Executive Summary
Coffee is one of the top consumed drinks among UNT students. UNT students would want to
know where one could get the best cup of coffee at an affordable price and convenient location. In
the Methods of Evaluation section, we give a detailed description of our survey procedure and our
criteria. We also discuss our visits to each café. In the Results of Evaluation section, we describe
our survey results. In the Analysis of Evaluation section, we analyze our survey results and our
criteria grading for each café. In the Recommendation section, we finalize our study with a simple
clear recommendation for the best coffee on campus.
The options we evaluated for this study included 4 of the cafés on the main UNT campus: Café
GAB, the Biz Café, the Go! Station, and a combination of the Food Court Café and Khush Roti. We
combined the last two options into one option due to their closeness to each other and shared
outdoor seating. We evaluated each campus café based on the following criteria: atmosphere,
taste of coffee, cost per ounce of coffee, location, speed of service, variety of drinks, and food
options. We evaluated these criteria using a combination of quantitative scales and surveys and
qualitative observations. After evaluating every option based on our criteria, we recommend the
Biz Café as the best café on campus.

Introduction
According to “The Nutrition Journal,” Coffee is one of the top consumed drinks among UNT
students, especially during this time of the semester as we are approaching finals week. Our
feasibility study holds value with UNT students because it breaks down and explains the pros and
cons of each café on campus.
A study published in the October 21, 2007 issue of “The Nutrition Journal” revealed that moderate
coffee consumption improves student test scores. 51 percent of 496 college students regularly
drank coffee and other caffeinated beverages to help them in test preparation. John Wiley and
Sons in "Human Psychopharmacology" agreed that caffeine gave an advantage. The study showed
that higher levels of caffeine in coffee showed increased levels of alertness and improved mental
responsiveness.
The options we evaluated for this study include Café GAB, the Biz Café, the Go! Station, and the
Food Court Café and Khush Roti. We combined the last two cafés into one option because they
are very close to each other and share the same outdoor seating. We selected these cafés as
options because they are all located on-campus and accept flex dollars as payment. We used these
criteria to ensure that eligible cafés would rank as the most convenient options for UNT students
to use.
We excluded dining halls from our options because they are tied to payment plans. We also
excluded off-campus cafés because they refuse to accept flex dollars and because most of them are
inconvenient for most students to walk or drive to. Finally, we excluded the cafés at Discovery
Park because the majority of UNT students only attend the main campus.
Our hypothesis at the beginning of the project said that the farther a café resides from the center
of campus, the lower the overall quality of the café will be. We hypothesized this because it
seemed logical that more students would attend cafés closer to the center of campus, and that
those cafés would therefore have higher quality in order to meet the needs of the majority of
students.
In the next sections, you will find our methods of evaluation with our criteria and survey, the
results of each option’s evaluation, our analysis of each evaluation, and our final recommendation.

Explanation of Criteria Values
Atmosphere This criterion takes into consideration the noise level, open hours (and busy hours), cleanliness, seating, and the aesthetics of each café. Therefore, we treated atmosphere as a cumulative criterion that takes into account subjective factors. Cost We calculated the cost per ounce to grade each café for this criterion. Location We pinpointed the center of campus as the Library Mall and graded each café based on their distance (in feet) from the Library Mall. We chose the Library Mall as the center of campus because the Union is currently under construction. The Library Mall is adjacent to the Union and serves as a forum for the bulk of student activities. Speed of Service We graded this criterion by calculating the average time we spent waiting for five separate orders in each café. We compared the average times of each café to grade their speed of service. Variety of Drinks Some students buy different types of coffee depending on their needs. Some students buy espressos to energize themselves or stay awake. Others buy lattes, frappes, etc. for flavor. This criterion will take into consideration the variety of coffee options available at each café. Other Food Options

Sometimes students purchase snacks to go along with their coffee. This criterion will account for all the snacks or other treats that students might buy with their coffee. Taste/Flavor This is our opinion-based criteria in which we used a survey to grade cafés for their coffee’s taste. We surveyed 30 students in the Kerr Hall lounge, asking them to rank unknown coffee samples in order of their favorite to their least favorite.

We used this question to determine what coffee students consider to be the best-tasting coffee on
campus.

We included an additional comments section so that subjects could record the detailed reasons why
they chose the coffee that they voted as the best.

Information About Primary and Secondary Resources
Primary Sources
Café GAB is located in the General Academic Building. The café is on the second floor near the
east entrance. It is 1,584 feet from the center of campus.
The Biz Café is located inside the Business Leadership Building. It is on the first floor on the right
side near the west entrance. It is 436 feet from the center of campus.
The Go! Station is located inside Wooten Hall. It is on the first floor exactly in front of the west
entrance. It is 859 feet from the center of campus.
Khush Roti and the Food Court are located near the food court. Khush Roti is a sandwich trailer
with surrounding tables and benches. The Food Court also has surrounding tables and benches.
They are 1,075 feet from the center of campus.

Results of Evaluation
The following shows of the data that was found during our evaluation. We divided it into 4
options:
Café GAB
Khush Roti/Food Court
Biz Café
The Go! Station
We then divided each of these into the criteria on which they are rated. We then broke down
each option with several tests created to measure one of seven criteria:

We chose each of these criteria to properly break down the most important aspects of a coffee
shop for UNT students. This has been put into an easily comparable table at the end of this
section.
General Results for Each Criterion
We selected atmosphere as a criterion because students are interested in knowing which cafés are
best for spending extended periods of time in. The Biz Café has the best atmosphere. The Go!
Station has the worst atmosphere.
We selected cost as a criterion because students want to know which cafés serve the cheapest
coffee. The café with the cheapest coffee is Khush Roti/Food Court. The other four cafés all sell
coffee at a similar price level, tying them for the most expensive coffee.
We selected location as a criterion because students also want to know which cafés are the closest
to the center of campus, which is the busiest part of campus. The Biz Café is the closest to the
center of campus. Café GAB is the farthest from the center of campus, and is therefore the least
convenient to visit of the options we surveyed.
We selected speed of service as a criterion because students are usually in a hurry and need to
know how long they can expect orders made at different cafés to take. The Go! Station lived up to
its name and has the fastest speed of service. Café GAB had the slowest speed of service, making it
the least convenient café for students who are in a hurry.

We selected variety of drinks as a criterion because students want to know how many different
kinds of coffee are available for them to try. The Biz Café had the largest variety of coffee drinks.
Khush Roti/Food Court had the lowest variety of coffee drinks, despite having a large variety of
non-coffee drinks.
We selected other food options as a criterion because students often purchase snacks to go with
their coffee to help them get through the day. Khush Roti/Food Court had the largest variety of
snack options. Café GAB had the lowest variety of snack options.
Finally, we selected taste/flavor as a criterion because students want their coffee to keep them
awake, and also taste good. The Biz Café had the best-tasting coffee. Khush Roti and/Food Court
had the worst-tasting coffee.

Analysis of Evaluation
We chose each criterion in order to break down the most important aspects of a coffee shop to
UNT students. We found the results somewhat interesting because we hardly expected many of
the scores that the locations received. In the criterion of atmosphere, Biz Café came out ahead
with 3.8/5 due to its relative quietness, long hours, clean atmosphere, efficient seating, and
modern aesthetics. Next, we found the cost of coffee cheapest at Khush Roti/Food Court, earning
it the top spot at a 4/5 because it cost more than a dollar less than the next cheapest café. Then,
we considered the location criterion. We based this criterion off of a café’s distance relative to the
center of the UNT library mall. Biz Café came out ahead because it was a mere 436 feet from the
mall, and with that earned a 5/5 for location.
Next, we measured the speed of service. The speed varied greatly from place to place, but The Go!
Station had the fastest amongst them earning a 5/5 by our analysts. While waiting for customers
to order, we counted the number of drinks on the menu. We considered the number of drinks
offered by each location next, and Biz Café took another top spot with a 5/5 for having more
coffee drink options than any other location. After we knew the number of drinks, we evaluated
the list of food options. Each location possessed quite an extensive list of food options, but none
so much as Khush Roti/Food Court, earning it a 5/5 in this criterion. Finally, we surveyed the taste

of each location’s coffee, and it was found that Biz Café had the best tasting coffee overall with a
score of 5/5.
The overall results place Biz Café as the best overall place to order coffee and Café GAB as the
worst. Khush Roti/Food Court ranked above The Go! Station by 1 point. The final results placed
the Biz Café, The Go! Station, and Khush Roti/Food Court at less than 1 point away from each
other with Khush Roti/Food Court receiving a 3.4/5, The Go! Station receiving a 3.3/5, and the Biz
Café receiving a 3.7/5. Café GAB was significantly lower than even Khush Roti/Food Court with a
2.6/5 total score.
In our analysis of each location no outright patterns emerged, but during our survey one thing
became very evident: Khush Roti served the least-liked coffee and Biz Café served the most-liked.
On almost every survey sheet Khush Roti ranked the lowest rated and Biz Café ranked the highest
rated.
We hypothesized that the farther a café is from the center of campus, the lower the overall quality
of the café. Based on our criteria this held true with Café GAB, which received the lowest overall
score. However, if you just wanted coffee in a hurry, then Khush Roti/Food Court would serve as
the highest rated location.
Surveyors rated Biz Café as the best café on campus, and rated Café GAB the lowest. However, if
you wanted for a cheap cup of coffee and planning on leaving the café afterwards, Khush Roti
would fill this need with the cheapest coffee on campus. If you are close to Wooten Hall and need
a very quick cup of coffee, The Go! Station has it covered. Finally, if you are looking for the best
overall experience Biz Café earned its top spot because it provides great tasting coffee and a good
atmosphere.
Recommendation
After considering the results of our feasibility study, we found that the Biz Café in the Business
Leadership Building is the best café on campus. It provides the best coffee and atmosphere of any
café on campus, and its overall score places it ahead of any of the other cafés we evaluated. We
recommend it for all of your coffee-drinking and socializing needs.
