FROM THE HEART

My seven-year-old daughter,

Evie (right), was inspired to

make and decorate the

cute little heart-shaped

biscuits that appeared

on the February cover

of your magazine.

She wanted to make

them for her daddy

and older brother,

Benjamin. Evie was

really pleased with

the biscuits. They look

and taste lovely.

LOVE YOUR LEFTOVERS

I loved your recipes for using

leftovers in the January issue.

We waste very little food in

our house and I get great

pleasure in thinking of new

ways to use it up. It’s a pity

so much food is wasted in

our country – hopefully your

good ideas will get other

readers to use up leftovers.

We’ve had loads of fun

putting together our Easter

issue. This time of year is

great for bringing families

together for walks, meals and

Easter eggs. And, as we can’t

guarantee it won’t rain, we’ve

weatherproofed our offering

with ways to bring the fun

indoors with brilliant baking

ideas, toys and crafts for kids.

If you’ve got little ones, get

them working hard to earn

their chocolate treats with a

good egg hunt – like ours on page 28. I’m a fi rm believer in making

the eggs really tricky to fi nd, which means my nephews can get fi t and

play detectives at the same time. I make a checklist of clues and keep

sending the boys back to search while my sister and I put our feet up!

This issue is packed with over 40 recipes to provide inspiration

this Easter. We’ve paid attention to cost, ease and time to ensure all

our recipes are simple, delicious and won’t break the bank.

Have an Eggcellent Easter!

There’s something really nice about

looking out to a feathered flock of

happy hens roaming around our fields,

says Robin Thompson, the Managing

Director of Bridge House Farm Ltd in

Long Buckby, Northamptonshire.

The family-run farm supplies free-range

eggs to Asda through Noble Foods. ‘We

have 30,000 free-range laying hens who

go in and out of the sheds via pop-holes,

and they’re free to wander and forage

on the surrounding grass and fields

during daylight hours,’ Robin says.

producing eggs, they also

creatures of habit, they

The eggs are then sent to a packing

Eggs are very versatile. ‘I like to eat mine

says Robin. A simple way to test that your

egg is fresh is to put it in water: generally,

if it sinks then it’s fresh – if it floats then it’s

not. And for maximum freshness, store

eggs in their box, in the fridge.

CHIVESHere are some ideas for this versatile herb. The easiest way to prepare chives is to snip them with scissors. ♦ Use whole or chopped in salads and sandwiches instead of onions for a more subtle fl avour.♦ Sprinkle them in omelettes and scrambled eggs. ♦ Stir chopped chives into soft cheese for an easy dip. ♦ Add chives to cheese sauce or mashed potatoes for a mild onion taste.

Chocolate banoffee pieA lovely chocolate cookie crust holds this wickedly indulgent dessert

firmly with the back of a spoon.

Chill for at least 30 minutes.

❷ Heat the sugar with 100ml

cold water, stirring gently, until

the sugar has completely

dissolved. Stop stirring and

simmer until the mixture is

a caramel colour. You can

shake the pan gently as it

caramelises but don’t stir

or it will crystalise.

cream. Stir until evenly mixed,

❶ Preheat the oven to 160C/

140C Fan/Gas 3. Line the base

and sides of a 20cm x 30cm

shallow cake tin or roasting tin

with baking paper. Mix the

caster sugar with the flour and

rub in the salted butter until the

mixture looks like breadcrumbs.

Tip into the tin and press down

very firmly with a large spoon.

❷ Bake for 35 minutes until

pale golden brown. Leave to

cool in the tin.

❸ Put the unsalted butter and

brown sugar in a pan and heat

gently until melted. Add the

condensed milk and simmer

gently for 8-10 minutes until the

mixture thickens slightly. As it

cooks, stir continuously with a

wooden spoon, making sure

you take the spoon into the

edges of the pan to stop it

catching and burning. Pour

over the biscuit base and

leave until cold.

❹ Put the chocolate in a large

bowl. Put the bowl over a pan

of hot water, making sure the

base of the bowl doesn’t touch

the water. Leave until melted,

stirring occasionally.

❺ As soon as the chocolate

has melted, pour onto the

caramel and leave until set.

Cut into squares to serve.

250g self-raising flour

40g cocoa powder

225g unsalted butter,

softened, plus 75g for the filling

Few drops of vanilla extract

175g caster sugar

2tbsp whole milk

100g icing sugar

❶ Preheat the oven to

180C/160C Fan/Gas 4. Line

two baking trays with baking

paper. Sift the flour and cocoa

together. Beat the butter,

vanilla and 125g of the sugar in

a bowl with a wooden spoon.

❷ Add the flour and stir. Once

it’s too stiff to use the spoon,

gather the mixture together

with your hands, handling it

as little as possible to stop

it becoming greasy.

❸ Shape into 32 small balls

and put on the baking trays,

leaving a gap between each.

❹ Dip the prongs of a fork in

cold water and press onto the

biscuits to flatten them slightly

and mark the tops.

❺ Bake for 15-17 minutes.

Leave on the trays to cool for

5 minutes, then transfer to a

wire rack to finish cooling.

❻ For the buttercream, put

the rest of the sugar in a pan

with 3tbsp water and heat

slowly until dissolved. Simmer,

without stirring, until it is a rich

caramel colour, watching

it carefully all the time.

Immediately remove from

the heat and stir in 25g of

the unsalted butter and the

milk. Return to a gentle heat

and stir until evenly mixed.

Leave until cold.

❼ Beat the remaining butter

until soft, then gradually stir in

the icing sugar. Add the cold

caramel mixture and beat

until light and creamy.

❽ Just before serving,

sandwich the biscuits together

with the caramel buttercream.

While the buns are cooking, heat the sugar

and milk for the glaze in a small pan until

dissolved and then simmer for 2-3 minutes

until sticky. To make them shiny, brush the

glaze on the top of the buns as soon as they

to cool on a wire rack. You can split and

toast them when they’re cold, if you prefer.

Grease a baking tray. Sift together the

salt. Stir in the yeast, sugar and mixed dried

fruit. Heat the milk and butter together in a

destroy the yeast. Add the egg and the milk

mixture to the fl our and mix to form a dough.

Preheat the oven to 220C/200C Fan/Gas 7.

● To knead the dough, fold it in half on a fl oured surface, then push it away from you with the heel of your hand. Fold it over, turn and repeat for 10 minutes. This develops the gluten (the protein in the fl our), which makes the buns nice and light.

● To shape the rolls, put a piece of dough on a fl oured surface and lightly fl our the palm of your hand. Using a circular motion, gently roll the dough round and round until you have a ball shape with a smooth top. Put on the baking tray, smooth side up.

HAIR BEAUTY

HOW CAN I FIX MY

SPLIT ENDS?

Over-brushing and regular

use of heat styling tools can

make hair break. Strengthen

your hair with a moisturising

shampoo and weekly

conditioning mask. Try

Herbal Essences Beautiful

Ends Split End Protection

Shampoo, £2* (400ml).

You can also improve the

look of split ends by applying a

repair conditioner and serum.

A great one to try is Tresemmé

Split Remedy Split Mend

Intense Recovery Masque,

£5 (300ml) or Pantene Pro-V

Split End Serum, £2 (75ml).

MY SCALP IS FLAKY.

WHAT CAN I DO?

Gently massage your scalp

with a moisturising shampoo or

hair oil to increase blood fl ow,

loosen dead skin and release

natural oils. Try Argan Gold

Hair Vitality Oil, £4 (50ml),

which will also make your hair

feel silky. If fl akes persist, use

an anti-dandruff shampoo

such as T/Gel Anti-

Dandruff Shampoo,

£4.50 (125ml).

HELP! MY HAIR

IS REALLY DRY

Dry air and windy

weather combined

with colour treatments

and excessive use of

heat-styling tools can

zap hair of moisture. Use

a gentle shampoo that

contains nourishing

SHAMPOO

Many mainstream brands

have the same ingredients

as premium shampoos

– and according to many

hairdressers do the job just

as well as expensive ones.

CONDITIONER

These are usually boosted

with special conditioning

ingredients to maintain

healthy looking locks.

DEEP CONDITIONER

It’s worth investing in a

deep conditioner, which

can be used weekly and

has specifi c ingredients to

repair damaged tresses

and maintain healthy hair.

HEAT-STYLING TOOLS

Pick ceramic-coated

tools, which distribute heat

faster and more evenly.

Ionic hairdryers are also

worth the extra money,

as they dry hair faster

and reduce moisture loss.

Plenty of mainstream shampoos use the same ingredients as premium ones – and do the job just as well

SHOULD I SPLASH OUT?Some hair products are worth spending a little extra on, but you can still look great for less.

ingredients to smooth the hair

shaft. We love Dove Damage

Therapy Intensive Repair

Shampoo, £2.32 (250ml).

Hair masks are also good

for restoring moisture. Apply

L’Oréal Elvive Full Restore

5 Replenishing Masque,

£4.78 (300ml) twice a week

– leave on for three minutes.

And before you use any

heat-styling tools, mist your

hair with Asda Essential Care

Heat Defence Conditioning

Spray, £2 (200ml). It will help

prevent any further damage.

WHAT WILL STOP

MY HAIR FRIZZING?

Damp air can make hair frizzy.

Use a moisturising shampoo

and conditioner to create

a barrier. We like Andrew

Barton The Frizz Tamer

Salon Smooth Shampoo, £3

(400ml), and Conditioner,

£3 (250ml). Also apply a drop

of serum through damp hair

before styling to seal hair

cuticles. One of our favourites

is John Frieda Frizz-Ease

Original Serum, £4 (50ml).

HOW CAN I REVIVE

MY HAIR COLOUR?

Coloured hair loses its lustre

when it’s washed, so choose

shampoos and conditioners

that have been designed for

colour-treated hair. And, once

a week, use a nourishing

treatment to restore vibrancy

and revive fading colour. Look

out for Clairol Nice’n Easy

ColourSeal Gloss, £1 (30ml).

Styling ideasDaily blowdrying can

damage hair, so give your

locks a rest with these

alternative styling tips.

● ADD VOLUME at the crown

by gently backcombing roots

to give your hair some lift.

● LEAVE-IN CONDITIONER

Apply the conditioner and

leave in, then let hair dry

naturally for a carefree style.

● HAIR BUN Secure your hair

into a low ponytail with a

hairband, swirl into a bun and

pin into place with hairgrips.

● WEAR A HEADBAND to add

instant style to a messy up-do.

Hair necessitiesKeep your bathroom

cabinet stocked up with

these must-have products

to keep hair protected.

● CLARIFYING SHAMPOO

Use once a month to prevent

product build-up and make

your hair shiny again.

● CONDITIONER enriched

with proteins to replace

moisture lost by shampooing.

● INTENSIVE CONDITIONER

for repairing damaged hair.

● HEAT PROTECTOR SPRAY

is crucial for protecting hair

from heat styling tools.

● ANTI-FRIZZ SERUM to

tame frizz and inject shine.

Harsh weather and the drying effects of central heating

can damage your hair. Just follow our advice for common

hair problems and you’ll have shiny locks this spring.
