When we started the SCD Diet about a year and a half ago, it was scary and overwhelming. We spent more time focusing on what Caleb couldn’t eat, verses what he could. After a month or so, we fell into a rhythm and I began experimenting with different recipes.

Brownies/Muffins
Ingredients
Instructions
• 4 tablespoons meltedbutter or coconut oil (or 2tablespoons each)
• ¼ cup melted cocoa butter(caveat: I don’t measure this,I just cut a hunk and throwin the bowl to melt! It looksto be about ¼ cup when it is
liquid)• 4 eggs• 1 cup honey• 16 oz. peanut butter• 1 tsp. baking soda• 1 tablespoon vanilla extract• Optional: 1 cup chopped nuts
• Preheat oven to 340F• Line 2 muffin pans with paper liners (about 18-20) or grease 2)
8”x8” pans• In a large bowl, melt together the butter, coconut oil & cocoa
butter.• Add the remaining ingredients and, using an electric mixer, or
food processor, mix well until batter is smooth & shiny.• If using chopped nuts, mix in by hand. Fill muffin pans 2/3 full, or
pour batter into the 2 8x8” pans.• Bake 18 – 20 minutes for muffins or 20 – 25 minutes for the 8x8”
pans.• Do not over bake or they will be dry.• The muffins rise nicely when baking, but fall once cooled. And
remember, the chocolately taste is subtle, but there.

Instructions
• 2 cups Almond Flour• 2 tbsp. water• 1 tbsp. olive oil• 1 1/2 tsp. salt• 2 tsp. ground black pepper
• Preheat oven to 350 F.• In a mixer combine the ingredients and blend until a dough forms• Place dough between two pieces of parchment paper and using a
rolling pin roll out the dough evenly until its less then 1/8th of aninch thick
• Remove top layer of parchment paper and place the bottomsheet of parchment paper with the rolled out dough onto abaking sheet
• Using a knife, cut a grid in the dough to form squares, this willmake it easier to break the crackers into uniform size once baked.
• Bake in the oven for 10-14 minutes or until the dough begins toturn golden in color
• Store in an airtight container for up to 5 days

Instructions • Buffalo sauce: Whisk all ingredients in a bowl.• Blue cheese dressing: Stir ingredients together in the serving
bowl, leave some lumps.• Wings: Spread chicken wings in a single layer on a large baking
sheet. Drizzle with 1 tablespoon oil and season with salt andblack pepper.
• Bake at 425 degrees for 25 minutes, turning once, or until goldenbrown and crispy. Cover with Buffalo Sauce. Serve with BlueCheese Dressing.
Ingredients • Makes about 15-17 wingsBUFFALO SAUCE:
• 1/4 cup melted butter• 1 tablespoon ground
cayenne pepper• 1 tablespoon paprika• 2 tablespoons apple cider
vinegar• 1 tablespoon tomato paste
BLUE CHEESE DRESSING:• 1/2 cup mayonnaise• 1/2 cup yogurt• 1/2 cup crumbled blue

Instructions
• 1 medium head cauliflower• 1 tablespoon cream cheese,
softened• 1/4 cup grated Parmesan• 1/2 teaspoon minced garlic• 1/8 teaspoon straight
chicken base or bullion (may
substitute 1/2 teaspoon salt)• 1/8 teaspoon freshly ground
black pepper• 1/2 teaspoon chopped fresh
or dry chives, for garnish• 3 tablespoons unsalted
butter
• Set a stockpot of water to boil over high heat.• Clean and cut cauliflower into small pieces. Cook in boiling water
for about 6 minutes, or until well done. Drain well; do not let cooland pat cooked cauliflower very dry between several layers ofpaper towels.
• In a bowl with an immersion blender, or in a food processor,puree the hot cauliflower with the cream cheese, Parmesan,garlic, chicken base, and pepper until almost smooth.
• Garnish with chives, and serve hot with pats of butter.• Hint: Try roasting the garlic and adding a little fresh rosemary for

• 1 cup red Lentils, soakedovernight
• 1/3 onion, rough chopped• 2 garlic cloves, peeled• 1 tsp. cumin, toasted and
ground• 1 tsp. coriander, toasted and
ground• 1/2 lemon, juice only• 1/4 cup olive oil• 1 Tbs. salt
• Combine all ingredients in a food processor and grind until thelentils have been pulsed into small bits resembling couscous.
• Drizzle a few tablespoons of oil on a baking pan.• Divide the batter into 20 equal portions and place them on the
baking pan.• Bake for 10 minutes before flipping and baking another 5-10
minutes until the lentils have cooked through.

Instructions • Preheat the oven to 400 degrees F.• Grease a muffin pan with coconut oil.• Put all ingredients into a medium sized bowl and mix with
immersion blender or whisk until well mixed.• Let sit 5 minutes.• Use ⅓ cup measure to spoon into muffin tins.• Bake 12-15 minutes until starting to brown and not soft when
lightly touched on the top.• Let cool 2 minutes, drizzle with honey (if desired) and serve.
Ingredients Prep time: 5 mins.Cook time: 15 mins.Total time: 20 mins.
• 5 eggs• 1 cup homemade applesauce

• 6 eggs• 2 tbsp. raw honey• 1/2 cup coconut oil (melted)• 3/4 cup coconut flour• 1/2 tsp. sea salt• 1 tsp. baking powder• Cinnamon to sprinkle on top
• Mix all ingredients together.• Grease a loaf pan or a fancy challah pan (I just ordered this one:
Silicone Challah Mold) with coconut oil and pour.• It won’t really be pourable – it will be firm and spongy.• Pour the batter into the pan and bake at 350 for 40 min.• This recipe makes one small loaf – it is very dense and filling, so
unless you are having a lot of guests it should be enough.

Instructions
• 2 chicken breasts, boneless,skinless, sliced
• 2 onions, thinly sliced• 2 tbsp. fresh ginger, minced• 2 garlic cloves, minced• 1 tsp. red chili flakes• 2 tsp. ground cumin
• 1 tsp. garam masala• 2 tbsp. fresh lemon juice• 4 tbsp. olive oil• 1 cup full-fat coconut milk• 1 green onion, thinly sliced• Sea salt and freshly ground
black pepper
• In a bowl, combine coconut milk, ginger, garlic, chili, cumin, garammasala, lemon juice, half the olive oil, and season to taste.
• Add the chicken to the marinade; place in the refrigerator andmarinate for 2 to 12 hours.
• Heat the remaining olive oil in a skillet over medium heat.• Remove the chicken from the marinade, and reserve the
marinade.• Cook in the preheated skillet until chicken is browned on all sides.• Add the onion and cook until soft (2 to 3 minutes); pour in the
remaining marinade.• Cook another 3 to 4 minutes or until chicken is cooked through
and onions are soft.• Serve the coconut curry topped with green onions
