With the strict regulations imposed on the meatindustry, the production of these types of products is becomingmore difficult. Learn how to make a high quality semi-dried meatproduct while still complying with the current food safetyregulations.
Uncured, no nitrate or nitrite added meat products have becomerequested more by today’s consumers. This production techniqueis not out of the grasp of the small meat processors. 10:30 AM – 11:30 AMCasings – Simple Packaging that Contributes to the Productionof a Variety of Sausages – Learn from a very accomplishedEuropean master butcher, Klaus Kreibig of Devro, Inc., about thedifferent types of casings available, the applications, and theirfunctionality. Depending on the sausage type, casings havehistorically contributed to the quality of sausage produced.Therefore, it is important to select the casings based on sausagetype produced, the required application technology, and thecustomer requirements. Klaus will review all types of casingsincluding cellulose (fibrous and skinless), edible and non-ediblecollagen casings, plastic casings, and natural casings. Theextensive variety of casings available to processors will assist youin the development of sausage products found in today’smarketplace.

11:45 AM – 12:45 PMVirtual Plant Tours – Come and observe the operations of twolong-time AAMP members, Dewig Meats of Haubstadt, Indiana,and JTM Provisions of Harrison, Ohio. Since 1916, Dewig Meatshas been a small, full-line meat packers company in the heart of aSouthern Indiana German community. Dewig Meats performs thetraditional activities of a typical AAMP member, but has grown overthe years and expanded the business to a higher level. Dean willtour you through this 3rd generation plant, from kill floor to retailmarket. JTM Provisions started in the back room of a retail meatstore, Jack Maas Meats, which opened in the mid 1960's. Theybegan doing business as JTM in 1980 in a separate 1800 squarefoot building. JTM has three processing lines: Kettle Cook, FullyCooked Grind and Form, and a Bakery. Today, JTM has almost200,000 square feet spread out over a campus of 3 buildings.

Welcome Reception, which will be held aboard the Belle of Cincinnati. Boarding will begin at 6:00 PM and the
riverboat ride will begin at 7:00 PM. The ride will be two hours with a spectacular view of the Cincinnati skyline.
The menu will consist of barbecue pulled pork with mini rolls, Cincinnati Style Chili (chili, spaghetti, beans, and

feature loin of pork, grilled chicken, and numerous types of sausage, grilled by Dean Dewig, Dewig Meats, Haubstadt, IN, on his
tractor trailer of traveling ovens. Glier’s Meats Inc. will also be featuring their famous "Goetta". One of the finest caterers in the
area will provide the side dishes, which will include both hot and cold sides, along with roasted-in-the-shuck corn on the cob with
pots of hot drawn butter. There will also be an assortment of desserts. Beer, wine, soda, and plenty of bottled water will be on hand
as well. Live music from a versatile group of musicians who play at the local night spots will perform throughout the evening.
