How to Smoke Pork Roast on a Charcoal Grill
Light charcoal using a chimney
Place pork roast on grate away from coals (indirect cooking)
Coat pork with a generous rub all over the meat before cooking
Soak wood chips for at least 30 minutes –use oak, hickory, or applewood
Once charcoal is ready, place soaked wood chips on top of charcoal
Keep grill temperature at 225 -250 degrees throughout smoking process.
Each hour add about 10 charcoal briquettes to keep temperature steady
Smoke pork for about 1.5 hours per pound or until pork has a 170 degree internal
meat temperature.
Remove wrapping and slice (and taste).For pulled pork, use a Boston Butt.
