Veronica Todd 000683511 Concept Statement: I envision my design for a culinary school and restaurant as a traditional fine dining restaurant. The experience will be exquisite and memorable. Design Solution: Cherry oak French doors will introduce the guests to the exquisite dining experience that’s sure to follow. Niche lighting will set the mood while displaying a food menu and deserts available for the day. A hostess, whose podium will be stationed to the left of the entranceway, will promptly greet guests. The waiting area is strategically located behind the guest podium with over sized ottoman seating. Hardwood floors and cherry oak crown molding and stretch throughout the entrance and the dining area. In the dining area there are booths available to accommodate seating for two to four people and table seating for two. The ceilings are 10’ high, except in the far right corridor where they are 12’ high. The dining and waiting area will be draped with a cloud or canopy ceiling featuring pendent lights, ambient lights, track lights near texture walls (for a wall washing affect with daylight response control). The Kitchen is centered in the middle of the restaurant. There are down lights, fluorescent linear pendent lights, sky light panels and task lighting in the kitchen. The demo kitchen is enclosed with etched glass and cherry oak wood from the floor up to about 4 to 5’. The demo kitchen connects to the left of the main kitchen. The same lighting used in the main kitchen will illuminate the demo kitchen (with the exception of the skylight). Both kitchens will have stainless steel appliances, white flooring tile that is approved for commercial kitchens, ceiling tiles by Armstrong. The school offices and classroom are located on the north wall of the building. There will be skylight panels and sconce lights in the back corridor with wood flooring. The faculty offices will be enclosed in glass partitions with carpet, desk lamps, task lighting and LED down lights on occupancy sensors. The classroom will have hard wood floors with fluorescent linear pendent lights and track lights with occupancy sensors. The east corridor

Concept Statement:Exquisite dining and learning experience

Sustainability being incorporated into my design is as follows.

I would like to use LEED approve materials from the above list to be used in my design.My concept statement: Traditional DesignMy design for the school and restaurant will be based on fine dining. Texture walls, carpet, hard wood floors in the dining area, sky light with electric shades. Bath rooms designed in marble. I would like to use booth seating 2-4 people a few tables to seat 2 people. My student garden will be 5x10’. Herbs in the garden:

Veronica Todd 000683511 Analysis Learning The classrooms were larger than 550 sq ft., with a maximum of 16 students per class two students per station. The facility offices are located in the corridor. The offices have task lighting, chair, desk, and under the counter and over head storage. There is also a demo kitchen. The classes operated on a five week rotation. The circulation and rules of the kitchen are decided by chef of the class. There are eight working chef at the school.

DemoThe demo kitchen is a state of the art kitchen with TV monitors. There are also large flat screen TV for showing cooking demonstrations, notes can be posted and special classes are also held in this room.

The administration offices are located down a corridor

The students also grow a vegetable and herb garden.

There are only two restroom located in the area of the school. Two stalls to service 129 students.

DeliveryThe dining room of the restaurant holds approximately 70 people with two and four people per table. There is also outside seating on the patio. The dining room have three check out station designed in book shelf style station. We need to add ADA seating in the dining room. There is 3 layer lighting and daylight lighting in the dining room.

LEED CreditsAt this time CCN has it's Forest Stewardship Council Certification so we can offer FSC certified core, veneers and solid wood. Certified materials qualify for LEEDS MR 7.
