Kick-Butt Chili
Ingredients2 pounds chuck roast , minced3 Tbsp. canola oil3 onions , chopped finely4 cloves garlic , minced5 Tbsp. chili powder1 jalapeno , seeded and finely chopped2 tsp. ground coriander2 Tbsp. ground cumin2 cups beef stock 1 cup dark beer1 can (28 ounces) chopped tomatoes½ cup roasted or canned corn1 can (15 ounces) black beans ,
rinsed and drained1 can (15 ounces) pinto beans ,
rinsed and drained1 Tbsp. masa (corn flour)2 tsp. kosher salt1 tsp. pepper
Brown the meat in 1 tbsp. canola oil…
…set aside
In large pan, add 1 tbsp. canola oil, heat until hot.
Add onion…
…sauté about 5-8 minutes…
…add garlic and sauté for 1 minute.
Add chili powder, jalapeño, coriander, cumin …
…and mix well. Cook 1 minute.
Add beef stock, beer, tomatoes, corn, beans and the beef.
Cover and simmer on low heat for 1 hour…
…stir every 15 minutes.
1 hour later…Add masa and simmer 10 minutes
Season with salt and pepper
