Our contemporary cylinder mill enables us to mill as much as 100 tons of wheat daily, while we mill other types of grain on millstones.

Wheat flours

WHeaT GRITS

is suitable for preparing grits dumplings, grits cooked in milk, grits soufflé and white polenta. It contains moderate amounts of protein and minerals.

CORSe GRIND FlOuR TyPe 400

is best used in combination with other flours for preparing different types of dough, such as the one for the potica cake, as well as for dumplings. It contains moderate amounts of protein and minerals.

It contains B vitamins and, in comparison to white flour, more fats, including unsaturated fatty acids which protect from cardiovascular diseases. Compared to other wheat flours, it has slightly lower levels of rapidly digestible starch, which makes it particularly suitable for products for maintaining good health. In limited quantities, it can be also used in diabetes and weight-loss diets.

Other types of flours

BuCkWHeaT FlOuR

Before milling, the buckwheat is treated to remove any chaff. Buckwheat flour is a source of high biological value protein, because the amino acid composition of protein meets very well our needs for amino acids. It is rich in minerals, especially zinc, which is a vital element and often lacking in our diet. Buckwheat flour contains important slowly digestible protein and slowly digestible starch. It is suitable to be used in diets for lowering blood cholesterol. In moderate quantities, it is recommended in diabetes diet as a substitute for white flour. In order to retain as much of its properties as possible, the buckwheat is ground on a millstone.

Rye FlOuR TyPe 1250

In addition to carbohydrates, the endosperm of rye grain contains quality protein. The germ and the part of seed under the seed coat contain up to 2 % of fat, as well as various minerals and vitamins, in particular B vitamins. Rye flour is rich in fiber, which help prevent colon cancer. It is darker in color, has a distinctive taste and is traditionally used especially in the northeastern parts of Slovenia. Rye flour is most commonly used preparing rye bread and honey biscuits. Rye loaves look a bit more compact and have a slightly lower volume, but they stay fresh for a long time. Products made from rye flour are recommended for diabetes diet.

SPelT FlOuR

Today, spelt (Triticum aestivum l. var. Spelta) is increasingly gaining significance. In the past, spelt was the most important type of wheat in nutrition

of people. In our mill, the spelt is milled in traditional millstones that rotate slowly, so the milled mass warm up only slightly and thus retains all vitamins and enzymes. Compared to other cereals, spelt has preserved its original properties and advantages that the modern varieties in cereal have already partially or completely lost due to breeding. In most references, it is underlined that spelt is rich in dietary fiber and B-complex vitamins, especially niacin and thiamine. Spelt in comparison to wheat contains more carotenoids, which are important for the formation of vitamin a. Spelt also contains mucopolysaccharides, which stimulate the body’s immune system. Spelt can be used like any other cereal, but should not be part of celiac disease diet. Spelt flour is suitable for making spelt pastry and bread, as well as for other delicious dishes.

SPelT GRITS

Spelt grits is produced by milling spelt flour. When sifting the milled spelt, the first stage is to separate flour from bran, while in the second stage the grits is separated from bran. Spelt grits can be used for the same purposes as wheat grits. In comparison to spelt flour, spelt grits is much richer in protein, and contains more carotenoids, which are important for the formation of vitamin a, than ordinary wheat.

SPelT WHOle meal FlOuR

Spelt whole meal flour is produced by sifting out only the outer layer of wheat (coarse bran). Thus, we preserve all important characteristics of spelt whole meal flour. In comparison to regular spelt flour, spelt whole meal flour is much richer in protein and minerals,

which include iron and zinc that are particularly important in our diet. During the preparation of bread, the minerals are released from the semen structures and become more easily accessible to our organism.

CORN FlOuR

Corn flour is rich in starch and also contains proteins which complement the protein in milk, meat or buckwheat by their amino acid composition. Corn flour is used for preparing žganci, a traditional Slovenian dish. Breakfast of corn žganci gives body the energy to work. In combination with milk, dairy or meat dishes, they provide the body with balanced amount of amino acids. Corn flour contains provitamin a, several B vitamins, vitamin e and other vitamins. It is also an important food source of quality fat, calcium, magnesium, phosphorus, iron, and zinc.

CORN GRITS

To prepare corn grits, it is essential to carefully select maize (the most suitable are the so-called semi-flint types), so that the corn meal has more proteins and carotenoids than corn meal. Corn grits is especially suitable for the preparation of polenta. In Primorska region, polenta is traditionally cooked, left to slowly harden and then grilled. as a result, some retrograded starch forms, which is important for the prevention of colon cancer, together with soluble maize fibers.

BaRley FlOuR

Barley flour is excellent for thickening soups and crumbing, especially for crumbing fish. It is used instead of white flour as it is much more nutritious. It contains plenty of beta-glucans and other fibers. The most important are water-soluble fibers, which pass from flour particles into a solution during food preparation, thicken dishes and have good impact on our digestive system. Barley flours contain relatively large amounts of valuable mineral substances (iron, manganese, and magnesium) and vitamins, especially B vitamins and vitamin e.

OaTmeal

Historically, oat was one of the most important medicinal plants, but is today recognized as one of the healthiest foods, due to the soluble fiber in oatmeal. Oat has to be hulled before milling. The hulled grain is rich in minerals, proteins, and has a good amino acid composition. It is also richer in fat than other cereals. In comparison with other cereals, oat contains little less starch and carbohydrates, which is particularly important for people who must avoid sugar and starch, such as diabetics. experts recommend oat dishes in cases of lack of energy and appetite, mental overload, anxiety, depression and insomnia. Oatmeal is suitable as a supplement for improving the nutritional value of bread. It has a beneficial effect on the digestive system.

mIlleT FlOuR

SOya FlOuR

meslin flour is a mixture of rye and wheat flour. It is a reminiscent of the old way of cultivation of cereals in Slovenia, where a mixture of rye and wheat was sown as it was more resistant to the weather conditions than one individual crop. It is used to make excellent bread, which compared to wheat flour contains more high-quality protein and soluble fiber and is suitable for maintaining healthy diet.

kamuT FlOuR

kamut is an ancient grain from the middle east, related to wheat, which was not subjected to modern intensive plant breeding and contains plenty of protein and protective substances. kamut flour is rich in protein, fiber, minerals, carotenoids and B vitamins. It has a beneficial effect on the digestive system. kamut can be used like any other grain. The only exception is the celiac disease, where it should not be included in the diet.

BuCkWHeaT GROaTS

is one of the traditional Slovenian kasha (groats) dishes, a together with millet and barley groats. It is also suitable as a stuffing for black pudding. Black pudding that had buckwheat as a stuffing used ot be made all over Slovenia, while in Prekmurje a white buckwheat sausages that are part of a typical feast in that region are still made. Buckwheat groats can be added to beef, chicken or mushroom soup. When baked with apples, cottage cheese and nuts, it turns into baked buckwheat kasha. Of all our cereals and grain crops, buckwheat has most balanced amino acid composition of proteins. Buckwheat groats contains the largest amounts of slowly digestible starch, which, together with other fibers, is extremely important for maintaining good health. Buckwheat groats also contains many minerals, but dietary the most important are zinc and iron.

Oat flakes cooked in water are easily digestable food due to the starch that turns into dextrin. Oat produces are particularly suitable for the improving and diversifying the diets of children, adolescents, the weak and elderly.
