Case Study 1- Optimizing the production process to
enhance product quality The Scenario:
To meet changing consumer demands; the producer wanted to be able
to supply individual slices of cake.
- The cream filled cakes with fruit toppings needed to be portioned.
The Solution:
A detailed assessment of the customers process resulted in:
- A cryogenic tunnel solution configured to the customers production
process, based upon a detailed understanding of the optimised
temperature control profile (parameters).
Notable Cryogenic Benefits:
- Increased production capacity from 400 to 600 kg/hour.
- Eliminate need for manual manipulation/lower labour costs.
- Flexibility in production and higher reactivity to demand.
Key Innovation:
- Customised Liquid Nitrogen Injection System: Delivered
Accurate and clean cuts, excellent portion control and higher
yield of Class 1 product.

Case Study 2 - Facilitating growth in demand and new product
launches
The Scenario:
Vegetarian food producer had Increasing capacity needs and the need
to be able to efficiently launch new product ranges to meet demand.
- Vegetarian ‘hamburger and nugget shaped products’ to be
frozen directly after being fried.
- Peak production around 1,2 T/hr, but with a wide variety of
shapes, sizes and production rates.
- A solution with great flexibility was required.
The Solution:
- Products were mathematically modelled using AL software to
find the optimum equipment specifications.
- A 18 m tunnel with bespoke nitrogen injection nozzles installed.

Case Study 2 - Facilitating growth in demand and new product

Notable Cryogenic benefits:
- The equipment was capable of processing a wide range of
products.
- The product yield was particularly high due to a reduction in
dehydration from the hot product.
- Overall ratio lower than predicted; enable us to update our
mathematical model with an additional tunnel concept for the
future.

- Mathematical modelling and experience enabled the installation
to be configured to maximise the efficiency of the process,
produce optimal product quality and align production to new
