  • Some terms Specific gravity: a reading of the suspended sugars. Use a hydrometer. The difference between the original gravity and final gravity tells you how much alcohol you made. Wort: sweet, amber liquid extracted from malted barley. The yeast will ferment this liquid into beer. Ferment: The activity of the yeast turning sugars into alcohol and carbon dioxide. Hops: The flower of the hop plant which is a member of the hemp family. They contain an essential oil that is bitter. The bitterness comes out more as the oil is broken down during the boiling process. The bitterness balances the sweetness of the grain. Malt: Barley or other grain that has been steeped, germinated, and dried, used esp. for brewing or distilling and vinegar-making.

  • How is it done? Malted barley is soaked in hot water to create fermentable sugars. The malt sugar solution is boiled with hops for seasoning. The solution is cooled, and yeast is added to begin fermentation. The yeast ferments the sugars, releasing carbon dioxide and ethyl alcohol When the main fermentation is complete, the beer is bottled with a little bit of added sugar to provide the carbonation.
