Eland Fillet:
Ingredients
· Salt
· Garlic and herb spice
· Red wine
Preparation
· Cut and clean fillet
· Add salt and garlic herb spice
· Add 2 glasses of red wine
· Leave in marinade overnight
· Fry in frying pan until cooked to desired preference.
(suggestion is not to have it cooked more than medium)
Blue cheese sauce:
Ingredients
· Cream – 1 cup = 250ml
· 40g Maizena
· 30g blue cheese
· 3ml Aromat
Preparation
· Add cream and Aromat in a saucepan
· Stir slowly until Aromat is dissolved
· Add blue cheese
· Thicken sauce with Maizena
Vegetables:
Preparation
· Blanche the carrots and snow peas for 3 minutes
· Add butter to a frying pan and fry for 1 minute
· Add Vegetable spice

· Cook pealed potatoes for +- 12 minutes
· Mash the potatoes
· Add parmesan cheese
· 1 teaspoon of salt

Best known are the mammals, and the best known of these are the famous Big Five: elephant, lion, rhino, leopard
and buffalo. Not that giraffe, hippo or whale are small ...
South Africa's bushveld and savannah regions are still home to large numbers of the mammals universally
associated with Africa.
The Kruger National Park alone has well over 10 000 elephants and 20 000 buffaloes – in 1920 there were an
estimated 120 elephants left in the whole of South Africa.
The white rhino has also been brought back from the brink of extinction and now flourishes both in the Kruger
National Park and the Hluhluwe Umfolozi Park in KwaZulu-Natal. Attention now is on protecting the black rhino.
Both these parks are home to all of the Big Five, as are other major reserves in South Africa – such as Pilanesberg
in North West province – and numerous smaller reserves and private game lodges.
Food & Recipe’s
Directions
Mix mashed potatoes, egg, flour, salt,
pepper, garlic, and any optional
ingredients, into mashed potatoes.
Preheat skillet and add a couple of
tablespoons of oil.
Make sure the mixture is not too thin.
Pour 1/4 cup batter into hot pan; brown
on both sides.
Enjoy with sour cream or applesauce.
What to do with left-over mashed
potatoes...
2 cups mashed potatoes,
(approximately)
1 to 2 egg
1⁄4 cup flour
1 salt
1 black pepper
1 garlic
1 onion, (optional)
1 chives, (optional)
1 cheese, (optional)
1 oil for frying
1 sour cream, or applesauce, for
garnish (optional)
Directions To Make The Oreo Cookie Crust:
Preheat oven to 350 degrees.
In a medium bowl, whisk together the finely-crumbled Oreo
cookies and melted butter until blended. Press the mixture
into your mini cheesecake pan (or other baking pan) in your
desired thickness, press until flat, then bake for 5 minutes
and remove. (**I placed 1/2 tablespoon of the crust into
each mini cheesecake, and then patted it down with my
spoon.**)
To Make The Peanut Butter Cheesecake:
In an electric mixer, add the cream cheese and peanut
butter and beat on medium-speed until smooth. Add the
sugar and continue mixing until combined. Blend in the
eggs one at a time, then the cream and vanilla, using a
spatula to scrape down the bowl between additions, and
beat until just combined.
Use a spoon or cookie scoop to transfer the batter to your
pan with the pre-baked crusts. Fill each mini cheesecake
container to the brim, evening out the tops with a spoon.
Then bake for 12-15 minutes, or until the cheesecakes are
just set and no longer move when you jiggle the pan. Turn
the oven off and crack open the door and let the
cheesecakes cool off for 15 minutes. Remove and let sit
until they reach room temperature, then refrigerate for at
least 4 hours. Top with ganache and the crumbled Reese's.
To Make The Chocolate Ganache:
In a heatproof bowl, add the chocolate chips and cream.
Heat over a bowl of simmering water, stirring until
combined and the chocolate is melted. Or heat in the
microwave in 10-second intervals, stirring between
intervals, until the chocolate is melted. Add in a tablespoon
of powdered sugar, or more to reach your desired
consistency. Then spoon the ganache over the mini
cheesecakes
Oreo Cookie Crust
Ingredients:
1 cup finely-crumbled Oreo
cookies
2 Tbsp. melted butter
Peanut Butter Cheesecake
Ingredients:
500g (2 bricks) cream cheese,
softened
1/2 cup smooth peanut butter
3/4 cup light brown sugar,
firmly packed
2 eggs, room temperature
1/4 cup heavy cream
1/2 tsp. vanilla extract
Chocolate Ganache
Ingredients:
1 cup dark chocolate chips
3 Tbsp. heavy cream
1 Tbsp. powdered sugar (or
more)
Topping:
Reese's Peanut Butter Cups,
crumbled
Peanut Butter Chocolate Mini Cheesecakes
Directions
1 Grease a 20cm microwave or silicone ring cake pan.
2 Mix the flour, castor sugar, baking powder and 2ml
salt together. Mix the cocoa powder with the warm
water until smooth, then add the vanilla essence. add
the eggs and oil and mix well.
3 Pour the liquid mixture into the dry ingredients. use a
whisk to mix the batter until smooth. Pour into the
prepared cake pan.
4 invert a small microwave-safe saucer and place it
into the microwave. Put the cake pan on top of this.
Microwave on high for five to seven minutes,
depending on how many watts your microwave is. the
cake should still be slightly moist on top. Leave to
stand for 10 minutes.
5 remove from the pan and cool completely, then
drizzle with the chocolate topping.
6 Chocolate topping Melt the chocolate and
evaporated milk together in the microwave for a few
minutes until the chocolate begins to melt. Stir well
until smooth. Pour over the cake.
• 250ml (140g) cake flour
• 250ml (220g) castor sugar
• 20ml baking powder
• 40ml cocoa powder
• 250ml warm water
• 5ml vanilla essence
• 2 large eggs, beaten
• 62ml sunflower oil
Chocolate topping
• 90g dark chocolate, broken into pieces
• 15-25ml evaporated milk, or cream

The islands of Maldives appear in-between the trading route of the Indian Ocean. Thus settlers, and visitors
from neighbouring regions and around the world have come in contact with the islands for as long as history
has been recorded. Such is the to-and-fro flow of people and their cultures, that a marked effect has been
left in the Maldivian people, the language, beliefs, arts, and attitudes.
The looks of the Maldivian people may differ from one atoll to the other, attributing to the genes passed on by
South and Southeast Asians, Africans, and Arabians. The language, Dhivehi, differs in dialect in some
regions in the south of Maldives, possibly due to the secluded nature and subsistent ways of island life.
Maldivian beliefs have been very much based around religion and superstition, often used together in
matters of significance but given separate positions in society. In matters of faith, Islam dominates, but
influence of the supernatural still continues to play a major role in most island communities, possibly giving
credit to the folklores and Buddhist traditions of the islands’ first settlers before conversion to Islam in 1153
AD.
The mixing of cultures is very much seen in Maldivian arts. The music played with the local bodu-beru (big-
drum) resemble that of African drumming. The dhoni (a unique Maldivian sailboat) is an art form itself built
with skilled craftsmanship, with significant similarities to the Arabian dows. The fine artistry of Maldivians,
seen in the intricate details on wooden beams in antique mosques, represents what we have gained from
Southeast Asian architecture. Then there is the undefined: the distinct geometric designs used in mats
woven from local materials, the embroidered neckline of women’s traditional dresses and their ornaments
too, expose another story brought in from an unknown culture that has seeped in to Maldivian society.
Maldivians are quite open to adaptation and are generally welcoming to outside inspiration. The culture has
always continued to evolve with the times. Locals still eat fish and fishermen still spend days out at sea, but
tourism now takes a standing prominence. Most Maldivians still want to believe in upholding unity and
oneness in faith, but recent waves of reform in the country have created a whole new culture of new ideas
and attitudes. The effects of the modern world are now embraced, while still striving to uphold the people’s
identity, traditions and beliefs.

Local company Tourist Villages Co. Ltd recently
launched its first tourist village in the town of
Mahébourg. Situated in the gardens of the town’s
naval museum, the retail space accommodates
about 20 permanent exhibitors, all from Mahébourg
region. All the items offered for sale are local
handicraft creations.
In view of offering stand space to the maximum of
operators, 11 individual craftsmen and two
associations were selected. Preference was given to
craftsmen from the south of the island who showed
interest and responded to the invitation of Tourist
Villages Co. Ltd.
This was a great opportunity for the 60 artisans
represented by the Arts and Crafts Manufacturers
Association of Mauritius (ACMAM) to promote their
handicraft.
A second stand was also provided to Le movement
Pour l’Autosuffisance Alimentaire – an association
consisting of 12 member craftsmen from Vieux
Grand Port who make handicraft from the pandanus
(Vacoas) region.
Investment and future plans
The Mahébourg tourist village required an
investment of 6 million MRU prior to launch. It will be
the first in a series. Tourist Villages Co Ltd is now
planning to launch a much more ambitious second
village in Belle Mare – something that will require an
overall investment of around 200 million MRU.
The new tourist village of Belle Mare will
accommodate 35 shops, a food court, a recreation
centre and, of course, exhibition space for artists.
Subsequently, another tourist village is expected to
be launched in Flic en Flac.
