Tradition and delicious cuisine of Canary Islands

Spain is a country noted for its culture, cuisine and lifestyle. The paradisiacal Canary Islands hihglights by enviable location, its weather and delicious gastronomy.

Papas Arrugadas

One of the most well-known dish in Canary Islands is Papas Arrugadas with Mojo picon. The recipe of this dish is really simple; potatoes boilt in salt-water without peeling them and server with the traditional Canary Island sauce mojo picon or mojo cilantro as a side dish with fish or meat, or as an appetizer.

Mojo is a sauce that accompanies a variety of Canary Islands dishes and was probably introduced to the Island by Portuguese travellers an inmigrants. There are two types of Mojo; picón and green.

Normally, mojo picón is used to accompany potatoes, with roasted maize meal or with sancocho and the mojo green accompanies potatoes and fresh fish or roasted chicken.

One of the most known vegetarian dish in these island is Potaje de Berros; a hot-pot of chickpeas, watercress, potatoes and beans with tomatoes, onion, peppers, garlic, salt, oil and saffron.
