Banana flour is made from the starchy Green Bananas. It is sometimes used as a food for invalids because it is starchy, filling and nutritious. It can be combined with regular flour when a starchy product is desired. The flour is very fine and is very useful for its moisture absorbing and holding properties. It is a good gluten-free product and can be used to make pancakes, bread, scones and cakes moist, lighter with a more airy texture.

A new product with a potential commercial value is the banana powder made from fresh and ripe banana. Banana powder can be used as a mixture material for various cakes/breads (wet and dry cakes), and for infant feeding. Banana powder contains low gluten, so it could not be used as the main cake material. Therefore, to produce high quality cake, banana powder must be mixed with wheat flour
Processing Method
Remove banana fruits from the bunch. Steam for about 10 minutes to decrease sticky sap, improve the powder color and facilitate the peeling process. Peel and then slice into small pieces. Soak in 5% citric acid for about 30 minutes, then drain. Dry at a low temperature, until 10% moisture content is achieved. Mill and sift. Package and store in a closed, dry place. Banana ply paper is created using a variation on the techniques used by ancient Egyptians to make papyrus. Rather than pulping the banana fibre, the trunk is literally peeled down to individual layers that are up to eight metres long and as thin as cigarette paper. These layers are then pressed together at right angles to form the extremely strong material.
The secret to holding the layers together is a natural chemical compound called lignin. Lignin is found in the cell walls of all plants where it conducts water and provides strength. It is removed at great expense during traditional paper manufacturing, but it is vital for banana ply paper's unique durability.
Banana ply paper can be produced in various sizes and thicknesses ranging from fine tissue-like material for wrapping jewelry to thick cardboard crates. It can also be bleached to create high quality writing paper.
The production line used to produce banana ply paper is about the size of a semi-trailer, which is compact enough that it can be easily installed onsite at banana plantations. It is designed to be installed alongside the packing shed at a banana farm, meaning that the trunks can be gathered using the same infrastructure required to gather the fruit. This reduces the use of transport, providing environmental and economical benefits.

There two different methods to produce Ethanol/Butanol from Bananas. The “Green” Bananas would be peeled, cut into thin strips, dried then ground; that
would be Starch. Then you would add the alfa-amalase etc and do the same as standard grain ethanol production.
Let the Bananas ripen into a converted sugar, then peel them, then no enzymes would be needed. After that follow through with the same continuous process after
using a vibrating screen or decanter to filter the solids add the yeast and let ferment. Bananas when ripe contain 22% sugar.
The sugar content is a direct indication of the amount of ethanol in the sugar 22% sugar indicate 11% alcohol.
