On all Saints Day we celebrate the known saints. The next day we try to help the All
Souls into heaven! They are the rest of the folks who journeyed though life. I am at the
age, where the joke “10-year-old boy invited his best friend over to play. They spent the
day making lots of noise and getting into everything. The friend noticed a very elderly
woman absorbed in reading her Bible. No matter what the boys did, she concentrated on
her reading. After a while, the friend asked, "What's that old lady doing?"
The boy answered: "She's my Grandma, and she's cramming for her finals."”
That could be my grandkids talking! The Knights and Auxilians have many programs
that help us journey with “granny or the rest of the human family, through the ups and
downs of life. We are “torn apart” and then learn to cope. We have learned from our
families, what are acceptable and taboo subjects. Maybe we talk about death, rape or
our kid in prison, or maybe these are “unspeakable subjects” and we learn how to react
too. We can all learn to be more effective in walking with others, not just next to them,
on the road we all travel. I know many of you do a wonderful job. And I encourage you
to stay involved in all the wonderful programs the Knights and ladies do in your local
auxiliary and the community.
We had a wonderful Workshop at St Pius the X in Rochester and I thank everyone who
made this a wonderful experience.
A couple things to note:
1. The State Deputy proposed that we honor the Auxilian of the Year at the KC 3rd
Degree Convention in May. Please send in your nomination for your local Auxilian.
2. Please send to Diana McInerny for the newsletter, your ideas, fundraisers, articles,
recipes etc. with the Hand to be eligible to win a prize at the State Convention in April.
3. Please let me know if disasters happen. The State Auxiliary Board still has funds
available that can be asked for.
4. Christmas is coming – someone on your list needs an Auxiliary Cookbook!
5. Help the Knights Campaign.

Bavarian Apple Torte
Crust:
3/4 cup butter softened 1/2 cup sugar 1 ½ cups all purpose flour ½ tsp almond extract
Filling: 2 ~ 8oz cream cheese softened ¼ cup sugar 2 eggs ¾ tsp almond extract
Topping: 3 cups thinly sliced,
peeled tart apples ½ cup sugar 1 tsp ground cinnamon
Crust: Combine the four ingredients. Press into the bottom of an ungreased 9 inch spring-form pan. Filling: In a mixing bowl, beat cream cheese and sugar. Add eggs and vanilla. Mix well. Pour mixture over the crust.
Topping: Combine all ingredients. Spoon the mixture over filling. Bake at 350° for 55 to 65 minutes or until the center is set. Cool on a wire rack. Store in the refrigerator. Cut into wedges with a serrated knife.
Mix Cool Whip with Chai Tea to top each piece before serving.
Note: Spring-form pans may leak. To prevent dripping, place the pan on a baking sheet in the oven. This increases baking time.
1 pkg pre-made frozen meatballs 8 oz macaroni or orzo pasta 2 Tsp olive oil 1 medium onion, finely chopped 1 tsp dried thyme
1 tsp dried sage leaves 1 medium carrot, chopped 8 cups chicken stock 1 bay leaf 1 cup frozen spinach, chopped
Preparation: Cook pasta per directions, drain, set aside. Prepare all vegetables. Cook meatballs per directions. In a large pot, saute the onion, thyme and sage in olive oil. When the onion starts to turn a golden color, add the carrots. Add meatballs, chicken stock and bay leaf. Simmer, do not boil, until the vegetables are tender and the meatballs are heated through. Add cooked pasta and spinach, stir and heat through. Serves 6-8

The Faribault Auxiliary organized a no-cooking cooking class.
“We invited the dietician from our Hy-Vee grocery store to present healthy ‘fast food’ (the kind you just peal and eat) featuring some fruits and vegetables that some may never have tried. She made a massaged Kale salad and an avocado dip plus had samples of jicama, papaya, mango, pomegranate that we were all able to taste. She explained how to easily cut and pre-pare other vegetables and had hand outs of several recipes. We opened this up to anyone who wished to attend and asked for a free will offering to help cover the cost.”
Think this might be something you’d like to try? Contact Mary Ardolf at 507-334-4431 for more information.
Here is the first submission in our “Hand” campaign.
This and That
Thanksgiving Prayer By Scott Wesemann
Lord, so often times, as any other day
When we sit down to our meal and pray
We hurry along and make fast the blessing
Thanks, amen. Now please pass the dressing
We're slaves to the olfactory overload
We must rush our prayer before the food gets cold
But Lord, I'd like to take a few minute more
To really give thanks to what I'm thankful for
For my family, my health, a nice soft bed
My friends, my freedom, a roof over my head
I'm thankful right now to be surrounded by those
Whose lives touch me more than they'll ever possibly know
Thankful Lord, that You've blessed me beyond measure
Thankful that in my heart lives life's greatest treasure
That You, dear Jesus, reside in that place
And I'm ever so grateful for Your unending grace
So please, heavenly Father, bless this food You've provided
And bless each and every person invited
Amen!

The Knights’ $1.4 million sponsorship will cover the costs of food, transportation and entertainment for every athlete from the United States and Canada The Knights of Columbus were there with Special Olympics and its founder, Eunice Kennedy Shriver, from the very beginning,” Our support exemplifies our commitment to the dignity of every person, our dedi-cation to assisting with our neighbors’ needs whatev-er they may be, and our deep appreciation for the great work done by Special Olympics.” K of C councils donated more than $3.5 million to Special Olympics in 2013. Members also provided more than 250,000 hours of service at nearly 20,000 Special Olympics events. K of C councils also donat-ed an additional $13.5 million to a number of other projects assisting people with intellectual disabilities. Posted on July 19, 2014 by State Deputy
