Preparing the charcoal:Start with 14 lbs. for model #1 and 16 lbs. formodel #2, make two piles (fig. #4) and lite thecharcoal, once lit spread evenly over the grid (fig.#5) . Model #3 fill the tray completely then makea pile in the center of tray lite and spread oncewell lit.SALTING THE MEATSPork shoulder or leg: Use the brine solution t (seefig. #13) Inject the pieces at intervals allowed bythe length and thickness of the particular piece.Moisten the exterior with the same solution.FOWL: Submerge in the brine solution for 10minutes. Inject the pieces at intervals allowed bythe length and thickness of the particular piece.Moisten the exterior with the same solution.BEEF, LAMB OR VENISON ROAST: Use the brinesolution. Moisten the entire roast. Do not inject orcut into the roasts.

After First Hour Remove charcoal tray and place it on the wirerack , flip meat or fowl. When you flip the porkleg or shoulder, make small cuts into the skin,place the charcoal tray back on top again and add5 more pounds of charcoal, continue roastingallowing for the following times depending onyour type of meat.

Vegetables can be cooked inside the boxes for 30to 60 min. or wrap in aluminum foil and placedirectly on the charcoal, check within 8 minutesor less, depending on taste.Fish..................... Place the fish into the pre-heated Caja China and roast for 15 minutes ormore, depending on weight, figure on roasting 15minutes on each side.
Reasons why you’re roast would not be perfect.• Charcoal used incorrectly.• Meat was not at room temperature prior to
roasting.• Charcoal tray lifted prior to the designated time.• The skin on the pig was cut at the beginning ofthe roasting process and not after turning.
INSTRUCTIONS FOR ROASTING MEATS AND FOWL
Preparación del carbón: Modelos #1 y #2 ver (fig.#4) en Instrucciones para Puerco entero. Modelo #3llene la bandeja completa con carbon,paraencenderlo apile en forma de piramide en el centrode la misma, luego de encendido esparzalo sin dejarespacios vacio. Mantenga 1 hora sin destapar laCaja. Para asegurar que su asado quede tostado,estos deben estar a temperatura ambiental y norecien sacado del refrigerador. Recomendamos lomismo para todas las carnes.
Salado de las carnes:Paleta o pernil de puerco: emplear la soluciónespesa de sal ,ver (fig. #13) asado de puercoentero. Inyectar cada 4 pulgadas y mojarlos con lamisma solución.AVES : Sumergir por 10 minutos en la solución desal fig. #13. Escurrala bien antes de cosinarla.BOLA DE RES , CARNERO Y VENADO.Solución de sal a su gusto; moje toda la pieza con lasolución sin hacerle cortes. No la inyecte.
PRIMERA HORA DE ASADODurante la primera hora del asado coloque lascarnes en la siguiente forma:Paleta y pernil:...con la piel hacia abajo.Carnero entero: ...con el costillar hacia abajo.Muslo de carnero:...con la piel hacia abajoBola de Res: parte grasosa hacia abajo y dentro de labandeja de grasa, no en la parrilla.Todas las aves:......pechuga hacia abajo.
Cuando se cumpla la primera hora, requerida paratodos los asados, destape la caja y voltee la carne oave; cuando voltee la pierna o paleta de puerco delevarios cortes a la piel despues, vuelva a tapar la cajay agreguele de 5 a 6 libras mas de carbon ycontinue el asado marcando los siguientes tiemposy posiciones:
Paleta de puerco: 2 1/2 horas. ( piel hacia arriba) Pernil............. 3 horas ( piel hacia arriba) Bola Res ......2 horas...(.grasa hacia arriba y dentrode la bandeja de grasa no en la parrilla) Carnero entero...........2 1/2 hr..(costilla hacia arriba).Muslo de carnero...... 1 hora piel hacia arribaPavo: ....Menos de 20 lbs. ....... 1 1/2 hr . Pavo:.........Mas de 20 lbs. . 2 1/2 hr.(pechuga haciaarriba)
Pato y pollo hasta 4 libs.... 1/2 hr..(pechuga haciaarriba.)Pato y pollo más de 4 libs. .....1 hora (pechugahacia arriba.)Nota: Saque su asado al momento de cumplirse eltiempo requerido,para evitar resequedad de la carne.El tiempo requerido para asar una pieza es el mismoque para asar varias. Permita una separación de 4pulgadas entre su asado y la bandeja o tapa deceniza. Sugerimos para hacer su adobo emplearparte del agua que haya destilado el asado y pruebeel punto de sal y agregue adobo seco a su gusto.
Carnes Ahumadas y Jamones:Añádale agua a la bandeja de la grasa, y colóque elpernil o Jamón con el pellejo hacia abajo en laparrila.Despues de 1 hora voltee la pieza, delecortes largos, tápelo de nuevo y continue el asado 2horas más sin abrir la tapa cenicero. Notar· que lapiel se oscurecerá debido al proceso del ahumado.
Otros Asados especiales:Costillas de puerco...voltear a la 1/2 hra. y asar por1/2 hra.mas.Bistec, Hamburguesas, Embutidos:... Envuelba en papel de aluminio y coloquedirectamente sobre el carbón,revise a los 8 minutoso menos dependiendo de su gusto.Pescado:...espere que la caja este caliente y asar por15 minutos o más, calcule 3 minutos por libra.
Vegetales: Boniatos, plátanos, papas, ajies,maizColóquelos en papel de aluminio directamente alcarbón y pinchar con un palillo para determinar siestá de su gusto.
Razones por las cuales su asado no pudiera quedarperfecto:• Usó el carbón incorrectamente.• No comenzó el asado a temperatura ambiente.• Levantó la tapa antes de la hora requerida.• Cortó la piel al inicio del asado y no al voltearlo(en el caso de paletas y perniles).

ROASTING A WHOLE PIG
1. Open the pork by the belly, do not cut or poke holes into theupper or side skin.
2. Prepare a brine solution (fig. #13). Inject the solution into themeat, (not on the skin) every 3 to 4 inches, with the suppliedsyringe. The amount of solution to be injected depends on thethickness of the meat. Then turn the pork over and wet the skinwith the same solution, now apply salt evenly all over the pig.You can blend and strain your favorite spices in to the brine, forrecipes please visit our web site www.lacajachina.com.
3. Place the grease tray inside the Caja China. Tie the pig inbetween the racks, place racks with pig ribs on top of the greasetray (see photo #1, #2). Close the Caja China with the ash panand charcoal grid (see photo #3). It’s important that the pigand all other meats to be at room temperature, at the time ofroasting.
4. Preparing the Charcoal:We recommend Kingsford Charcoal. It lights faster, burns evenand lasts longer. Never use instant Charcoal. Start with 14 lbs.of charcoal for Caja China Model #1 and 16 lbs. for model #2.Place charcoal in two piles of equal size, on each end of thecharcoal tray. Never place the Charcoal on center of tray (seephoto #4). Add lighter fluid and light. Once lit (aprox. 15minutes), distribute it evenly throughout the tray (see photo #5).Once this process is completed, roast pork for 3 hours, withoutopening the Caja China.
5. Add charcoal 3 more times for the next 2 1/2 hours, distributeevenly throughout the tray (see photo #6). See chart #12 on theprior page for amount of charcoal to add(varies by weight ofpig) and what frequency .
6. After 3 hours, lift the charcoal grid (fig # 7) shake to removeashes and place on the long handles, remove ash pan anddump the ashes. Then turn the pork over (fig # 8) and cut theskin, every 4 to 6 inches. Replace the ash pan and charcoal gridwith charcoal on top of the box and continue the roastingprocess (to crispy the skin). Check the skin in 30 minutes,slightly opening the box by one of the corners (see photo #9).Continue opening the box every 10 min. until the skin is crispyis to your liking.
7. When Serving:Remove the pork from La Caja China, you can slice the porkwith a plate, it is not necessary to use a knife (see photo #10). Ifyou seasoned the pork using only the brine solution then wesuggest preparing a “Mojo” by using the drippings and mixing itwith grounded spices and sour orange or orange juice andlemon. COMO ASAR EL PUERCO ENTERO
1. Abrir el puerco manteniendo la piel sin hacerlecortes.2. Como adobar su puerco: Ver Fig. # 13, tome estasolucion y moje toda la superficie del puerco, luegoinyectele la solucion en las paletas y perniles. A estasolucion se le puede agregar sus especies preferida,con la condicion que se pase por un colador para quese pueda injectar. Tambien agrege sal sobre todo elpuerco incluyendo el pellejo.3. Coloque la bandeja de grasa dentro de la CajaChina. Amarre el puerco entre las dos parrillas ypóngalo boca arriba encima de la bandeja de lagrasa, (ver foto #1 y #2). Tapar la caja con la bandejacenicero y la malla del carbón encima ver (foto #3 ).El puerco o las carnes deben de estar a temperaturaambiental, antes del asado.4. Preparacion del carbón. Sugerimos el carbón Kingsford regular, el cual, proporciona una mayor duración y encendido parejo. Nunca use carbón de encendido rapido. Comience con l4 libras decarbón para el modelo #1 y 16 libras para el #2,reparta el carbón en los extremos.No coloque elcarbón en el centro ver foto #4 . Agregue soluciónpara encender y dele fuego;este proceso dura l5 a 20minutos luego, espárzalo uniformemente sobre todala malla (Foto #5),comience a contar el tiempo delasado a partir de este momento muy importante nodestapar la caja por las proximas 3 horas.5. Despues se agrega carbon 3 veces mas en lasproximas 2 1/2 horas. Ver Fig. # 12 para la cantidad aagregar ( varia segun el peso del lechon.)6. Cumplida las 3 horas, levante la malla con elcarbon y coloquese sobre las azas largas, remueva elcenicero y bote toda la ceniza (foto #7). Luego volteeel puerco (foto #8) y corte la piel haciendo cortes de3 a 4 pulgadas de largo. Ahora colóque la tapa y lamalla con el carbón encima de la caja. A los 30minutos verifique el tostado de la piel, levantando ligeramente la tapa por una esquina (foto#9); esta operación la puede repetir cada 10 minutoshasta que el tostado de la piel este de su agrado.7. A la hora de servirlo: saque el puerco de La CajaChina, Puede lasquearlo usando un plato al estiloEuropeo. Sugerimos: servir el puerco con el pellejohacia arriba para que sus invitados puedan difrutardel pellejo tostado.
