Sparkling Wine
Wherever wine is produced around the world, you will find Sparkling.
There are many methods and styles of production, from the world-famous
Champagnes to the idiosyncratic Pet-Nat styles, there is something with
bubbles to suit every taste.

Riesling and Friends
Never tried Txakoli (“Cha-ko-lee”)? Not sure why you’d want to
deprive your tastebuds of that refreshment, but ok...
Undoubtably one of the best Australian winemakers you’ve never
heard of, Victoria’s Dom Valentine comes with a heavy hitting
resume and Riesling is definitely a strong suit – well worth
a lash.
Few beverages in the world can hold the esteem that the supremely
aromatic Riesling has globally, and at all the spectrum’s ends – in
Germany and Austria, the wines that boast a purity and sweetness carried
by a lick of structural acid and texture find themselves the most prized,
where few Australian wine drinkers have grown without knowing the
lazer-dry styles of the Clare.

“Grösses Gewachs” is a German Riesling producer’s version of a
Grand Cru; in the case of Florian Lauer, his usual terroir-driven
style is amplified here. The Saarfeilser exemplifies all this; some-
where between dry and off dry, but tremendous structure, power
and balance.

The Australian (and NZ) White Wine Industry’s last 20 or so years have
been built on the back of Sauvignon Blanc. As an entry into white wine,
sure, Savvy B is a fine starting point; but now you’re here, why not see
what else is around?

Unicorn Alert: Marc Sorrel, Tain l’Hermitage, France
2017 Crozes Hermitage Blanc, Mars/Roussanne 185
2016 Hermitage Blanc, Marsanne 495
From inauspicious beginnings after taking over in 1982, Marc Sorrel has
paid dues and risen the Rhone ranks, and now finds himself at the peak of
quality, traditionally styled Hermitage. Tiny quantities.
The ways that white wine develops texture are myriad: oak, time spent on
lees, fermentation techniques or indeed the varietal character from each
grape will contribute to a broad mouth-feel and a long, satisfying finish.

To call these wines iconic would be an understatement. The Jura
Region is idiosyncratic, and the wine industry there tiny, but their
quality and influence sends ripples throughout the world. Anne et
Jean-Francois Ganevat are true leaders in the region with a dizzying
array of cuvees, and their wines, an unwavering delight.

The Mediterranean basin of southern Europe carries perfect conditions for textural whites;
long summers, mild winters, fertile soils and a gentle oceanic influence – the following
wines, mostly indigenous varieties, are fantastic examples of a modern push for showcasing
this wonderful potential.

Few grape varietals, if any, hold as much esteem globally as Chardonnay. From its birth
home in Burgundy, to California, South Africa and our own backyard, this grape has
flourished and endeared itself to wine lovers worldwide.

Chardonnay’s spiritual home is arguably Chablis and the Côtes De Beaune in central
France. Steeped in history and home to some of the finest winemakers in the world, there
is little question as to why these wines are amongst the most prized Whites in existence. As
you can probably tell, we don’t mind a Burgundy; if you want any further help deciphering

Few regions in the world, if any, rival Bandol in the south of France for
production of Rosé wine. Typically produced from Mourvedre, these are the
benchmark worldwide for dry, herbaceous Rosés.
Rosé wine has been the quiet achiever in the wine world for a great many
years. From the dry, herbaceous provincial styles to the more fruit driven
New World expressions, the ‘pink drink’ has and will always have its
place in the world’s restaurants and bars.

As every Queen has her King, so Chardonnay has Pinot Noir. A wine that is as versatile
as the places that make it, Pinot may be a trick to grow, but if handled correctly rewards
drinkers with a depth and complexity few wines can match.

If you said that Jean Francois Ganevat was the most famous living
winemaker of the Jura, very few would argue. It’s hard to dispute the
legendary status of this guy, who makes a dizzying amount of different
cuvees, all to exacting standards of Biodynamics, and what we could easily
call ‘Natural’ Winemaking. – Ganevat Wines are as rare as unicorn’s

The Mediterranean basin, from Spain’s east coast and across the south of France, is argu-

Vodka is a pretty relaxed category of spirit. Made from anything that
contains starch and distilled in pretty much any way; as long as you can
blast it up to high proof relatively quickly, you can produce vodka. High
quality vodka, on the other hand, takes a little more craftsmanship.

Tequila and Mezcal are both a part of one big, happy family – made in
Mexico from members of the Agave family, that’s pretty much where the
similarities end. Tequila, from the Blue Weber Agave, speaks of sweetness
and soft fruit, whereas Mezcal, made from any member of the Agave
family, presents mineral, faint smoke and earth.

enjoy the flavours of pure sugar cane and molasses, accentuated by the oak
