Quite simply, Clean Wine™ is the highest quality wine on the market today. The process that Deerfield Ranch Winery adheres to is based on science. The result is a clean wine that is low in histamine and sulfites.

Two big misconceptions about wine allergies: • Tannins cause wine allergies (not true) • Sulfites cause red wine headaches (not true)

The fact is, high histamine levels in wine is the primary cause of red wine headaches. Histamines are produced by bacteria during the fermentation. Elevated levels of sulfite may cause allergic reactions such as flushed face, ears and neck, hot flashes, puffiness, hives, and breathing difficulties.

What’s the process Deerfield uses to produce Clean Wines™?

Deerfield triple hand sorts their grapes to remove damaged grapes that have high levels of bacteria. Histamines are produced during the fermentation process by interaction of yeast and bacteria. By reducing the level of bacteria and by keeping the yeast well oxygenated and well fed, the yeast dominate the fermentation environment and histamine is not produced.

Many Winemakers and wine writers think SO2 is a preservative, keeping wine fresh and giving it a longer life in the bottle. SO2 is not a good preservative. It is an antioxidant that combines with the free oxygen in the wine keeping it from prematurely oxidizing during the barrel aging and bottling process. It combines with the free oxygen and become SO4, which is inert and non-reactive. Too much SO2 in the wine will lead to too much SO2 in your blood, which is toxic because it removes oxygen from your blood.

By carefully monitoring the free oxygen in the wine and by knowing how much oxygen is necessary to properly age the wine, we use just enough SO2 to use up the excess oxygen, preventing the wine from oxidizing and leaving no extra SO2 to cause allergic reactions. Our protocols significantly reduce the histamine and sulfite levels, leaving very little in the finished wine. Those who get red wine headaches and have reactions to most wines can usually drink Deerfield wines and happily bring wine back into their lives.

2014 Chardonnay Sobré Vista Vineyard, Sonoma Valley

Named for PJ Rex, the winemaker’s wife, who got it all started.

Traditional French Oak barrel fermentation followed by sur-lees; that is, stirred on the lees until we like the flavor and mouth feel. It takes seven months of close attention to make the wine then it ages in the cave for about a year before bottling. The result is a mildly oaked, refreshing Chardonnay that is food friendly.

2014 Pinot Grigio Nelson Family Vineyard, Mendocino

Pinot Grigio, known as Pinot Gris in France, have blue-gray skins. Before fermentation we press the clear juice from the whole clusters and the skin contact gives the wine a sunrise blush. The juice is cold fermented over an extended period to preserve fresh fruit flavors, and stopped before all the grape sugar is gone to retain a slight sweetness. It is delightful, well chilled, on a hot summer day and pairs well with spicy foods.

2016 Checkerbloom Rosé 100% Estate Syrah, Sonoma Valley

Rosé is back in fashion. Forget those cloying pink wines of the 80’s. This is the real thing, rosé from our organically grown Estate Syrah. Great on a warm day, it also is a good food wine, pairing with salads and light luncheon fare.

Our 2011 Estate Syrah is grown organically and biodynamically, surrounded by the Kenwood Wetlands. This creates a unique terroir, which never dries out. The wetland environment makes ours unique by adding high tone, center of the palate fruit flavors rich in blackberry notes.

Cabernet Franc is one of the five noble Bordeaux grapes. It is usually a blender, adding upper palate presence and a chocolate note to a red blend. Recently it has become popular as a stand-alone varietal. It is the progenitor of Cabernet Sauvignon, crossed with Sauvignon Blanc by early winemaking monks. The 2012 Cabernet Franc has rich, unmistakable dark chocolate notes and dark berries, enhanced by the magic of blending with its Bordeaux cousins.

Sonoma Cabernets have their own style, dictated to a certain degree by a cooler climate in Sonoma compared to Napa Valley.Deerfield’s Cabernets are more elegant than the big Napa Cabs. We blend our Cabernet with other Bordeaux varietals to create a multi-dimensional wine that changes as you drink it. It evolves and holds your interest.

The car that started it all • PJ Rex in her 1974 Alfa Romeo SpiderAs a thank you gift for keeping her Italian car purring, PJ gave her Italian boyfriend at the time, Robert Rex, a wine making kit. She knew he was a chief and a chemist and figured he’d be a natural at making wine. He was. His very first wine won best of show at the California State Fair. PJ still drives the Alfa, Robert still keeps it purring, and together they make some delicious wine.

PJ was also Robert’s inspiration for Deerfield Clean Wine™. She is allergic to sulfite and gets red wine headaches. They call her the canary in the cave. Robert makes wine PJ can drink, which is a benefit to everyone.

Robert and PJ got married at Deerfield Ranch in 1982, the year they moved to Sonoma Valley to start the Deerfield Ranch Winery. PJ is still Robert’s muse and the winery GM.

Zinfandel makes a wider style of wines than any other varietal, from bubblegum pink “White” Zinfandel to big, bold, in your face, monsters. Los Chamizal Vineyard, near the town of Sonoma where Zinfandel was first planted in California in 1850, produces Zin flavors that are the quintessence of the varietal character, full of dark, rich flavor that screams, “this is Zinfandel”. Robert and PJ, his wife and business partner, have lived at Deerfield Ranch, their hilltop retreat, in Kenwood, Sonoma Valley, for 34 years. It’s where, in a converted horse barn, Deerfield Ranch Winery was founded. The view out their back door of Sonoma Mountain was the inspiration for the Deerfield logo.

Winemaking PhilosophyMaking wine is like gourmet cooking. We start with the finest grapes, farmed by growers who put as much attention into their vines as we do into our wines. The best wine is made by a partnership between winemaker and grower. We allow the grapes to fully vine ripen, hand pick and sort the grapes, and use the gentlest production techniques. Our Super T-Rex celebrates this style of blending and the Rex family Italian heritage. Think of this as a Meritage using Sangiovese as the base instead of Cabernet. The Sangiovese accentuates strawberry flavors. This 2012 Super T-Rex is exceptionally smooth. Its complexity lingers into a very long finish. It’s great with Italian fare.

I’ve been a fan of blending wines since we started making our own wine in our garage in Berkeley in 1972. I was a fan of French Bordeaux wines, which are blends of two or more of the Bordeaux varietals: Cabernet Sauvignon, Merlot, Cabernet Franc, Petit Verdot, and Malbec. In America, we call such blends Meritage, a coined word combining merit and heritage. Our wines labeled Meritage are from a single vineyard or appellation. DRX is a Meritage blended from barrels of Bordeaux varietals from multiple vineyards, selected by taste. Thinking outside the box created modifications on the theme, Red Rex and Super T-Rex.

DRX is our Flagship wine. It is a Meritage Blend, which follows the Bordeaux tradition of blending. Cabernet based, we blend by taste the five Bordeaux varietals selected from just the best tasting barrels of wine from our many source vineyards though out Sonoma County. As we taste the barreled wine over a period of two years, we mark our favorites with an X so we can locate them when it is time to blend. The blend is then returned to barrels to age another couple of years. The result is an exceptional wine that is the penultimate of our art.

Library Wines

I n the old days, when French wine was king, you had to plan well ahead if you wanted something better than Carlo Rossi or Blue Nun. You had to buy French wines in advance and age them in your cellar. The reason is that the French wines are too

acidic and tannic when young, because the grapes aren’t ripe enough when picked. In California, because of the better climate, we leave the grapes on the vine to fully ripen. Ripe grapes make wine that doesn’t need long bottle aging. Ripe grapes also make fruit forward wine. The best California wines will still age well but it is not an imperative.

At Deerfield, we take it a few steps further by using good practices and good organic food science to make Clean Wine™; wines that are free of excess sulfite, other additives or contaminants, and are low in histamines. I am often asked, “If your wines are made to drink shortly after release, will they age well?” Below we offer some evidence that our wines age superbly. Those wines we consider the most age worthy are held back before they sell out and we continue to age them in an ideal, temperature controlled environment. Wine doesn’t age in a smooth bell curve; it wobbles in the curve. When the wine excels, PJ says it is singing. When the wine sings, we offer it through our Wine Library.

2008 Cabernet Sauvignon Los Chamizal Vineyard, Sonoma Valley, Artist Series, Row Select Cabernets from the 2008 vintage were notoriously slow developing. This wine is just now coming into its own. It is powerful and will age well for at least another 10 to 12 years.

2006 Cabernet Sauvignon Los Chamizal Vineyard, Sonoma Valley, RESERVE Our reserve wines are made from just a few special barrels. We choose them by taste, or rather they choose us. They sing out, “Bottle me separate”. This wine is approaching Nirvana.

2003 Cabernet Sauvignon Los Chamizal Vineyard, Sonoma Valley The ‘03 Vintage was one of the best of that decade, particularly for Cabernets. It is on the powerful side and will continue to age well for many more years.

The Los Chamizal Cabernets are examples of what can be accomplished by a partnership between grower and winemaker. These Los Chamizal Cabernets are row-select blends, meaning the wine was made from grapes chosen from just the best rows in the vineyard, selected jointly by Peter Haywood, the grower, and myself, Robert Rex, the winemaker.

2001 DRXSonoma County DRX is our flagship Meritage wine. This has been my favorite style for 50 years, and I’ve made Meritage style wines for 43 years. They age better than any other style of wine. Our 2001 DRX, because it has been aged in perfect conditions at its place of birth, exhibits flavors that exist nowhere else in nature. It’s no longer about fruit, it is beyond that.

1999 DRX Sonoma County Seventeen years of age is a long time for any wine. The ‘99 vintage was one of those “elegant” ones. They seem to age flawlessly. It pairs wonderfully with rack of Lamb.

1997 Meritage Ladi’s Vineyard From the best vintage of the last three decades of the 20th Century. Is it worth it? Absolutely. PJ and I have a bottle each year to celebrate our wedding anniversary, now 34 of them.

ORGANIC AND ECO-FRIENDLYDeerfield Ranch Winery prides itself on being very “green”. We compost 100% of our production solid waste and recycle 98% of our production water. The water is reclaimed by an on-site Bioreactor that uses bacteria and air to clean the water so we can use it for irrigation.

We are restoring 14 acres of the Kenwood Wetlands and husbanding the endangered, Kenwood Marsh Checkerbloom that resides in this wetland and only one other place in the world.

All the 23 vineyard sources for Deerfield wines are either organic or sustainability farmed.
