For Those Who Serve…

Soon we will be celebrating Memorial Day across this great country; a day when

we remember the men and women who serve so selflessly to keep our nation free.

In a time when foreign, hostile, war-mongers dominate the headlines; the troops

who protect our freedom deserve our respect and recognition for their efforts.

We at Batavia Enterprises have always supported our troops. We presently have

three members of our armed forces that we are recognizing today. These three have

their photos posted below. The young men are my son, and the brothers of Carolyn

Russell and Julie Kotalik.

The character of these individuals can never be questioned, because they chose to

potentially put themselves in harms’ way, to make sure we have the freedoms we

all enjoy today.

So today we recognize the commitment of these three special individuals, along

with all of the members of our armed forces, by acknowledging that we truly

appreciate the path they have chosen.

From all of us at Batavia Enterprises….A warm heartfelt “Thank You” for your

service, your sacrifices, and the unwavering dedication to our country.

Please keep them in your thoughts and prayers!

Lemon Chicken

Prep Time: 15min Level: Easy

Inactive Prep Time: 10min Serves: 4 servings

Cook Time: 35min

Ingredients: 1/4 cup good olive oil 1 lemon

3 Tbs minced garlic (9 cloves) 1 1/2 tsp dried oregano

1/3 cup dry white wine 1 tsp minced fresh thyme leaves

1 Tbs grated lemon zest (2 lemons) Kosher salt and freshly ground black pepper

2 Tbs freshly squeezed lemon juice 4 boneless chicken breasts, skins on (6 to 8 ounces each)

Directions:

Preheat oven to 400 degrees F. Warm the olive oil in a small saucepan over medium-low heat, add the garlic, and cook for just 1

minute but don't allow the garlic to turn brown. Off the heat, add the white wine, lemon zest, lemon

juice, oregano, thyme and 1 teaspoon salt and pour into a 9 by 12 inch baking dish.

BEI’s Austin Dempsey & Julie Kotalik hold positions on the

Batavia 4th of July Fireworks Committee. The whole

organization has been working to fundraise for this year’s

goal of $50,000, which the organization needs to put on the

2013 show. Money is normally raised through events like

Books vs. Badges, the City-Wide Garage Sale (May 3rd &

4th), walking the Loyalty Day Parade & selling raffle

tickets, but each year less and less has been given and the

reserves have been tapped. If you love the 4th of July

Fireworks, show it & donate! Every bit helps. Sometimes

all it takes is 5minutes, 5friends, 5dollars.

Pat the chicken breast dry and place them skin side up over the sauce.

Brush the chicken breasts with olive oil and sprinkle them liberally with

salt and pepper. Cut the lemon in 8 wedges and tuck it among the pieces

of chicken.

Bake for 30 to 40 minutes, depending on the size of the chicken breast,

until the chicken is done and the skin is lightly browned. If the chicken

isn't browned enough, put it under the broiler for 2 minutes. Cover the

pan tightly with aluminum foil and allow to rest for 10 minutes. Sprinkle

with salt and serve hot with pan juices.
