From our initial introduction to the hunt, bid, counter offers, inspections, and final closing, Tim’s professionalism, organization skills and attention to detail made this, our fourth home purchase, seamless and practically stress free!

Tim’s time and attention to me were above and beyond what I had even hoped for. In an eleven (yes 11!) hour day of searching for homes he just kept on with a positive even keel and steadiness that put me at ease. It’s a rare person that doesn’t start grating on someone’s (mine) nerves after a couple hours! I told him from the get-go that it might be difficult to work for me and my husband, as we had very different ideas of what we wanted in a home.

I wanted a farm house, and my husband wanted to be in the city, among many other stipulations we both had. What did Tim find for us, but a farm house with a huge yard, in the city! Amazing! There were multiple offers on the home, and Tim guided us through so we were able to acquire the home we’ve both been dreaming of, within our budget. Amazing! Thank you, Tim, for being my perfect home-hunting partner!

West End Compass sat down with funny lady Mo Collins on a very serious subject during her visit for a local charity event. Outfi tted in ensembles from Hot Mama, Collins worked the camera while explaining her very personal connection to a cancer fundraiser for Gilda’s House Twin Cities.

Another fundraising event just wrapped up at Th e Shops at West End. Twin Cities Film Fest had one of its best years on record in October. Th e 10 day festival showcased 76 movies, a number of VIP mixers, special events and red carpet photo opportunities. Save the date – next year’s TCFF is set to open Oct. 16.

KiDs eVenTsThe Shops at West End was hopping with family-friendly events this summer and fall. Creative Kidstuff’s summertime concerts took to the central mall arcade on Wednesdays from June through August. The busiest concert featured Grammy award winning band The Okee Dokee Brothers. In October, the popular Great Pumpkin Fest attracted hundreds of families with kids in costumes.

Thousands fl ocked to The Shops at West End’s You Betcha! Minnesota-Made

Festival. The full day event featured a classic car show, food trucks, exhibits,

loon call and Minnesota accent contests, and live music. Music included legend bands from the ‘60s and ‘70s, Prince cover band The Purple Xperience and disco band Boogie Wonderland. The

event was presented by The Shops at West End, Discover St. Louis Park and

the City of St. Louis Park.

Twin CiTies Film FesTwHen: Oct. 17-26, 2013

For the fourth year in a row Twin Cities Film Fest showed audiences the best films the industry has to offer while also showcasing the Twin Cities as a hot spot for premiere work. Held at ShowPlace ICON Theatre at The Shops at West End, TCFF offered a “total film experience” by including mixers, educational offerings and special events. sTrongman CompeTiTion

wHen: Oct. 26, 2013

A strongman competition was held during the Great Pumpkin

Fest involving the St. Louis Park police and fire departments. Events included an obstacle

course, 500 lb. tire flip, keg run, fireman’s carry, tarp carry, tug of

war and the pulling and pushing of a 2,400 lb. Fiat. The police were

victorious over the fire department with a final score of 5.5 to 4. The event was sponsored by M. Gayle

Studio located in St. Paul.

Mo coMes hoMe “Hell yes, I’m nervous,” exclaims Minnesotan,

comedienne and MadTV veteran Mo Collins. It’s Aug. 5, 2013 and tonight she’s doing stand-up at the Gilda’s Club Twin Cities annual Roseanne Roseannadanna Golf Benefit. Why is she nervous? “My mom and dad are going to be there!” she says with a laugh. “I haven’t slept in a week and won’t until it’s over.”

But the sacrifice to her sleep schedule is worth it if she can help Gilda’s Club Twin Cities (see next page), which has a special place in Collins’ heart for two reasons. First, the Club is named after fellow comedienne Gilda Radner, who died of ovarian cancer in 1989. “I love Gilda,” she says. “Still love her to this day.”

Second, cancer support has become a cause close to Collins’ heart. In 2011, she was diagnosed with gastrointestinal stromal tumor (GIST) cancer after discovering a lump in her abdomen. “Because of my own cancer story I perk up when I hear about something in the cancer support world,” she says. “I want to be a part of that. Not just to support others, but to support myself as well.”

So Collins went to the Gilda’s Club website and contacted the organization saying she was inter-ested in getting involved. The response? An en-thusiastic yes from Gilda’s Club Twin Cities board chair Jenni Lilledahl, who is also co-owner of Brave New Workshop where Collins spent many years doing improv and sketch comedy. “We were giddily surprised!” exclaims Lilledahl. “As anyone [working at a] nonprofit knows, having a major talent contact you to offer their support is a real rare and surprise gift. So of course our response was ‘Wow! Yes!’”

No one should have to face cancer alone. That was comedienne Gilda Radner’s vision. Now, her vision is coming to light in the Twin Cities as the Gilda’s Club Twin Cities sets to open by the end of 2013. “The Minnesota medical community is on the leading edge of cancer care,” says Gilda’s Club Twin Cities executive director Michelle Silverman, who lost her mother to cancer at age 14. “But effective cancer treatment requires more than medical intervention. It requires social, emotional and psychosocial care. That’s where Gilda’s Club comes in.”

Gilda’s Club offers a comprehensive program free of charge that offers support to those touched by cancer, at any stage from diagnosis, to reoc-currence and even bereavement, including their families, friends and coworkers. Gilda’s Club offers support groups, education, workshops, mind and body programs such as yoga and meditation, artistic expression and nutritional classes as well as social opportunities — all overseen by licensed mental health professionals. “Cancer can be very isolating,” says Silverman. “We will provide the community with support that is so needed.”

The first Gilda’s Club was founded after Radner passed away from ovarian cancer in 1989 by Radner’s widower Gene Wilder, broadcaster Joel Siegel and Joanna Bull, Radner’s cancer psycho-therapist. In 2009, Gilda’s Club merged with The Wellness Community, and both are now part of the Cancer Support Community. Together, the three organizations have more than 50 affiliates nationwide. “Being part of this national affiliation really helps strengthen our organization,” says Sil-verman. “We’re using the best practices that have been developed over 30 years, and we’re part of ongoing research about the psycho-social aspect of cancer care.”

The mission to open a Gilda’s Club in the Twin Cities began with a Capital Campaign in 2010 to raise $3.8 million. As of September 2013, $3.2 million had been raised with a goal to open the 7,300 square foot clubhouse by the end of 2013. “All of a sudden I got an email from Jenni,” recalls Collins, who had crossed paths with Lilledahl on the Minnesota comedy scene. “That was really cool and a total coincidence.”

Instantly Gilda’s knew that Collins would be the perfect headliner for its fundraiser. “She was amazingly generous . . . offering her time, talents and willingness to share her cancer story,” says Lilledahl. “Mo has been a true gift to Gilda’s Club Twin Cities.”

At the Roseanne Roseannadanna benefit, which raised $180,000 and is named for Radner’s well-known character from Saturday Night Live, Collins performed a stand-up set to the 250-person crowd that focused on her own cancer journey. “My stand-up is very storytelling,” says Collins. “I try to get the feel of the room and incorporate my stories into the room.”

“Mo’s performance was hilarious and touching,” says Lilledahl. “She not only made us laugh, but shared true vulnerability with her own cancer story. Mo gave that gift of understanding to so many in the room who have their own cancer stories.”

“Mo was Gilda’s spirit in motion,” says Michelle Silverman, executive director of Gilda’s Club Twin Cities, of Collins’ performance. “She completely understood the need for humor and was so relatable to every single person in the room.”

Her stand-up was followed by a question and answer session with Brave New Workshop co-owner John Sweeney, who has worked with Collins on previous projects. “He always speaks highly of her,” says Lilledahl, who is married to Sweeney. “Anyone who has worked at Brave New Workshop will tell you, once you’ve worked at BNW, you have a common bond forever with everyone before and after you.”

Collins’ start in comedy is not the story of a stage-hungry attention-seeker. “I was about the shiest kid you can possibly imagine,” says Collins, who was raised in New Hope, Minn. But a teacher in 8th grade changed all of that. He saw Collins — then called Maureen — in the hallway and yelled after her, “Hey Mo!” Collins, thinking he was calling after a boy, didn’t think to turn around. But then the teacher pointed at her. “I started shaking,” she says, recalling the moment. The teacher made her audition for a sketch and improv group. And then it clicked. “He gave me the name Mo. He gave me my life,” she says, getting teary-eyed thinking about the moment. Up until his death, he continued to keep tabs on Collins and called to check up on her.

Following high school, Collins worked at Brave New Workshop in the 1990s doing improv and sketch shows. “Brave New Workshop and [founder] Dudley Riggs were a perfect training ground,” she says. “You got a work ethic there. You worked really hard and you made crap money. So you really had to ask yourself, Do I want to do this? And I learned that yeah, I need to do this. I’m supposed to do this. I have to do this.”

So after stints doing shows in Los Angeles and performing street improv at Disney in Florida, Collins packed up her North Min-neapolis home in 1997, put her two-year-old son Cullen in the car and moved out to Los Angeles. “My husband at the time [drum-mer Jimi Englund] could have worked from anywhere and even toured with Stomp at the time,” recalls Collins. “I just knew I wanted to be out in LA and I thought, What kind of parent am I if I don’t go for my dreams?”

Within a year she landed the gig on MadTV and stayed for five seasons playing such beloved characters as Stewart’s mom Doreen and Lorraine with the infamous cough, among many others.

Since leaving MadTV, she’s appeared on a number of television series, including Arrested Development, According to Jim and currently appears in NBC’s Parks and Rec-reation as unpolished cable-TV host Joan Callamezzo. “Everyone is phenomenal,” Collins says of the Parks and Recreation cast. “Amy [Poehler, who plays lead Leslie Knope] just lets the camera roll. She’s very generous. She wants comedy and lets it happen. A lot of times, Amy and I improv and a lot of that gets used. I love that.”

And then in 2011 her life changed. “I was sitting on the couch watching the Dis-covery Channel when I noticed this lump in my abdomen,” Collins says. Without symptoms, Collins didn’t think anything of it, but her fiancé (now husband) Alex Skuby insisted she have the lump looked at. “Thank God for Alex,” Collins said. “I didn’t think anything was wrong, but he knew I needed to have it checked out. Without that, who knows how bad it could have gotten.”

After being diagnosed with GIST, things moved quickly. Collins went on a chemo pill, which she still takes to this day, that causes chronic fatigue and issues with her eyes. The pill shrunk the tumor to half its size. Then, surgery followed. Following surgery, Collins received good news. They

had removed the tumor and a reconfigura-tion of her intestinal tract was not needed. “It was one of the happiest days of my life,” she says.

Collins is a big believer in the power of mental well-being when living with cancer. “When I was first diagnosed, my fear was high and the tumor grew really quickly. I believe that fear fed the tumor.” It was during this time that Collins threw herself into her passion for painting. “I wanted to keep busy, but art truly is my first passion,” she says. In July 2013, she opened her first art show with other comedians called “F-ART: Funny & Art,” in Los Angeles’ Echo Park. “I need that outlet,” she says of painting. “Being creative just makes me who I am.”

After a two-year battle, Collins is now in remission and continues to work with cancer support groups in addition to Gilda’s. The Life Raft, which is a research and support group specifically for people with GIST, is especially close to her heart. “GIST is a very rare cancer that doesn’t take traditional treatments,” she says. “I want to educate people — even the doc-tors! — who often loop it in with stomach and colon cancers.”

Throughout her journey, Collins has been a role model for those living with cancer. “I have a chronic disease, but I don’t want it to affect my quality of life,” she says. “I believe in the power of positive thinking and taking care of myself.” And that’s something Gilda would have stood behind.

Just driving through St. Louis Park it’s hard to miss many of the amenities and perks of living here.

It takes just minutes to get to downtown Minneapolis and many other destinations are easily accessible via Highways 100, 394 and 62. Of course we can’t forget the beautifully developed Shops at West End area – which seamlessly incorporates independent boutiques, restaurants and entertainment. Plus, to stay healthy, the area doesn’t disappoint – from the mammoth Life Time Fitness to the smaller options of Haute Barre, Surge Cycle and the nearby Jewish Community Center (JCC).

St. Louis Park seems to have it all, which translates into value for both potential homebuyers as well as current owners who may be thinking about selling.

We continue to see the housing market improve across the Twin Cities Metro area, paired with mortgage rates that are still at historic lows. But what does this mean for St. Louis Park, you ask? Well, I’ll tell you.

It’s important to understand that the housing environment is changing as it relates to distressed properties (foreclosure and short sale properties), which have drastically aff ected market values over the last fi ve years due to the higher number of homes on the market. Th at has all but changed.

Over the last 12 months in St. Louis Park, the number of foreclosed homes dropped 25.8% from the previous year, which in turn dropped 22% from the year before. Interestingly enough, the number of traditional home sales in St. Louis Park has also decreased by about 26% over the prior year. Take into consideration

both of these factors, decreased distressed properties as well as a decrease in the inventory of traditional homes for sale, and it comes down to the principles of simple supply and demand. More and more individuals and families are looking to call St. Louis Park home, but with limited homes to choose from, property values are going up.

In August Robert Zagaros, owner of Bergstrom Jewelers, announced the names of a winning couple in the store’s Wedding Showers promotion. Brian and Melissa Meyers received a check refunding $5,000 of the cost of their engagement ring because it rained more than one inch on their wedding day.

“At Bergstrom Jewelers, wedding showers mean refunds!” explained Zagaros. Th e heavy downpours in July resulted in the win.

Th e Meyers participated in the Wedding Showers promotion by purchasing their ring from the jeweler, then completing a Wedding Showers Certifi cate and returning it to Bergstrom Jewelers 30 days prior to their wedding on July 13, 2013. Because the National Weather Service at Minneapolis/St. Paul International Airport measured 2.63 inches of precipitation between 12:01 AM and 11:59 PM on the day of their wedding, a refund for the purchase price of their engagement ring was issued. A supersized check for $5,000 was presented to the happy couple at Bergstrom Jewelers in Th e Shops at West End.

Brian and Melissa may have had some trepidation about selecting unlucky number thirteen as their wedding date, especially when coupled with a second thirteen in the year 2013. But for the local landscaper and his marketer wife, it turned out to be a lucky choice indeed. For them, wedding showers meant extra dollars in their newlywed budget!

A The program was developed as a way to reach existing audiences and to introduce new audiences to opera through new technology.

The Met has an 80-year tradition of broadcasting live performances to millions of radio listeners globally on the Toll Brothers–Metropolitan Opera International Radio Network. This offered the springboard for the Live in HD program. Most of the HD transmissions are also simulcast on radio.

A There is a huge team of people involved in bringing Met performances to the big screen. Gents, do you need some help defining what to wear to certain events and parties? Whether your host requests white tie or black tie attire, formal or semiformal wear, follow these tips to look your best.

1 Dress for the occasion. Do some research before deciding what to wear. You can find tried-and-true tips below, or you can ask other attendees what they plan to wear if you’re unsure. To be safe, overdress rather than underdress; it is easier to remove a tie or jacket than to scramble for one before the party.

2 prepare your outfit ahead of time. Waiting until the last minute could limit your choices. If you need to rent men’s formalwear, the selection could be picked over. On the other hand, if you’re buying a new tuxedo or suit, you’ll need to give your clothier or tailor at least two weeks to fit it to you.

Wear it with confidence. No matter what you are going to wear, wear it with poise. Looking good requires more than just wearing the right thing. You have to carry yourself well.

White tie events Think ultra fancy. Required attire is a black tuxedo jacket with tails, formal black trousers with a single band of satin running down the leg, a formal wing collar dress shirt, a formal white pique vest and a white bow tie. Since tuxedo pants don’t allow for a belt, you will need to wear braces. When choosing a fabric, avoid polyester. Instead, opt for wool, which is a versatile fabric that holds its shape and keeps you comfortable. Complete your white tie look with patent leather black dress shoes.

Black tie events Black tie attire means you should wear a tuxedo, not a black suit. A classic tuxedo will always fit the bill. Wear a black tuxedo jacket, tuxedo pants, formal dress shirt, cummerbund or vest, bow tie and highly polished dress shoes. Look like a true pro with these style tips: Choose grosgrain lapels instead of satin. Grosgrain is more durable and will look sleeker longer. Also, remember to match your socks to your pants and not your shoes (e.g., If you are wearing a navy tuxedo, wear navy socks).

Black tie optional You may either wear a tuxedo or a black suit; however, you should really wear the tuxedo. If you are wearing black, check for any rips, missing buttons or stains. Stave off lint with a lint roller or brush before dashing out the door.

cocktail dress Try a freshly pressed suit with a tie and dress shirt. You want to look polished, not like you just walked away from eight hours in the office. If the event is in the evening, you should wear a dark suit and add a splash of color with your tie and a pocket square.

semiformal attire Semiformal wear can be a gray area. Traditionally, it means you should wear a suit, but you may also be able to wear dress pants with a sportcoat. Make your decision based on the time of day and nature of the event. If it’s a daytime wedding, for example, err on the side of a suit. But if it’s friends going out for a nice dinner, dress pants and sportcoat would be fine. Choose lighter colored trousers and jackets in cream or tan for daytime events and darker colors such as charcoal, navy and black for evening.

Makes one 10–12 cup Bundt cake

CAKE – 3 cups (360 g) all-purpose fl our

– 2½ tsp baking powder

– ½ tsp salt

– 1 cup (240 g) margarine, softened

– 2 cups (400 g) sugar

– 4 large eggs

– 1 tsp coconut extract

– 1 tsp vanilla extract

– ¾ cup (180 ml) buttermilk

– 1½ cups (350 g) sweetened, fl aked coconut, toasted, divided

GLAZE – 1 cup (120 g) confectioners’ sugar

– ½ cup (120 ml) cream of coconut

– 2 tbsp milk

– Sweetened whipped cream, optional

Preheat oven to 350°F (180°C). Grease and fl our the Bundt pan you will be baking in. Set aside.

Toasted Coconut: Bake at 350°F (180°C) for 15 to 20 minutes, stirring often until toasted and fragrant. Set aside.

Cake: In a large bowl, combine fl our, baking powder and salt; set aside. In another large bowl, with mixer on medium speed, cream the margarine and sugar together, about 2 to 3 minutes. Add eggs 1 at a time, beating well after each addition. Add the extracts and beat well. Add the fl our mixture in thirds, alternating with the buttermilk and ending with the fl our. Gently stir in 1 cup (230 g) of the toasted coconut.

Pour batter into prepared pan and gently cut through batter once or twice with a rubber spatula. Bake 60 to 70 minutes or until cake is lightly browned and a toothpickinserted in the center comes out clean. Cool in pan 10 minutes on a wire rack. Invert cake onto rack and cool completely.

Glaze: In a small bowl, whisk confectioners’ sugar, cream of coconut and milk together until smooth. Place cooled cake on a serving plate and drizzle glaze evenly over the top.

Sprinkle with remaining ½ cup toasted coconut. Serve.

– 1/4 cup ancho chili pepper

– 1/4 cup smoked paprika

– 3+ tsp garlic powder (depending on your love of garlic)

– 2 14.5 ounce cans of diced or crushed tomatoes with juice

– 1 box of low sodium chicken broth

– 10-12 okra, sliced

– 1/2 small bag of frozen peas

– 1/2 bundle of kale (de-rib and tear into small pieces)

– 1 cup barley

– 4 cloves of garlic

– 2 tablespoons of herbs de Provence or comparable dried herb mixture

– Salt and pepper to taste

Pan sear ground beef with grated garlic and half of the herbs until done.

Put in a large saucepan with cans of to-matoes, chicken broth, herbs, barley and kale. Bring to boil then let simmer roughly 45 minutes or until barley is tender.Then add okra and peas and simmer for another 15 minutes or until okra is tender but still a little al dente. Add salt and pep-per to taste.

– 1 cup (260 g) creamy peanut butter

– ¾ cup (90 g confectioners’ sugar, sifted

– 1 cup (240 g) unsalted butter, softened

– 1 cup (200 g) sugar

– 1 cup (220 g) light brown sugar, packed

– 1 tbsp vanilla extract

– 3 large eggs, room temperature

– 1¾ cups (210 g) all-purpose fl our

– 1 cup (85 g) unsweetened cocoa powder

– 1½ tsp baking soda

– 1 tsp salt

– 1 cup (240 ml) buttermilk

– ½ cup (115 g) sour cream

– 8 oz (225 g) 60% cacao bittersweet

– chocolate bar, coarsely chopped

GLAZE

– 1¼ cups (165 g) semisweet chocolate chips

– 7 tbsp heavy cream

– Semisweet chocolate curls, for garnish

– Peanuts, lightly salted, for garnish

– Whipped cream or ice cream, for serving

Preheat oven to 350°F (180°C). Grease and fl our the Bundt pan you will be baking in. Set aside.

Peanut Butter Filling: Mix peanut butter and confectioners’ sugar together in a small bowl. Set aside.

Cake: In a large mixing bowl using an electric mixer, cream butter and sugars together until light and fl uffy.

Mix in vanilla and blend well. Add eggs, 1 at a time, beating until light and fl uffy. In a medium bowl, sift fl our, cocoa, baking soda and salt together. Mix buttermilk and sour cream into batter, alternating with sifted dry ingredients. Mix well, but do not over beat. Fold in chopped chocolate. Spread 2/3 of batter evenly in prepared pan, using a spatula to push batter into crevices of pan as needed.

Top with peanut butter fi lling in a ring, careful to not let fi lling touch the sides of the pan. Cover with remaining batter and smooth top.

Bake 40 to 45 minutes or until a toothpick inserted into the center of the cake comes out clean. Cool in pan 10 minutes on a wire rack. Invert cake onto rack and cool completely.

Glaze: In the top of a double boiler, combine chocolate chips and cream over simmering water. Stir until smooth.

Pour glaze over cooled cake. Place cake on plate and decorate with chocolate curls and peanuts. Serve with fresh, sweetened whipped cream or ice cream.

DOUBLE CHOCOLaTE CaKE WITH PEa NUT BUTTER FILLINGSubmitted by Nordic Ware

Double chocolate cake with peanut butter fi lling

Serves 8Preparation time: 20 minutes

Cook time: 6-8 hours

– 2 tbsp olive oil

– 2 cups mushrooms, sliced

– 1 cup green bell pepper, seeded, chopped

– 1 cup yellow onion, fi nely chopped

– 3 cups spinach, loosely packed, chopped

– 1 lb. 2% cottage cheese

– 2 cups + plus ½ cup shredded mozzarella cheese, divided

– 26 oz. jarred low sodium pasta sauce

– 1 pound, about 3 cups, zucchini, sliced, ¼-inch thick rounds

– 8 oz. no-boil whole wheat lasagna noodles

– ½ cup parmesan cheese, grated, divided

Directions: Heat oil in large skillet over medium-high heat; add mushrooms, peppers, onions and spinach. Cook 5 minutes, or until water evaporates. Season with salt and pepper.

In mixing bowl, mix cottage cheese, 2 cups mozzarella cheese, and ¼ cup parmesan cheese. Divide into 2 portions.

Grease slow cooker. Cover bottom with 1/3 of sauce and assemble as follows: single layer noodles, 1/3 of cooked vegetables, single layer zucchini, 1 portion of cottage cheese mixture, single layer of noodles.

Repeat layering once in same order. Add layer of remaining sauce, cooked vegetables and zucchini.

Sprinkle ½ cup mozzarella and remainder ¼ cup parmesan cheese on top.

Cook on low for 5 hours or until noodles and zucchini are tender.

– fresh mozzarella (I like to use the small mozzarella balls)

– grated parmesan (optional)

– avocado wedges

Drain the beans and add to a large pot. Add about 5 cups of water. Add in the onion, celery, peppers, ancho peppers, salt, bay leaves, garlic, thyme, oregano, and cay-enne. Bring to a boil over high heat and cook for about 20 minutes. Reduce to low and cover. Continue to cook until beans are soft (about 3 hours). Remove bay and ancho peppers. Mash up the mixture slightly with a fork or wooden spoon. Add in the cilantro, sherry/port, miso and lime juice. Cook for about two more minutes.

To serve: Ladle the cooked brown rice into each bowl and form into nest. Ladle the black beans into the middle of the rice nest. Top with fresh mozzarella, chopped tomatoes, sour cream, lime wedges and avocado. If you’re a cheese lover, add some grated parmesan for an extra layer of deliciousness! Serve and enjoy.

Directions: In large skillet, brown beef. Remove from pan and reserve. Add onions, mushrooms, herbs, garlic and vegetables to pan. When vegetables are cooked add tomatoes and wine to deglaze. Cook until liquid is nearly evaporated. Mix water and beef base together. Return meat to pan with vegetables andadd water/beef base mix. Bring to a simmer. Cook for 40 minutes. Season with salt and pepper. If sauce is too thin thicken with a roux or slurry.

Place in desired serving dish. Top with mashed potato and place in oven to brown potato.

Yield: 1 quart

– 2 ½ oz yellow onion, chopped

– ¼ oz garlic, minced

– ¼ oz oil

– 1 large basil leaf, julienne

– 1/3 cup tomato paste

– 1 quart whole peeled tomatoes

– 3 oz vegetable stock

– 7 oz heavy cream 36%

– 2 tsp kosher salt

Directions: Sweat onions in oil until translucent. Add garlic and sauté until it starts to brown slightly. Add tomato paste and basil and sauté quickly. Add tomatoes and stock, bring to a simmer then add cream. Let simmer to reduce slightly. Add seasoning then puree partially. There should be some chunks of tomato left.

Pour soup into desired serving dish. Top with sliced bread and choice of cheese. Place in oven to melt cheese and brown bread.

– Bundle of asparagus

– 1 box of sheets of phyllo dough

– 10 thinly cut slices of prosciutto

– Expeller pressed coconut oil in spay can or basic cooking spray

Wash and cut (or snap off) tough ends of asparagus. Set aside in groups of two. Take one slice of prosciutto and wrap, barber pole style around the two asparagus leaving tips exposed and set aside. Repeat with remaining asparagus. Take thawed phyllo dough sheet, cut in half lengthwise and spray with cooking spray (protect surface under with wax paper or something comparable). Roll pair of prosciutto wrapped asparagus in half sheet of phyllo dough, leaving tops of asparagus visible and spray again with cooking spray.

Place on cookie sheet and cook at 350˚ for 10-15 minutes or until phyllo dough is golden brown, and serve!

She may be young, but Forever Yogurt’s local franchisee Christine Frandsen makes up for that in her scores of ambition. For Frandsen, entrepreneurship runs in her blood: her grandfather, father, uncle and aunts have all owned successful businesses. That’s why the motivated University of St. Thomas graduate decided to pursue her dream of being an independent business owner.

After researching a multitude of franchises – from pizza to blow dry bars – Frandsen’s cousin opened her eyes to the Forever Yogurt chain. You could say from there she never blinked.

“I fell in love with the concept. They’re (Forever Yogurt) known for their frozen yogurt in the Chicago market,” said Frandsen. “I’m excited to bring it to Minnesota.”

Frandsen headed to Forever Yogurt’s Chicago corporate headquarters to discuss the concept and sign the paperwork to become a franchisee. Soon after, she was back in Chicago for two weeks of immersive training both in stores and in their classroom. She learned all about the

franchise and the product, as well as what it takes to run a store directly from the store’s team members. Once back in the Twin Cities, she also spent time achieving her food manager certification from the state of Minnesota.

Fast forward nine months, and Frandsen was opening her first Minnesota Forever Yogurt location at The Shops at West End in late August 2013. Three weeks later, the store had its official grand opening on Sept. 21. To celebrate the opening, Frandsen held a contest which awarded free yogurt for a year to the first 50 people in line that day. Four brave souls set up camp outside the store at 5 a.m. that morning to secure their place in the giveaway.

One thing that stood out to Frandsen is that Forever Yogurt is extremely in tune with its customers. Jewish customers will be pleased to know their yogurt is Kosher certified, as are select toppings. For those with nut allergies, the store separates nuts in one specific area of the topping bar; plus, the staff is trained to avoid cross contamination. And, those who are lactose intolerant always have at least two non-dairy options available. Forever Yogurt’s yogurt dispensers also have detailed flavor labels that indicate any possible allergens as well as other key dietary facts.

are variations on vanilla and chocolate flavors. There are always tart flavors, non-dairy sorbets and lowfat/nonfat/no-sugar-added options as well. This winter, FY will feature seasonal flavors including Candy Cane Crush and Holiday Eggnog.

If you’re in the mood for a hot beverage, Frandsen suggests a Forever Yogurt Froth™. Froths are premium hot chocolates available in one of six flavors, including a spicy Abuelita, Hershey’s Milk and Dark Chocolate, Reese’s Peanut Butter Cup, and Andes Mints. Froths are made with milk but can be ordered with soy or lactose-free options; for even more flavor, toppings can also be added as well.

In addition to flavorful yogurts and rich Froths, the bright interior layout also makes each store special. “I love that each Forever Yogurt store is unique,” explained Frandsen. “From the Minnesota-themed illustrations on the wall, to the reclaimed wood used on the walls and tables, the design is unique to my store.”

Another unique addition to the interior is that Frandsen opted to create a free-standing topping bar. Most frozen yogurt stores have

their toppings mounted on the wall, but she wanted the toppings to be a decorative focal point.

Frandsen says the best part of her store experience thus far has been the satisfying commendations she hears from her customers…“This is the classiest yogurt place we’ve ever seen.” “We won’t go anywhere else.” “This place is always so clean, we’re impressed.” Her store is beginning to build quite the following; in fact she knows the names of many of her frequent customers who have already become loyal to the brand.

With one store now open, and the excitement for the franchise spreading, Frandsen plans to open additional Forever Yogurt stores in the Twin Cities in the coming years.

We admire her drive, especially since she spends over a hundred hours per week nurturing her first location. But that’s exactly what keeps her going. “If there’s one thing I’ve learned from running my own business, there’s no sitting down. I’m constantly on the go. I love it!” said Frandsen.

HOW CAN I GET MOTIVATED TO STAY ACTIVE IN WINTER?Certainly enlisting the support of others helps maintain motivation. Joining a tennis league or a Nordic ski club can help give a sense of community, accountability and structure. In addition to staying ac-tive physically, consider establishing creative or intellectual activities such as an art class, book club or learning a new language. What better time than winter to explore indoor activi-ties, which can invigorate the mind and provide a healthy distraction.

WHAT ARE GOOD WAYS TO KEEP MY MOOD UP THROUGH THE COLD, DARK WINTER?Through a balance of rest, move-ment, nutrition, connection to others and relating kindly to yourself, rather than engaging your inner-critic. Many with the winter blues can be hard on themselves. It’s important to remember your feelings aren’t permanent and you’re not alone. I recommend a meditation practice, and ideally a moving meditation such as yoga, to assist with letting go of that inner-critic. This is a vital and ancient medicinal practice which modern scientifi c research also sup-ports. Also consider brainstorming a list of all the factors that lead to your overall well-being. Then select 3 that are “non-negotiable.” An example could be: (1) getting 8 glasses of water a day, (2) sleeping 7 hours a night, and (3) exercising 4 days a week. Then ask a friend to help hold you accountable.

I’VE READ ABOUT LIGHT THERAPY. HOW DOES THAT WORK AND IS IT EFFECTIVE?Light therapy involves exposure to a full-spectrum light by sitting in front of a box containing light bulbs with a screen, similar to a lamp. By allowing the skin and periphery of our pupils to absorb the light, it is understood that a "light box" infl uences our circadian rhythm, the body's internal clock. Depending on when bright light is presented, the body's internal clock - which controls daily rhythms of body temperature, hormone secretion, and sleep patterns - shifts ahead or becomes delayed. Light therapy can correct an inner clock by stimulating chemicals in the brain connected to mood. One example is the hormone melatonin, which in excess can lead to sleepiness. This may explain why people not getting the light they require feel lethargic, less motivated and experience the "winter blues." Research indicates that resetting or maintaining the schedule of your internal clock through light therapy sessions can help alleviate low mood. This is particularly true when used consistently for about 20-30 minutes per day, typically in the morning upon waking. Experiment with the time of day and length of

time that's best for you.
