Idiot’s Kitchen Recipe – General Tso’s Chicken (Thighs)  Recipe  from  www.idiotskitchen.com    

   Ingredients:    8  chicken  thighs  (either  bone-­‐in  or  boneless),  skin  removed  ½  cup  soy  sauce  or  tamari  for  GF  (low  sodium  recommended)  ¼  cup  honey  1  Tablespoon  chili  garlic  sauce  1  teaspoon  sesame  oil  2  teaspoons  rice  wine  vinegar  1  orange,  zested  1-­‐inch  piece  of  fresh  ginger,  grated  ¼  cup  dry  sherry  1  Tablespoon  cornstarch  Black  Pepper  2  Tablespoons  Olive  Oil  1-­‐2  green  onion  tops,  thinly  sliced    Sesame  seeds    Preheat  the  oven  to  450  degrees.    In  a  small  bowl,  combine  ½  cup  soy  sauce  with  ¼  cup  honey.  Add  1  Tablespoon  chili  garlic  sauce,  1  teaspoon  sesame  oil,  and  2  teaspoons  rice  wine  vinegar.  Grate  in  a  1-­‐inch  piece  of  peeled  fresh  ginger  and  the  zest  of  1  orange.    In  a  separate  small  bowl,  combine  ¼  cup  dry  sherry  and  1  Tablespoon  cornstarch.  Whisk  until  no  lumps  remain  and  then  whisk  the  cornstarch  mixture  into  the  bowl  of  sauce.  Microwave  on  high  1-­‐2  minutes  (stirring  midway  through)  until  thick  and  smooth.    Remove  the  skins  from  8  chicken  thighs  and  season  with  black  pepper.  Heat  2  Tablespoons  of  olive  oil  in  an  oven  safe,  non-­‐stick  pan  over  medium  high  heat.  Add  the  chicken  and  brown  on  both  sides.

Pour  ¾  of  the  sauce  over  the  chicken  to  coat  the  tops  and  sides  of  each  piece.  Place  the  pan  in  the  oven  and  bake  at  450  degrees  for  20-­‐25  minutes  until  golden,  saucy,  and  cooked  through.  For  even  better  coating,  use  a  spoon  to  baste  the  sauce  from  the  bottom  of  the  pan  over  the  chicken  halfway  through  the  cooking  time.      Serve  the  chicken  on  a  platter  and  drizzle  with  the  reserved  sauce.  Top  with  sliced  green  onion  tops  and  sprinkle  with  sesame  seeds.    Serves  4
