• Berdasarkan kadarnya dalam bahan pangan, mineral terbagi atas 3 klp:– Unsur makro: dapat dinyatakan
dalam persen (mis. antara 0.01-0.1 %)
– Unsur mikro: kadarnya dalam bahan pangan sekitar 1 – 10 ppm (10-4% - 10-3 %)
– Trace element: kadarnya < 1 ppm (<10-4 %)

• Methods such as infrared and neutron activation allow for mineral estimation without destruction of the carbon matrix of carbohydrates, fats, protein, and vitamins that make up foods.
• However, traditional methods: generally require that the minerals be freed from this organic matrix in some manner.
• Water samples are in a form such that minerals may be determined without further preparation.
A major concern in mineral analysis is contamination. Solvents such as water can contain significant
quantities of minerals. Therefore, all procedures involving mineral analysis
require the use of the purest reagents . In some cases, the cost of ultrapure reagents may be prohibitive. When this is the case, the alternative is to always work with a reagent blank.
A reagent blank is a sample of reagents used in the sample analysis, quantitatively the same as used in the sample but without any of the material being analyzed. This reagent blank, representing the sum of the mineral contamination in the reagents, is then subtracted from the samples as they are quantitated.
