Easy North Indian Style Rajma Recipes

Rajma Masala

Rajma masala recipe is a popular North Indian recipe and is one of the loved Punjabi vegetarian curry. It is a popular brunch recipe, where the kidney beans are cooked with onions, ginger, garlic and tomato gravy. It tastes best when eaten with rice.

1. Rajma Curry

Ingredients 150g rajma or kidney beans

salt acc to taste

1/4 teaspoon turmeric powder

1/2 teaspoon red chilli powder

4-5 garlic cloves

1 medium sized onion

3 medium sized tomatoes

2 green chillies

1/2 teaspoon cumin seeds

1 teaspoon dry coriander powder

1/4 teaspoon garam masala

1 tablespoon coriander leaves chopped

2 tablespoon ghee

Method -
1. Soak the rajma in 1 cup of water for overnight. Pressure cook with 1/2 teaspoon of salt and 2 cups of water. Lower the flame after one whistle and cook for 10-12 minutes. After 10 minutes, open and check to see if rajma is soft or not, else give additional -3 whistles.

Grind onion, green chillies, garlic and ginger to make a fine paste. Heat oil in a pan and add cumin seeds and onion paste to it. Fry till golden brown.

Grind tomatoes and add to the same pan, stir. Add salt, turmeric powder, red chili powder and garam masala.

Mix in boiled rajma with masala. Simmer rajma for 5-8 minutes and then garnish with some coriander leaves and serve.

2. Rajma Chatpati Khichidi

Ingredients Jammu rajma 200 gms (soaked over night)

long grained rice 1 cup

onion paste of 2 onions

Tomatoe puree 1/2 cup

Ginger grated of 1/2 inch piece

Green chiilies - 1 to 2

coriander - 1 to 2 tbsp

pudina - 1 to 2 tsp

garam masala - 1 tsp

Salt as per taste

chilli powder - 1 to 2 tsp

Ghee 3 tbsp

Method In pressure cooker heat ghee. Put onion paste and ginger and roast till brown. Put rajma, tomato puree, mirchi powder, dry dhania powder.

When it dries up, Put rice, green chilies and water. Salt to taste. Put the pressure cooker on for 8 minutes. After 3-4 whistles, open and check.

Garnish it with dhaniya, pudina, garam masala and serve.

My Tip -

Buy organic rajma, as it cooks faster.

Add a pinch of turmeric while soaking.

Wash rajma well

You can add a pinch of baking soda while cooking rajma
