Coconut Crusted Chicken with Mango Chutney

Yields: 10 servings

Ingredients: 10 boneless-skinless chicken breasts 6 cups unsweetened shredded coconut Potato starch, as needed 3 eggs, beaten Vegetable oil, as needed Salt, as needed 2 mangos, diced small 1 small red onion, diced small ¼ cup lime or lemon juice 2 Tb sugar ¼ tsp salt

1. Place potato starch, eggs and shredded coconut into separate bowls. Working in sequence, coat chicken breasts in potato starch, eggs and then coconut. Place on a baking sheet. 2. Heat oil in a large skillet over medium heat. Working in batches, add chicken and cook about 2 minutes on each side until golden brown. Remove from pan, place on baking sheet and season with salt. Finish cooking in a 350°oven for about 10 minutes. 3. In a small pot, combine the mango, red onions, lime or lemon juice, sugar and salt. Bring to a boil and cook over high heat for about 8 minutes, until the mango is tender.

Great Passover Dish!

Jewish life has continued to grow at Chabad and has formed into a family on campus. Week after week more students come to Shabbat at Chabad to enjoy a comforting atmosphere and a delicious kosher meal! Jewish students from all areas of campus come together Friday nights at Chabad to share their highlight of the week. This past term, themed Shabbats have become very popular and had great turnouts, especially for our Super-bowl Shabbat and Harry Potter Shabbat. We all look forward to seeing Laiky in Reamer Campus center on Wednesday’s, bringing Jewish life directly to us with Jewish treats or projects. This term we made mezuzot, dipped Israeli fruit in chocolate for Tu B’Shvat, and studied Torah with bagels and lox. Chabad with Alpha Epsilon Pi, one of the Jewish frats on campus, hosted a Shabbat for 90 students Chabad met with President Ainlay to discuss Purim and growing Jewish life on Campus and hopes to host him at a Shabbat in the future. We are excited to start new projects for next term and reach more Jewish students on campus. Chabad is planning on working with community service groups on campus and within Schenectady to give back to the community and perform Mitzvot together. With the beautiful weather coming we are excited to host an outdoor Shabbat. Chabad expects to grow and continue to commit to fostering a community for Jewish students. The new Chabad Board is committed to see through the continuing development of Chabad and creating new programs for the spring. Chabad has truly become a home away from home for Jewish students on campus.

March 18, 2012/ 24 Adar 5772 Dear Friends,

Shalom! Every successful organization needs to have a slogan. Fedex tell us they are "the world on time." Coke says they are "The Real Thing" What is the theme of Jewish Life? What can unify and dominate every facet of Jewish life? Though it sounds like a huge question that could be the subject of great debate, the answer is simple. It is love. So now you might be thinking that this rabbi and his wife are all about feelings and not a lot of action. Well, let ustake a minute to tell you what our love for the Jewish People has mo-tivated our family to do. We moved to Schenectady to dedicate our lives to the students here at Union College. Schenectady has become our home, and our house has become the home away from home for the community we live in. Because this is a college town, we are always 19 years old. Other-wise, how could we relate to the life of a modern-day college student? It is the love for the Jewish People, the theme of Judaism, that motivates us to be here and without an exit strategy. We have no future opportunity elsewhere that we are working towards. We are committed to the students of Union College without any option, other than complete success. To succeed in our work creating vibrant Jewish life here at Union College, we need your help. Passover is approaching, and thank G-d, we are looking forward to serving record crowds. Passover brings a spirit of Jewish belonging that brings our student family home to our house. Our commitment is to always have a place at our table for everyone. Passover provisions are expensive and when people feel at home, their appetite feels at home too. Plain and simple, we need to make good food and lots of it. We are writing today to ask for your help in sponsoring the Passover week here at Chabad. A list of dedication opportunities is enclosed. While we welcome any amount and are grateful, we hope and pray you will give generously. For $108 you can sponsor the Passover Seder for three of your fellow Jews.
