky. Notes of subtle salt and smoke are sure to surprise.

This Just In:Habitation Saint-Etienne – Black Sheriff

The ‘HSE’ Rum Company offers a range of rums finished in retired cognac, whisky and sherry casks, adopting the same principles of matura-tion that many innovative single malt Scotch whiskies have employed for decades. This blend of three to four year-old rums was mainly aged in ex-bourbon barrels to produce a sweet, warm, and fruity Rhum Agricole that is reminiscent of a well-crafted American bourbon.
