SWEET POTATOBROWNIES

Makes approx 12 squares
Approx 10 mins prep time
Approx 40 mins cooking time
(including 10 mins to pre-
cook the sweet potato)
Pre heat the oven to 180 degree
fan.
In a food blender whizz together
all of the ingredients until they are
fully mixed.

03Line a small rectangular baking tin
and pour in the mixture. My tin
(30ish by 20ish cm) was a little big
so I only used 2/3 of the tin to
ensure they rose!
The flesh of one small baked
sweet potato (instead I chopped
mine into 1/2 cm chunks and
boiled for 10 mins to soften)
100g raisins
3 tbsp coconut oil (I advise trying
2 as mine were slightly oily)
2 tbsp milk
2 tbsp cocoa powder
1 tbsp ground almonds
1 tbsp oats
1 egg
1/2 tsp baking powder
04Transfer to the oven and bake for
around 30 mins, checking after 20.
You want them squidgy / fudgy in
the middle, but cooked! Remove
from the oven to cool and cut into
squares. I gave them to the children
for a snack and I added a dollop of
dairy free yogurt for me.
