We’ve had loads of fun
putting together our Easter
issue. This time of year is
great for bringing families
together for walks, meals and
Easter eggs. And, as we can’t
guarantee it won’t rain, we’ve
weatherproofed our offering
with ways to bring the fun
indoors with brilliant baking

If you’ve got little ones, get
them working hard to earn
their chocolate treats with a
good egg hunt – like ours on page 28. I’m a fi rm believer in making
the eggs really tricky to fi nd, which means my nephews can get fi t and
play detectives at the same time. I make a checklist of clues and keep
sending the boys back to search while my sister and I put our feet up!

salad in a large bowl. Add
10 halved cherry tomatoes,
50g croutons and 200g
chopped cooked chicken,

There’s something really nice about
looking out to a feathered flock of
happy hens roaming around our fields,
says Robin Thompson, the Managing
Director of Bridge House Farm Ltd in
Long Buckby, Northamptonshire.
The family-run farm supplies free-range
eggs to Asda through Noble Foods. ‘We
have 30,000 free-range laying hens who
go in and out of the sheds via pop-holes,
and they’re free to wander and forage
on the surrounding grass and fields
during daylight hours,’ Robin says.

Robin ensures that his free-range hens
are healthy, happy and fed a wholesome
diet mainly consisting of grains. The result
is delicious-tasting, high quality Asda
Free Range Eggs with excellent shell

birds. ‘Once eggs are laid, we collect
them from a belt that runs underneath
and outside the building,’ Robin says.
Each week the farm supplies around
170,000 free-range eggs to Noble Foods.
The eggs are then sent to a packing
centre, destined for Asda stores.

Eggs are very versatile. ‘I like to eat mine
poached on toasted breakfast muffins,’
says Robin. A simple way to test that your
egg is fresh is to put it in water: generally,
if it sinks then it’s fresh – if it floats then it’s
not. And for maximum freshness, store
eggs in their box, in the fridge.

Curly kale makes a nice change to cabbage. Just trim away the tough outer stalks, wash the leaves, then chop or shred them. Put in a pan with 1cm water and simmer for 5 minutes until wilted. Drain, then mix in a knob of butter and some black pepper.

luxury with our rich chocolate and sweet caramel recipes
Chocolate banoffee pieA lovely chocolate cookie crust holds this wickedly indulgent dessert
250g Oreo cookies
175g unsalted butter
150g caster sugar
300ml double cream
4 bananas, sliced
25g dark chocolate,
grated or shaved
❶ Grease a 24cm loose-
based cake tin and line the
base with baking paper. Crush
the biscuits in a processor to
make crumbs or put them in
a freezer bag and crush with
a rolling pin. Melt 75g butter
and mix with the crumbs. Put
into the tin, covering the sides
and base evenly and pressing
firmly with the back of a spoon.
Chill for at least 30 minutes.
❷ Heat the sugar with 100ml
cold water, stirring gently, until
the sugar has completely
dissolved. Stop stirring and
simmer until the mixture is

Tip into the tin and press down
very firmly with a large spoon.
❷ Bake for 35 minutes until
pale golden brown. Leave to
cool in the tin.
❸ Put the unsalted butter and
brown sugar in a pan and heat
gently until melted. Add the
condensed milk and simmer
gently for 8-10 minutes until the
mixture thickens slightly. As it
cooks, stir continuously with a
wooden spoon, making sure
you take the spoon into the
edges of the pan to stop it
catching and burning. Pour
over the biscuit base and
leave until cold.
❹ Put the chocolate in a large
bowl. Put the bowl over a pan
of hot water, making sure the
base of the bowl doesn’t touch
the water. Leave until melted,
stirring occasionally.
❺ As soon as the chocolate
has melted, pour onto the
caramel and leave until set.
Cut into squares to serve.

Chocolate caramel mousse
If you prefer a darker chocolate mousse, use 250g of dark chocolate and leave out the milk chocolate

125g Asda Dark Chocolate
(50% cocoa solids), in squares

4tbsp black coffee
2 level tbsp caster sugar

❶ Add the caramel to a pan

a bowl with a wooden spoon.
❷ Add the flour and stir. Once
it’s too stiff to use the spoon,
gather the mixture together
with your hands, handling it
as little as possible to stop
it becoming greasy.
❸ Shape into 32 small balls
and put on the baking trays,
leaving a gap between each.
❹ Dip the prongs of a fork in
cold water and press onto the
biscuits to flatten them slightly
and mark the tops.
❺ Bake for 15-17 minutes.
Leave on the trays to cool for
5 minutes, then transfer to a
wire rack to finish cooling.
❻ For the buttercream, put
the rest of the sugar in a pan
with 3tbsp water and heat
slowly until dissolved. Simmer,
without stirring, until it is a rich
caramel colour, watching
it carefully all the time.
Immediately remove from
the heat and stir in 25g of
the unsalted butter and the
milk. Return to a gentle heat
and stir until evenly mixed.
Leave until cold.
❼ Beat the remaining butter
until soft, then gradually stir in
the icing sugar. Add the cold
caramel mixture and beat
until light and creamy.
❽ Just before serving,
sandwich the biscuits together
with the caramel buttercream.

12-hole bun tray with cupcake
cases (not fairy cake or muffin
cases). sift the flour and
baking powder into a bowl.
add 125g of the butter,
the caster sugar and eggs.
❷ Beat with a wooden spoon
until mixed. scrape the sides
of the bowl down with a
spatula, then beat the cake
mixture for another minute.
❸ divide the mixture between
the paper cases. Bake for
18-20 minutes or until the tops
spring back when lightly
pressed. cool on a wire rack.
❹ make the buttercream by
beating the remaining 100g
butter in a bowl until soft. stir in
the icing sugar, a spoonful at
a time. add the vanilla extract
and milk, then beat until
creamy. set aside some
buttercream for the ears and
spread the rest on the cakes.
❺ make bunny ears and
whiskers (see right).
❻ position the ears on the
cupcakes, then stick on jelly
beans for eyes and smarties
for noses. cut the mini
marsmallows in half to make
the mouth, place on the
cakes, then add the whiskers.

sauce mix in a small nonstick

milk. Bring to the boil, stirring
all the time. remove from
the heat and immediately
stir in the butter. Keep warm.

a dry frying pan until it starts

❸ split and toast the muffins.

❹ To poach the eggs, pour
boiling water into a large frying
pan to a depth of 3cm, add
the vinegar and a pinch of
salt, and heat until simmering.
Break an egg into a cup.
❺ With a wooden spoon
handle, swirl the water to make
a ‘whirlpool’ and slide the
egg into it. repeat with more
eggs. cook for 3-4 minutes
or until the whites are set and
the yolks are still soft. if it’s
easier, you could cook the
eggs in two batches by
cooking them three at a time.
❻ carefully lift out with a fish
slice and put on the muffins.
serve with the sauce.
TIP chefs often poach eggs in
advance, then store them in
cold water in the fridge for up
to 24 hours. To serve, slip into
a pan of simmering water and

� Grease a large ovenproof
dish with a little butter. Trim the
tough ends off the asparagus.
Add the tips to a pan of
boiling water and simmer for
2 minutes. Drain, then cut in
half. Leave on kitchen paper
to absorb any moisture.
� Melt the butter in a pan and
add the leek. Stir to coat, then
cover and cook over a very
low heat for 10 minutes until
soft. Add the spinach and stir
until it wilts. Remove from the
heat and add the asparagus.
� Cut the bread into 2cm
cubes and put two-thirds of it
in the base of the dish. Put the
vegetables on top, then top
with the rest of the bread.
� Lightly beat the eggs with
the milk and mustard. Season
with pepper. Pour over the
bread, then press the bread
lightly into the liquid. Refrigerate
for at least 30 minutes (or
overnight) to let the bread soak.
� To serve, preheat the oven
to 180C/160C Fan/Gas 4.
Sprinkle the Cheddar over the
strata. Bake for 40-50 minutes
until the top is golden and the
inside is just set.

shape the mash into six cakes.
� Heat a little of the oil in
a frying pan and cook the
cakes in batches for 2-3
minutes on each side until
golden, adding more oil to
the pan if needed. Keep
the cooked cakes warm.
� Poach the remaining eggs
as for the Eggs Benedict
recipe (see page 47). Serve
the potato cakes topped with
the smoked salmon and
eggs, seasoned with pepper
and garnished with chives.
TIP You could make the
potato cakes the day before
(but not cook them) and store
in the fridge overnight. Next
day, pat off any moisture with
kitchen paper and fry as from
step 3 – they’ll need an extra
minute to cook from cold.

Plaice with herby mushroom stuffingSkinning the fillets is simple but not essential. If you want to take the easy option, buy the plaice from a fish counter in store and ask the fishmonger to skin it for you
1tbsp olive oil, plus extra for
greasing
2 shallots, finely chopped
15g butter
250g chestnut mushrooms,
finely chopped
1tbsp finely chopped fresh
thyme (leaves only)
1tbsp chopped fresh curly
parsley
3 x 250g packs plaice fillets
or 6 x 125-150g plaice fillets
from the fish counter
Roasted new potatoes, salad
and lemon wedges, to serve
❶ preheat the oven to
180c/160c/gas 4. grease a
shallow ovenproof dish with
a little oil.
❷ Fry the shallots in the oil
and butter until soft. Add the
mushrooms and cook until
they shrink and the juices
start to run out. continue to
cook, stirring often, until all
the juices have evaporated.
❸ Tip into a bowl. Add the
herbs and season well. cool.
❹ if you want to skin the fish,
place a fillet on a board, skin
side down, with the tail end
towards you. Hold the tail end
with one hand and with a
fillet knife in the other hand (or
sharp knife if you don’t have
one). insert the knife at a
slight angle and carefully cut
between the skin and flesh.
❺ divide the stuffing into 6
portions. put a portion on the
skinned (or skin side) of each
fillet and fold over twice. put
in the dish and brush with oil.
❻ cook in the oven for 18-20
minutes, or until the fish flakes
easily. serve with the potatoes,
salad and lemon wedges.

❶ mix together the treacle,
lemon juice and mustard and
put in a shallow dish, large
enough to hold the salmon.
put the salmon in the dish,
skin-side up, making sure all
the flesh is coated, and leave
in the fridge for 1-2 hours.
❷ preheat the oven to
180c/160c/gas 4. line a large
roasting tin with foil. remove
the fish from the marinade and
put in the tin, skin-side down.
❸ lightly crush the fennel
seeds in a pestle and mortar
or put them in a bowl and
crush with the end of a rolling
pin. sprinkle over the fish and
season with salt and pepper.
❹ cook in the oven for
25-30 minutes or until the
flesh flakes easily.
❺ sprinkle the spring onions
on top before serving.

Trim the fronds (the feather-like
leaves) from the fennel and
reserve. Trim off the roots and
stems and any damaged
outer layers (you will need
about 350g trimmed weight).
❷ Thinly slice the fennel and
put in the dish with the shallots,
garlic, herbs and wine. cut
the butter into small pieces
and scatter on top. season.
❸ Take a sheet of baking
paper and run it under a cold
tap. shake off any excess
water, scrunch it up and lay
over the fennel, so it covers it
but stays inside the dish.
❹ cook in the oven for 20
minutes, moving the fennel
about in the dish halfway
through. remove the paper,
stir again, and return to the
oven, uncovered, for 5-10
minutes or until tender.
❺ reduce the oven to 190c/
170c Fan/gas 5. put the trout
on top and brush lightly with
oil. Add the baby plum
tomatoes. cook for another
12-15 minutes or until the
trout flakes easily.
❻ put the pine nuts in a
dry frying pan and toss over
a medium heat until they
start to turn golden. chop
the reserved fronds.
❼ scatter the toasted pine
nuts, chopped fennel fronds
and lemon zest over the trout
fillets. serve the dish with the
lemon wedges.

Slow-roasted leg of lamb with redcurrant gravy The lamb doesn’t need any attention once it's in the oven, so you can enjoy time with the family as it cooks. Roast lamb is a classic British dish that everyone loves, especially for Easter Sunday
❶ preheat the oven to
160c/ 140c Fan/gas 3. mix
the garlic and rosemary,
mustard and oregano to make
a paste. season with pepper.
❷ Using the point of a sharp
knife, make small incisions all
over the lamb. push the paste
into the incisions. put in a
roasting tin and pour the wine
round it. cover the tin with foil,
leaving plenty of room inside
for the air to circulate. seal the
foil round the edges of the tin.
❸ cook in the oven for 3 hours
30 minutes. remove the foil
and cook, uncovered, for
another 20 minutes.
❹ Transfer the lamb to a
serving platter and cover
loosely with foil. leave to rest
for 15 minutes before carving.
❺ meanwhile, make the
gravy. skim the fat from the
roasting juices, then pour into
a measuring jug. make up to
300ml if necessary and
transfer to a pan. dissolve the
stock cube in 300ml hot water
and add to the pan with the
redcurrant jelly. stir until the
jelly melts. mix the cornflour
with 3tbsp cold water and
stir into the pan. Heat until
boiling, stirring all the time,
and simmer for 2 minutes.

boiling water, return to the boil
and simmer fast for 2 minutes

dish, about 25cm by 18cm,
4cm deep, with a little butter.
♦ peel 1kg Maris piper or
King edward potatoes
and cut into slices no thicker
than a pound coin. Thinly
slice 1 medium onion.
♦ layer the potatoes and
onion in the dish, dotting the
layers with butter. season.
♦ dissolve 1 reduced-salt beef stock cube in 750ml hot
water and pour into the dish.
♦ Bake for 1 hour if you’re
cooking alongside the pork
(overleaf); 1 hour 20 minutes
if you’re cooking them with
the lamb. The potatoes are
cooked when brown on top
and crisp at the edges, and
the slices underneath are soft.

halved if necessary, in a pan

Pork with caraway crustThe caraway crust in this recipe gives a very subtle flavour to the meat – any leftovers would be good added to egg fried rice. We’ve used a pork loin joint, which is a great choice if you fancy a change from lamb

1tsp lemon juice

❶ preheat the oven to 220C/

using a pestle and mortar. or
put them in a small bowl and

spread thickly all over the
meat of the pork but not the
skin. brush the skin with the oil.
❷ put the meat on the rack
in the tin, skin side up. pour
500ml water into the tin. roast
in the oven for 30 minutes.
❸ reduce the oven to 190C/
170C Fan/gas 5 and cook for
another hour. leave to rest for
15 minutes before carving.
❹ Heat the gravy and serve
with the meat and stuffing.

75g apricot jam
50g granulated sugar
100ml freshly squeezed
orange juice
350g pack frozen
raspberries, thawed
❶ preheat the oven to 180c/
160c Fan/gas 4. make a cut
all the way round the peaches
or nectarines, following the
natural groove and cutting
right through to the stone. Twist
the two halves in opposite
directions to separate them.
ease out the stones using a
small, sharp knife.
❷ put the fruit cut-side up in
an ovenproof dish. put the
jam, sugar, orange juice and
400ml water in a small pan
and stir until the sugar has
dissolved and the jam has
melted. pour over the fruit
and cook in the oven for
20-25 minutes, basting the
fruit with the juices often.
❸ To make the sauce,
carefully measure 300ml
of the fruit cooking juices
into a jug and then put in
a blender or processor with
the raspberries. Blitz until
puréed (or use a hand-held
blender to do this). push the
mixture through a sieve to
remove the seeds.
❹ leave the peaches to cool
in the rest of the juices. When
cold, gently lift them out and
peel off the skin. put some
raspberry sauce on six plates,
top with two peach halves
and pour over more sauce.

base-line two 20cm cake tins
with baking paper. line a
baking tray with baking paper.
❷ Beat together the flour,
baking powder, 225g of the
softened butter, caster sugar,
eggs and lemon zest until
creamy and evenly mixed.
❸ divide between the tins,
level the tops and bake for
about 25 minutes or until the
tops spring back when lightly
pressed. cool on a wire rack.
❹ gradually beat the icing
sugar into the remaining 75g
butter. add the vanilla and
milk, and beat until light and
creamy. set aside 1tbsp of this
icing. use the rest to sandwich
the cakes with the lemon
curd. dust with icing sugar.
❺ for the daffodils, make a
biscuit dough by creaming
the butter and sugar together.
mix in the flour. chill for 30
minutes, wrapped in clingfilm.
❻ roll out between two sheets
of clingfilm until 1cm thick. cut
into stars using a cutter and
put on the baking tray. trim the
lolly sticks to different lengths
and stick into the biscuits,
about one-third of the way
in. Bake for 12 minutes. cool.
❼ Brush the lolly sticks with
the green food colouring
and leave to dry. or simply
leave them white.
❽ roll out the yellow coloured
icing and cut out stars. stick
on top of the biscuits using
the reserved buttercream.
❾ press jellied sweets into the
centre of each daffodil and
score lines on the petals with
the back of a knife. stick the
daffodils into the cake.

1 Heat the oil in a frying pan and fry the onion until softened.
2 Add the garlic and the spices and fry gently for 1 minute.
3 Cut the cooked lamb into cubes, or tear into bite sized shredded pieces and add to the pan.
4 Stir in the puree and stock, bring to the boil, then reduce heat and simmer, covered, for 25 minutes. Ten minutes before the end of cooking time, add the apricots.
5 Garnish with coriander leaves and serve with couscous and yoghurt.

Knead for 10 minutes. Put the dough in a
greased bowl, cover with greased clingfi lm
and leave in a warm place until doubled in
size. Turn out onto a fl oured surface and push
out the air. Cut into 20 pieces and shape into
rolls. Place on the tray in a circular pattern
(they’ll stick together while baking). Cover with
greased clingfi lm and leave to double in size.
While the buns are cooking, heat the sugar
and milk for the glaze in a small pan until
dissolved and then simmer for 2-3 minutes
until sticky. To make them shiny, brush the
glaze on the top of the buns as soon as they
come out of the oven. Eat warm or leave
to cool on a wire rack. You can split and
toast them when they’re cold, if you prefer.
Grease a baking tray. Sift together the
fl our, mixed spice, cinnamon and a pinch of
salt. Stir in the yeast, sugar and mixed dried
fruit. Heat the milk and butter together in a
pan until the butter melts and the mixture is
lukewarm. Test with your fi nger – if it’s hot it will
destroy the yeast. Add the egg and the milk
mixture to the fl our and mix to form a dough.
Preheat the oven to 220C/200C Fan/Gas 7.
For the crosses, mix the fl our with the oil, icing
sugar and 4tbsp water to make a paste. Put
it in a piping bag or use a freezer bag with
the corner snipped off. Pipe paste crosses
on the top of the buns. Bake for 15 minutes
or until brown – if you tap the base of the bun
round, it will sound hollow when cooked.

❶ preheat the oven to 200C/
180C Fan/gas 6. put the
unpeeled potatoes in a large
pan, cover with cold water
and bring to the boil. Cover
and simmer for 15 minutes.
drain and set aside to cool.
❷ Heat 1tbsp of the oil in
a large pan and cook the
onion, celery and carrots,
stirring often, for 5 minutes. add
the mushrooms and cook for
5 minutes, stirring often.
❸ add the Quorn mince,
lentils, ketchup, brown sauce
and 200ml water. Cover
and simmer for 10 minutes.
transfer to an ovenproof dish.
❹ While the Quorn is cooking,
peel the potatoes and grate
them coarsely. put in a bowl
and toss with the remaining oil.
❺ Cover the filling with the
potato. bake for 30-35 minutes.

❹ spread the pizza topper

600g sweet potato (peeled
weight), cut into small chunks
15g butter
Fresh thyme leaves,

Cabbage, lightly boiled
or steamed, to serve
❶ Cut the pork into eight
slices (trim any sinew if
necessary) and put in a freezer
bag. add the honey, soy
sauce, 2tbsp of the orange
juice (reserve the rest for later),
Worcestershire sauce and
paprika to the bag and shake
to coat the meat. refrigerate
for 20 minutes to 4 hours.
❷ boil the sweet potato until
tender. drain and mash with
the orange zest and butter.
❸ While the sweet potato is
cooking, drain the marinade
into a small pan and add the
reserved orange juice and
4tbsp water. grill or griddle
the pork for 4 minutes each
side until cooked through.
❹ Heat the marinade, then
simmer fast for 5 minutes.
❺ garnish the pork with thyme
leaves (if using) and serve with
the marinade, sweet potato
and cabbage.
