My family holidayed by the beach where I developed a passion for an outdoors lifestyle by the water. My fascination for the ocean led me to study marine biology and from there get involved with research to find better ways to grow seafood. I loved working in the field but wasn’t suited to the laboratory, so I left academia to become an oyster farmer.

Prime Water Oysters is located on the Nambucca River in Northern NSW. Our Sydney Rock Oysters are grown in deep water where they have constant access to nutrition from fresh tidal currents. They are given the space to grow a heavy, deeply cupped shell containing a uniquely golden coloured oyster with a creamy taste.

In my mind aquaculture is both an art and a science. Some secrets can be unlocked by analysing the environment, but the rest comes from being on the water each day and getting a feel for what works – to me that’s the fun part!
