If you’d like to explore culinary exquisiteness the elegant way, hop along to Chalong Bay which is on the eastern coast of Phuket. The restaurants here are celebrated for their seafood choices which can be enjoyed in a highly stylised backdrop facing the beautiful imagery that opens up to the sea.

and net enclosures. So when you go to these restaurants, you’re expected to look at all the enclosures and select what you’d like to have at your dinner table, served and well garnished, of course!

How to get here: From Laem Hin Pier, you can take a short boat ride across. Note: (how often do we get to say this!!) the boat ride is free.With so many spices and ingredients working on your throat, it’s almost heavenly to wash it all down with some soothing tender coconut water. If you’d like to top it all with a punch, try Singha, which is the Thai version of home-brewed beer.

Hi there Joe and Marie

I know you asked for a postcard from Phuket but I’m sending you a letter as I have just too much to say! This place we’re staying at is absolutely amazing. It’s called Absolute Twin Sands and is just south of Patong. We checked in today and looking out from our balcony down to the beach, the shore is lined with tropical pine trees and the water simply defines the colour of turquoise. I canhear you asking, “What’s with the name?” Well, the hotel is built between two beaches, Tri Trang and Merlin Beach. We took a stroll today to Tri Trang and had a little sunbathe and a paddle, enjoyed a meal at a local restaurant, then walked up over the rise to the other beach.

Merlin Beach was just as beautiful and we arrived back at our suite

just in time to catch sunset over the western arm of Patong Bay. The funny thing is that it was just as outstanding sound-wise as it was visually with an exotic mix of wind chimes and cicadas. As Marie would say; ‘Dreamy’.

Anyway, just before dinner we ran into a really friendly English family by the swimming pool. We invited them to dinner at the onsite Blue Mango restaurant (recently named #1 on Trip Advisor too!) but they explained that they were shared ownership owners and staying in their fully equipped two-bedroom suite (all of the rooms have a kitchenette) which sounded real neat to us but off we went to dinner anyway and it was just fabulous. Claudio, the Executive Chef, explained that the food is ‘Anglo-Med’ and he was spot on: I mean little Josh had genuine, and I mean genuine, fish and chips while we nibbled on anchovies on home-baked bread with olive oil-

drenched salad then lasagna and spag carbonara. Wicked stuff, and the wine was really reasonably priced, too.

They also have a five-star Thai chef and we’re planning on sampling green curry and massaman curry tomorrow tonight, perhaps with a bottle of white. Not for Josh, mind.We’re in a huge one-bedroom suite (Josh has a roll-in bed) with vivid modern art on the walls and a black-and-white theme running through it.

All the mod cons are here including a 40” flat-screen TV with a sound bar instead of speakers, a rain shower in the bathroom and a comfortable balcony with tables and chairs above the three-part swimming pool. I say “three-part”

as there’s a 25-metre lap pool, a kids’ play area and an infinity Jacuzzi pool. Josh and I splashed around for hours and hours until bedtime. Most other hotels wouldn’t let us do that, but here you can. Afterwards, he wanted to lift weights and go on a running machine in the 24-hour fitness room but I could see he was fading fast so I took him upstairs for a DVD and a bedtime story.

What’s remarkable about Absolute Twin Sands is that the morning views are just as exotic as the sunset vistas so we enjoyed a nice cup of tea on the balcony before venturing down for breakfast. The English family checked out today, but not before showing us around their two-bedroom suite. It was more or less in the same design and décor as ours but a even larger and OMG, the size of the balcony…it was just huge. Anyway, breakfast was simply perfect: we sat on the all-day dining Blue Mango terrace instead of in the air-conditioned interior and I enjoyed a full-on English serving while Joni tackled a mixed fruit platter with yoghurt and raspberry juice.

She excused herself and went for a foot massage at the ‘iSpa’, telling me later that there’s free access for guests to the sauna and steam room at the spa. She’s also hinting that the double treatment room with Jacuzzi is beckoning, so who knows? Josh then had a go on the

free 24-hour internet in the smart and air-conditioned lobby while we decided on what to do today, finally choosing a shopping spree. It’s good to know that there’s a free shuttle bus running to Patong day and night, passing by Jungceylon shopping mall and of course the infamous Soi Bangla with its intoxicating nightlife. It’s great to be in a quiet area but it’s also good to be connected; oh, speaking of which, there’s free Wi-Fi throughout the resort.

The verdict? You can tell by now that I’m all fuelled up about it, otherwise you’d have just had the aforementioned postcard but I wanted to let you know that the project is ongoing and this is only phase one: phase two and three will offer even more, with extra pools and villas. Come and check it out; I promise you, it’s like nothing else we’ve ever seen before and you can stay as a guest, own an outright apartment or even share the costof a whole apartment with other owners like the Australian family, I did ask them what they had to pay for an entire suite to themselves and they said 2.5million Baht which is only just over AuD$80K - can it really be so cheap? They said they can even rent out or pass on as an investment to their kids and they get to use an amazing motoryacht and get complimentary golf equipment thrown in!!

Anyway, we really are living the dream here and are meeting one of the Absolute Fractional sales guys in the morning to learn more. If this works out we can wait to have you join us next time.

THYME ROASTED PuMPKIN RISOTTO

BLuE MANGO SuNSET SIGNATuRE COCKTAIL

One of the best selling local dishes on the menu at the Blue Mango Bar & Grill is the delicious Massaman Beef Curry. Massaman Beef Curry is a popular Thai dish that is Muslim in origin. Commonly made with beef, this dish is also easily substituted with duck, tofu, chicken or pork.

This recipe is for a single serving.Ingredients• ½ tsp red curry paste• 200 ml coconut milk• ½ potato, boiled & diced• ½ onion, sliced• 150 grams beef• ½ tsp sugar• ½ tsp all-purpose seasoning• 2 tbsp fish sauce

In a hot pan, stir-fry the red curry paste and add coconut milk. Bring to a low boil and add the diced potatoes, sliced onion and raw beef. Cook 5-7 minutes, or until beef is done all of the way through. Add in the fish sauce, the sugar, and the all-purpose seasoning and give the entire curry a quick stir. Fold in the peanuts and cherry tomatoes, and garnish with carmelized onions. This dish is best served with steamed white rice.

Made famous in northern Italy, risotto is a hearty dish that is usually served as a first course for dinner. The Blue Mango Bar & Grill put their own creative twist on this classic dish serving up a spectacular Thyme Roasted Pumpkin & Rocket Leaf Risotto.

This recipe is for a single serving.Ingredients• 1 clove garlic• 10 grams thyme• 1 shallot• 1 cup Arborio rice• 2 cups vegetable stock• 40 grams goat cheese• 1 handful rocket leaves• 1 small pumpkin, peeled & diced

Saute the diced pumpkin with the garlic and thyme, as well as butter, salt & pepper on medium heat as to not overcook the pumpkin. Once sautéed, set aside. For the risotto, sauté the diced shallots and garlic in olive oil and add the uncooked Arborio rice and continue to sauté for one minute. Slowly add in the vegetable stock to the risotto mix and cook over medium heat constantly stirring the rice so that it doesn’t stick. Continue to pour the vegetable stock into the risotto until the consistency becomes creamy. Combine the sautéed pumpkin into therisotto mix, and fold in the rocket leaves and goat cheese. Top the risotto with more rocket and balsamic syrup.

The Blue Mango Sunset is the signature cocktail at the Blue Mango Bar & Grill located within the Absolute Twin Sands Resort & Spa. It’s a light, refreshing drink to be enjoyed in the open air bar whilst watching the sunset.

The Blue Mango Sunset is served in a Hurricane Glass, and the cocktail should be built in the glass.

Ingredients• 50 ml Vodka• 30 ml Triple Sec• 20 ml Blue Curacao• 150 ml Tonic Water

Decorate with pineapple and a maraschino cherry and enjoy!

Originally from Northern Italy, Claudio was working for Piccolino Ilkley,in England, when a friend, who was also the proprietor of a new venture, asked him to come to Thailand and join him in opening a restaurant in Phuket. An avid lover of the sunshine, Claudio agreed and within a short time relocated his family to Phuket and began the task of opening the Blue Mango Bar & Grill.

Having the opportunity to sit down with Claudio on a quiet Friday morning, it’s easy to tell how passionate he is about his job and working at the Blue Mango. Praising the restaurant for its location, Claudio’s vision is to create a dining venue that features delicious traditional and fusion cuisine which utilizes fresh, local ingredients. By using local ingredients, Claudio feels it’s easy to link Siam with the same fresh tastes of the Mediterranean.

Above all, Claudio prides the Blue Mango on its high standard of service. He believes that the biggest selling point of the restaurant is actually its staff.

Claudio’s staff are approachable and flexible. They go the extra mile to provide the upmost in quality service to a varied clientele.

The staff are dedicated to continue the success of the Blue Mango Restaurant & Bar. Claudio believes that the best thing about being the F&B Manager is the challenge of taking the restaurant to the next level. A challenge, while grinning broadly, he says he is ready to take. In his free time, Claudio enjoys spending time with his family.

A lover of the outdoors, he treasures the moments he spends with his children in the swimming pool or at the beach. He enjoys living in Phuket immensely as he finds it a quiet sort of paradise, and very affordable to live. Claudio loves the breathtaking sunsets he experiences daily from the Blue Mango.

Claudio lives by two personal philosophies; one regarding his work, and one regarding his personal life. “for work,” he says, “suit yourself to the market. And for life, be a good person. if you’re a good person, all the good you do will come back to you.”

The two-month dining

extravaganza was presented by a

superb selection of Samui’s finest

restaurants, together with an

elite group of international chefs

based on the island. The festival

also delivered value for money.

Each evening, a selection of 16

restaurants presented diners

with the very best they had to

offer. Special six-course menus

were served, consisting of a cold

starter, a hot starter, a fish course,

sorbet, a meat course and finally

a dessert. The menus were priced

from THB 1,800 - 4,900, with no

hidden charges. Gourmets were

pleased to know that each course

was offered with a matching wine.

Alternatively, guests were welcome

to order from the restaurant’s

drinks list.

Last year’s festival saw sales of

more than 2,500 special menus, a

number that was likely topped this

year. The festival was specifically

Thong Krut is at the very heart of the South, once sleepy part of the island, and again this quaint fishing village has recently began to stir. Mr. Om and Mr. Zakaria make their living taking tourists fishing, snorkelling and sightseeing. “Very nice, good,” is what they have to say about the 21 contemporary suites and penthouses that make-up The beach resort. “if have happy tourists, then i happy,” Om, says with a smile.

Mr. boy is the one local who has an opinion on the design of The beach samui resort. Originally from chiang Mai he had been visiting samui and friends and relatives in Thong krut for over 20 years before he opened the village’s first and only coffee shop, situated next door to The beach samui resort, four years ago. a musician, his creative nature is expressed in the small Organic coffee shop’s contemporary design and outstanding local coffee that attracts daily coffee drinkers from all over the island, and return visitors from far flung reaches of the world - a welcome respite for the resort’s development team. as well as exceptionally good coffee, the ambiance and serene atmosphere can encourage every day to become a lazy sunday.

Mr. boy is impressed and excited by the modern design of The beach samui resort. he especially admires the contrast of the clean cut, western, ultra modern façade complementing the rustic, Thai, old fashioned structures but with the local and sustainable touches.

is something about the place that captured him. “Working as an interpreter, I’m able to translate documents from anywhere in the world,” he explains: “i switch on my computer and i am in my office. What i love about living in thong Krut is the people and the scenery. the calmness and simple stress free living give me a tremendous sense of freedom and make me happier than i have ever been. the fresh air, the jungle, the smell of the sea and the local scene is like therapy.” Anton and Nadia are typical of the thousands of Westerners that become captivated by the serene and holistic way of living that the South of the Island offers.

One French and several Thai food restaurants are interspersed with old wooden bungalows and modern houses along the beach side of the street looking out at uncompromised views of Ang Thong Marine National Park, Koh Tan and Koh Madsum. Opposite, several roads take you deeper into village life where newly designed and constructed western style houses mingle with simple, wooden Thai houses amid coconut, banana and various fruit plantations.

David Moulton, a retired Hotelier, from Maine, uSA said he has seen little change In Thong Krut in the ten years he has lived in the village. The owner of The Green Ta’lay Restaurant, the Island’s number one restaurant, according to Trip Adviser, is the former owner of the land, house, restaurant and several bungalows where The Beach Samui resort now resides. Like many people David was enchanted by the peace, beauty and tranquillity of Thong Krut. Sustainability as a concept was popularised at the ‘Earth Summit’ in Rio in 1992 and has since been used and abused, becoming a buzz word often backed with little substance. It is this that we wanted to avoid when consolidating our past and present CSR activities.

The past 15 years of Absolute World Group’s CSR activities have provided a foundation on which to build, and moving into this 15th anniversary year and beyond we have developed three core values: Holiday Smarter, Holiday Fitter, which groups programmes assisting in the development of a healthier attitude to holidays for the benefits of our members and their guests; CommuNITY, which groups those for the benefit of the local Community; and Absolute Eco-Friendlier, which groups initiatives with a more environmentally conscious approach.

“CSR is something that has been a part of Absolute World Group since our beginning. We are aware of our social responsibility as a business and over the last 15 years have developed and implemented a number of CSR programmes within the local and wider community. Developing on our past initiatives, we felt it important to create a more strategic approach to our CSR programmes and new initiatives, and have created three core values under which all our CSR activities are grouped, implemented and evaluated,” said Bryan Lunt, CEO.

“To take things to the next level, we have brought in a dedicated CSR Co-ordinator, who helps to coordinate our ongoing CSR programmes, develop and implement new initiatives, and helps to ensure we continue to develop our CSR strategy for the next 15 years and beyond,” added Lunt.

In the 24/7 connected world in which we live, health is often sacrificed for convenience and perceived ‘needs’. We have also established an in-house ‘CommuNITY Committee’ to develop a staff volunteer service for local community and charity events, as well as developing a structured work experience programme throughout our business sectors to provide invaluable on-the-job training.

We continue to expand and integrate environmentally friendly operational strategies in our resorts, reducing energy consumption and waste. In the award-winning

With Absolute Eco-Friendlier as the core value, we are to launch a number of initiatives this year, the first of which was Mangrove Re-planting in honour of Her Majesty the queen of Thailand’s 80th birthday, and in cooperation with the Phuket Provincial Administration Office.

“This is a grass roots initiative and one in which Absolute World Group staff will be hands on. A team of staff will co-operate with the Phuket Provincial Administration Office under this Thai Government reforestation plan as part of the celebrations of Her Majesty the queen’s 80th birthday anniversary. Phuket’s coastal mangroves have been depleted significantly over the last few decades and this important natural resource needs a helping hand from humans,” commented Lunt.

Other initiatives for 2013 under the Absolute Eco-Friendlier banner include introducing a series of in-room organic products using refillable and recycled receptacles, developing the ‘Patong Green Club’ - a collection of like-minded hotels and resorts in Patong with

IN MAY, VOLuNTEERS OF THE ABSOLuTE WORLD GROuP STAFF IN PHuKET , THAILAND, TOOK PART IN THE NATIONWIDE MANGROVE FOREST PLANTING PROJECT “800 MILLION SAPLINGS ; 80TH BIRTHDAY ANNIVERSARY ” IN HONOuR OF HER MAJESTY THE quEEN’S 80TH BIRTHDAY.

Volunteer members of our staff gathered on Phuket’s East Coast to plant mangrove saplings on the beach. Although we have been involved in local community initiatives for many years, this was the first organised by our newly formed CommuNITY Committee. The Absolute World Group CommuNITY Committee aims to support the development

of corporate social responsibility initiatives within our local communities.

In honour of Her Majesty The queen, the aim of the mangrove planting project is to regenerate an ecologically damaged area through mangrove reforestation and conservation. Mangrove forests play an important role in acting as nursery areas for many species. They absorb more carbon dioxide per unit than ocean phytoplankton, a critical factor in global climate stability. Mangroves protect shorelines from damaging storm and hurricane winds, waves, and floods, and also help prevent erosion by stabilising sediments with their tangled root systems.

Rather than worry about following a fad diet, think about your health and your lifestyle instead. Choose foods that are good for you and eat them in the right amounts. The closer a food is to its natural state, the better it is for you. Fresh fruits and berries will satisfy a craving for sweets. Whole

green, orange, and yellow vegetables have lots of vitamins and minerals. Steam them or eat them raw to retain the nutritional value. Don’t add too much gravy, cheese, or sauces that are high in calories and fats.

At least half of your pasta, cereals or baked goods should be made from whole grains. Avoid sugary snacks

like cookies and pastries. Shop for lean meats, poultry, and fish. The omega-3 fatty acids in ocean fish are often missing in the diet, so serve seafood two or three times per week. Stick to water and 100-percent fruit and vegetable juices as your main beverages and limit sugary soft drinks. If you get tired of plain water, add a slice of lemon or lime to add a touch of flavour.

Keep healthy snacks like fruits, crunchy vegetables with dips, or nuts handy. If you absolutely feel the need for a treat, then purchase a small piece of high quality chocolate or your favourite treat and enjoy it, just don’t buy any to bring home.

The same tips are helpful for those who enjoy snacking while watching television at home. If you don’t want to give up nibbling while watching your shows, keep low-calorie foods close by, because it is very easy to eat too much when you are

entranced by your favourite drama, football game or cooking show. Eat crisp raw vegetables with your dip instead of greasy chips.

NUtritioUs foods WheN eAtiNG oUt

It can be difficult to maintain your health if you dine in restaurants frequently, especially fast food restaurant that serve huge greasy burgers and heaps of French fries. If you can’t hold your resolve to order just a salad, then compromise. Pick out an appetizer that you love, combine it with a salad or a cup of soup, and skip the larger entrees. You can also share a meal or take half of it home.

You could die for dessert? Order as small a size as possible, or maybe just one scoop of ice cream, rather than a larger, heavier dessert. Try a dish of mixed berries topped with nuts and a small bit of whipped

If you have a tighter budget, perhaps you can set aside some time on weekends to prepare meals and freeze them to be reheated later that week.

If you skip breakfast, you may find that you lose energy by midmorning. Rather than skipping breakfast completely, split it in half. Eat a small breakfast early, such as an egg, small serving of oatmeal, or a slice of whole grain bread. Have a small snack on hand such as raisins and 10 or 12 almonds to eat at midmorning. This split breakfast is a much better solution than reaching for coffee and candy bars to perk yourself up.

Our stomachs really aren’t that big. Without stretching, the stomach will hold about two cups of food, but because the stomach will stretch, it can hold considerably more food than we need at any given meal. It is not simply because of its geographical position as a tropical country that Thailand produces so many different kinds of fruits of good quality. The tropical climate is certainly favourable to the growth of vegetation.

But there are other factors that have contributed to the rich production - the fertile soil, the introduction of new species from foreign countries, the continued efforts to improve the quality of fruits by natural methods, and the comparative length of Thai territory, which extends right into the subtropical zone, making it

possible to grow fruits native to places of higher latitudes.

Here is a brief introduction to several kinds of fruits produced in Thailand that are worth special recommendation. Names in Thai with their romanized spellings are given after the English names to facilitate the identification of the fruits.

2. The namwa banana (kluai namwa), either eaten raw as fruit or cooked in many different ways and eaten as a snack; and

3. The egg banana (kluai khai), small in size with a thin skin, a specialty of Kamphaeng Phet Province.

cocoNUt (ma-phrao) Only the young ones are eaten as fruit. Scoop out the tender meat with a spoon and drink the refreshing milk with a tube.season: All year round.

cUstArd APPle (noi-na) Transplanted from Central America long ago. Easily broken with a squeeze. Eat the soft, white meat with the help of a spoon and leave out the seeds.season: June to August.

dUriAN (thu-rian) A very special fruit. Reputed to be the king of all fruits, its strong smell sometimes turns people away before they have a chance to taste it. However, if one can overcome one’s initial dislike of its foul smell and give it a try, one is likely to love its rich, unique flavour. Among the various species, the golden pillow (monthong) is most agreeable to the beginner. Other famous varieties include the long-stemmed (kanyao) and the gibbon (cha-ni).season: May to June.

GrAPe (a-ngun) First transplanted from Europe about a century ago, it has thrived for the past two decades after new varieties suitable to the tropical climate were developed. Both the green and the red varieties are available.season: December to April.

GUAVA (farang) The Thai name means a White or a Westerner. The fruit derived its name because it originated from tropical America. It has becomea popular fruit only after the new Vietnamese species was widely planted more than a decade ago. Eat the white, crisp flesh either alone or with the condiment provided free by the vendor. Don’t eat the core, which would cause constipation. season: All year round.

JAcK frUit (khanun) Somewhat like a durian but even bigger, it takes an expert to open it with a sharp knife. But people usually don’t buy a whole fruit. The vendor will open it and take theYellowish flesh out for retail. Its large seeds are edible after being boiled, and are nutritious too. season: Almost all year round.

loNGAN (lamyai) Brought into this country by Chinese immigrants hundreds of years ago, it was first planted in Bangkok and then in the North. It is in the North that the fruit has flourished and become one of Thailand’s largest export fruits. The most famous species is the pink longan produced in Chiang Mai. Its flesh is pinkish and thick and delightfully sweet. season: May to July.

lychee or litchi (linchi) Also transplanted from South China, but much later than the longan. Now, it is widely grown in Chiang Mai and other northern provinces and is just as good in quality as the fruit produced in China. Its slight tartness gives its sweet pulp a unique taste.season: April to May.

mANGo (ma-muang) Like the persimmon, the mango can be eaten both ripe and unripe. Some varieties are best eaten ripe and some others, unripe. The former includes namdokmai and okrong, and the latter, the khiao-sa-woei and nangseam. The Thais are fond of eating ripe mangoes with sticky rice and coconut cream It is sold everywhere when the fruit is in season. You should give it a try.season: March to May.

mANGosteeN (mangkhut) Cut open the thick dark red rind with a sharp knife. Be careful not to let the sap contained in the skin stain your clothes, which would leave marks hard to remove. The white juicy pulp is divided into 5 to 8 segments, of which 1 to 3 contain a seed. The sweet flesh has a delicate texture and will melt in your mouth.season: May to July.

PAPAyA (malako) Originating from tropical America, the plant has been grown in this country for so long and so extensively that the Thai people tend to consider it a native of their land. It is easy to grow and highly productive. That is why it is

among the cheapest. But don’t judge its quality by its price. The former is out of proportion to the latter. Slice it lengthwise and eat it with a spoon, or remove the skin and eat with a fork. A squeeze of lime juice will enhance its taste.season: All year round.

PiNeAPPle (saparot) Sweet, succulent and rich in vitamin C. Add a little salt to enrich the flavour. Largest plantations are in Prachuap Khiri Khan and Phuket in the South, Chon Buri and Rayong along the eastern coast, Prachinburi near Cambodia, and Lampang in the North. Most of the fruits are canned and exported. This serves to prove the excellent quality of the pineapples produced in this country. season: All year round.

Pomelo (som-o) The Siamese pomelo was well known in the native country of the ethnic Chinese in Thailand decades ago. In fact, that was about the only Thai fruit known to their relatives at home. Although that was partly because the pomelo is more durable than most other fruits and can endure a long sea voyage without perishing, it is an undeniable fact that the Thai pomelo has earned fame for its country for long. The fruit is easier eaten than peeled. But the good taste is certainly more than worth the effort. Anyway, the vendor can do the job for you free of charge.season: August to October.

rAmBUtAN (ngo) In bright red with yellowish or greenish hair, the rambutan is beautiful in appearance. Its white flesh is firm, sweet, and juicy. The most widely grown species are

the pink rambutan, the school rambutan and the che-mong.If you find that the meat does not come off the seed readily, you may use a knife to help.season: May to June.

rose APPle (chomphu) Another lovely fruit mostly in light green. Shaped like a bell, it can be eaten whole after the hollow end is cut off and a few tiny seeds inside removed. The fruit is crisp and succulent and only slightly sweet. Thais often eat it with a sugar-pepper condiments or nampla wan sauce to add to its taste.season: May to June.

tANGeriNe (som) Much improved in taste and texture in the past few decades. Formerly, only those grown in Bangmot district in the outskirts of Bangkok were famous. Now, orchards in Samut Sakhon, Rayong, Chanthaburi and Chiang Mai also produce tangerines of high quality.season: All year round.

WAtermeloN (taeng-mo) The large round fruit has a hard green rind, a watery red pulp and small brown seeds. It provides plenty of not-too-sweet water and is an ideal fruit to eat

when you are thirsty. Its quality is by no means inferior to any famous species produced in other countries. season: All year round.

There are many, many other fruits produced in this country. Indeed, it is no exaggeration to call Thailand the kingdom of a hundred fruits. Those not mentioned above may be less well known. Yet they each have their special flavour liked by some at least. As you can see from the above, May and June are the two months when most of the famous fruits are on sale in Thailand. You are fortunate if you happen to be in this country during this period. If not, do try to come before the end of summer in order to claim the bonus which is waiting for you to collect.

The most rewarding part of the job is when a member takes the time to thank you or praise you for your service. It’s also rewarding hearing back from members who have returned from their holiday and are letting you know how much they enjoyed themselves.

First thing in the morning I have a coffee while looking through my emails and prioritizing what needs to be done first. During the day, I speak to clients and our associates via emails, the telephone and Live Chat to make our members’ holiday dreams come true.

5. if you were offered a holiday at any one of our destinations, which destination would you choose and why?I think Phuket looks like a beautiful place. I would love to visit there for the beautiful sea and exciting nightlife.

I arrive at 7 o’clock in the morning, and get straight onto emails. I try my best to assist via Live Chat, phone and email to give clients the best understanding and use of their membership.

5:45 a.m.The staff bus drops me at Twin Sands. I’m sleepy, but also excited to start my day. I clock-in, apply some make-up and change into my uniform. Now, I’m ready for the day!

06:00 a.m.I start work at the front desk by counting the money in the front drawer and checking for the master key in the key box. After that, I read the FO Log Book, check emails and print the transportation schedule.

07:00 a.m.I check the night report in order to update guest’s details, and re-check guest’s departure details in order to eradicate any outstanding payments before their departure.

08:00 a.m.I check the file that contains details of the guest’s check-out and communicate the relevant information to the housekeeping team. After that, I usually go to have breakfast at the staff canteen.

09:00 a.m. - 11:00 a.m.I check the guests out and make a detailed file for each check-out. I’ll also post any extra charges to

a guest’s room if need be. I provide information to guests and offer any advice they may need.

12:00 p.m.Finally, it’s noon and time for me to have some lunch at the staff canteen!

13:00 p.m.I check the details of all guest’s files for check-in and communicate the information to the housekeeping team. I also check room availability for guest’s check-in.

14:00 p.m.I begin checking in guests and offering them anyassistance they need. Around 14:45, I begin to make the closing shift report. I send all revenue to accounting, and put all of the money, including credit card payment slips, in a safety box. usually, after that I go and change from my uniform to my street clothes as I’m nearly finished with my shift.

15:00 p.m.I clock-out and head for the bus, which takes me to the staff housing. Another productive, busy day has ended, and it’s time for me to relax.

On her day off, Khun Aon can be found reading,listening to music or chatting with friends on Facebook. She also enjoys spending time with her brothers, who live in the Samkong district of Phuket. Often, they cook and eat dinner together. A native of Nakhon Sri Thammarat, Khun Aon also enjoys exploring Phuket in her free time.

As silly as that may sound, new sights, smells and sounds will keep your mind wide awake until the evening, when you can crash in your bed and wake up next morning as if you’re at home.

It’s been proven that your internal clock reacts to your eating habits. Eat late and you’ll stay up for longer. use this to your advantage and change your breakfast, lunch and dinner times to fit into the new time zone before you arrive there. Some airlines offer meals at any time during the flight, so take advantage of this if you can!

I just wanted to thank you for arranging our stay at Cabarita Beach - it was a most enjoyable vacation. Not having heard of the area, I didn’t know what to expect. We have previously stayed in Surfers and Broad beach so I was wondering whether a rental vehicle was an unnecessary expense, but in reality, a visitor to Cabarita Beach needs to have a car. Coming from NZ, we collected a rental car at the airport which made getting to Tamarind Sands an easy exercise.

The culture surrounding the resort allowed Yvonne and I to easily slip into the holiday mode that we enjoy most when we are away. A leisurely wake-up, followed by an hour-long walk on the beach,

a swim in the pool and then breakfast was a great start to each day. The two communal breakfasts were an excellent way to meet and greet other guests and hear their stories.

We also swam each afternoon, when we would usually find other guests to swap more stories with. We found guests and staff were extremely friendly and always keen for a “chat”. Fellow beach walkers were also surprisingly friendly.

Robina was our shopping centre of choice and we visited the mall on a few occasions. A trip to O’Reillys in the Green Mountains was a long day trip for us. When I was a teenager, I spent a holiday working in a shearing gang and a car that I was a passenger in went over the side of a windy country road for a 200 foot drop. We got out of the car near the top, but since then, I have had a fear of windy narrow roads so the drive up was a bit of a challenge for me. A good day out though.

Before leaving home, I found the calendar for the Twin Towns Service Club and found that, local singer/songwriter, Pete Murray, was playing. Our first day we drove to Tweed Heads and bought tickets. It was a terrific show in a great venue where

we also partook of an excellent meal. We enjoyed two evening meals at the local Cabarita Sports Club as well.

Other highlights were the mini golf, a day trip to Byron Bay, and a day at Movie World, courtesy of a departing guest who gave us free passes. All, in all, we thoroughly enjoyed our stay and would definitely recommend Tamarind Sands.
