of nature and wine
In Galicia, the lush area to the northwest of Spain that receives the most rain, there is a legendary, magical and mystical land called Ribeira Sacra (the sacred fertile plain). This is a land of extraordinary beauty and strong contrasts, with deep river valleys, where its loamy earth that is rich in minerals, combines with a sunny Mediterranean climate. This provides a unique setting for growing grapes that have a special personality that is reflected in the Ribeira Sacra wines.

La uva mencía es una variedad autóctona del noroeste español, de origen milenario, por sus características distintivas, genera vinos que merece la pena descubrir, de intenso color frambuesa, aromas penetrantes a frutas, pero también delicados a flores, buenas dosis alcohólicas, buena acidez y
posibilidades de crianza con un paladar aterciopelado característico.
La uva mencía destaca por su buena capacidad de envejecimiento, de ella se obtienen vinos que buscan sacar a flote toda su potencia y la
expresividad del terruño, vinos equilibrados y bien estructurados, que resultan redondos y amplios en boca.

The mencía variety of grape is autochthonous to the northwest of Spain, and its origins date back over a millennium. Due to its characteristics,
the wines produced from this grape are well-worth discovering. They have an intense raspberry color, penetrating fruity aroma that also
carries a delicate floral scent. They have a high alcohol content, good acidity, age well and have a characteristically velvet finish.
The mencía grape is distinguished for its aging ability. This grape produces wines that demonstrate all of its strength and the
expressiveness of the land it comes from. They are balanced and well-structured, with a full-bodied, lengthy aftertaste.
Un Origen Milenario, un Carácter Único
El origen milenario del mencía se remonta a la llegada de las legiones romanas a España, hace más de 2.000 años, quienes identificaron en esta zona un “Terroir” único y privilegiado para el cultivo de este vino, que se destinaba al disfrute de los emperadores de la Roma Imperial.
Varios siglos más tarde el auge de los monasterios medievales y la difusión del Camino de Santiago, propició su mayor esplendor. A través de los peregrinos se divulgaron las excelencias de estos vinos y licores y su importancia fue tal que llegaron a utilizarse como moneda de cambio.
Esta tradición secular se ha sido mantenida hasta la actualidad por los viticultores de esta zona, auténticos artesanos del vino.
The thousand-year-old origin of the mencía grape dates back to the arrival of the Roman legions to Spain over 2,000 years ago. The Romans found here a unique “Terroir” that was perfect for producing this wine, enjoyed by the emperors of Imperial Rome.
Several hundred years later, the drastic increase in medieval monasteries and the spreading of news about the Camino de Santiago (Way of St. James) pilgrimage route, provided the opportunity for its greatest splendor. The pilgrims shared the excellence of these wines and liqueurs and it became so important in the day it was even exchanged as a form of money.
This secular tradition is still maintained today by the vine growers in the area, who are master craftsmen in the art of making wine.
A Thousand-year-old Origin, a Unique Character

Herederos de una tradición milenaria en el cultivo de la uva, la familia Moure decidió transformar este conocimiento en una seña de identidad, fundando en 1958 Adegas Moure.

Adegas Moure, the Alchemy of the Grape
Inheritors of an age-old grape growing tradition, the Moure family decided to convert this knowledge into a trademark: Adegas Moure, founded in 1958.
Generation after generation, we have passed on the art of alchemy. This is why we make better quality wines and liqueurs with more prestige, winning over the critics and endowing us with over 120 national and international awards (Bordeaux, Montreal, Brussels, Paris, Verona, Madrid, New York).
Our vineyards are hundreds of years old and descend along the banks of the Miño River, in its spectacular meander known as “O Cabo do Mundo” (the Edge of the World). Conserving our traditions, whilst also looking to the future and the pursuing the highest quality, we have invested in innovation and the latest technology, with the sole focus of continuing to improve on every vintage.

APPEARANCEDeep burgundy red, clean with brilliant glints and ruby sparkles.
AROMAVery complex and intense aromas. Ripe red fruit, spices, chocolate, tobacco. All of these are brought together with an oaky accent.
AFTERTASTEFull-bodied, seductive with an elegant, lengthy finish.
TECHNICAL DATA SHEET
HARVESTManual harvest in 20 kg. boxes and grapes are subsequently selected at arrival to the winery. Begins on September 14th and ends on September 30th.
VINIFICATIONMaceration for 6 days. Alcoholic fermentation for 8 days, at less than 28º and malolactic fermentation. None fining treatment. Aged in new barrels of oak for 9 months.
CHEMICAL ANALYSISAlcoholic Content: 13º.Total Acidity: 5.3 gr/l.Reducing sugars: - 1.1 gr/l.Ph: 3.53
NOTA DE CATA
FASE VISUALRojo Burdeos intenso, limpio, brillante y con ribetes rubies.
FASE OLFÁTIVAAromas muy complejos e intensos. Fruta roja madura, especies, chocolate, tabaco. Todo ello muy bien ensambalado en una noble madera.
FASE GUSTATIVAEn boca es amplio, sabroso, de elegante final y larga persistencia.
FICHA TÉCNICA
VENDIMIAVendimia anual en cajas de 20 Kg y posterior selección de la uva a su llegada a la bodega. Comienza en 14 de septiembre y finaliza el 30 de septiembre.
VINIFICACIÓNMaceración durante 6 días. Fermentación alcohólica durante 8 días, a menos de 28º y fermentación maloláctica. No se realiza ningún proceso de clarificación. Envejecimiento en barrica nueva de roble durante 9 meses.

Liqueurs
Abadia de Cova cuenta con una amplia y variada gama de licores obtenidos a partir de la uva, como:
Licor de Hierbas, con más de 20 diferentes hierbas medicinales y aromáticas, junto con azúcar de caña que son puestos a macerar durante 45 días en Orujo.
Licor Café, obtenido del mejor café natural procedente de Colombia y Brasil, recién tostado y troceado para conservar todo su aroma y frescura, junto con azúcar de caña, manzanas, cáscaras de naranja, plátano y canela en rama es puesto a macerar, durante al menos un mes en Orujo.
Aguardiente de Orujo, las variedades de uva junto con el especial proceso de destilación siguiendo antiguas pautas de los alambiqueros tradicionales consiguen este fino y complejo Orujo de Galicia.
Crema de Orujo, ha sido elaborada con elementos de primerísima calidad que se comprueba en sus complejos y delicados aromas y la extraordinaria suavidad y textura en boca.
Licor de Miel, la miel procedente de los bosques y montes gallegos, de ahí su oscuro color, es puesta a macerar. Al ser la elaboración un proceso natural, sin esencias ni aditivos, hay que agitar la botella antes de consumir el producto, ya que la miel tiende a depositarse en el fondo de la botella.
Todos los licores se presentan en varios formatos: botellas de 700 ml., botellas de 500 ml. y estuches con formatos especiales.

Abadía de Cova has a wide and varied selection of liqueurs that are made from grapes, such as:
Herb Liqueur, with more than 20 different medicinal and aromatic herbs, mixed together with sugar cane and macerated for 45 days in Orujo (strong alcoholic liqueur distilled from grape pressings).
Coffee Liqueur, obtained from the best Colombian and Brazilian natural coffees, freshly toasted and ground to conserve all of its aroma and freshness, together with sugar cane, apples, orange and banana peel and cinnamon sticks and macerated in Orujo for at least one month.
Aguardiente de Orujo (Orujo Liqueur), he unique type of grapes combined with a special distillation process that follows age-old processes, passed down from the traditional distillers, is used to obtain this fine, yet complex Galician Orujo.
Orujo Crème Liqueur, this is prepared with only the best quality ingredients, which are appreciated in its complex and delicate aromas and extraordinary smoothness and texture.
Honey Liqueur, honey from the Galician forests and mountains, which give it its dark color, is macerated. As its preparation is a natural process, with no additives or conservatives, you need to shake the bottle before opening it, because the honey tends to settle on the bottom.
All our liqueurs come in various sizes: 700 ml. bottles, 500ml. bottles and holders with special styles.

Licores Liqueurs
