The Effect Of Heat On Fats & OilsThe Effect Of Heat On Fats & Oils……All fats and oils are combinations of Saturated, Monounsaturated

and Polyunsaturated Fatty Acids.

Saturated fatty acids have all carbon bonds occupied by hydrogen atoms. They are highly stable and do not go rancid, even when heated for cooking. Your body makes saturated fatty acids from carbohydrates. They are found in animal fats & tropical oils like coconut and palm.

Monounsaturated fatty acids have one double bond in the form of two carbon atoms double-bonded to each other, and therefore, lack two hydrogen atoms. Your body makes these fatty acids from saturated fatty acids and uses them in a number of ways. They are relatively stable and do not go rancid easily and, therefore, can be used for cooking. The monounsaturated fatty acids most commonly found in our food is oleic acid, which is the main component of olive oil. Other sources are oils from almonds, pecans, cashew nuts, peanuts and avocados.

Polyunsaturated fatty acids have two or more pairs of double bonds and, therefore, lack four or more hydrogen atoms. The two polyunsaturated fatty acids found most frequently in our foods are the double unsaturated linoleic acid (ώ-6) and triple unsaturated linolenic acid (ώ-3). Your body cannot make these fatty acids hence they are called Essential Fatty Acids (EFAs). We must obtain EFAs from the food we eat. These polyunsaturated oils are highly reactive and turn rancid easily hence must be treated with care. Polyunsaturated oils should never be heated or used in high temperature cooking. In nature, the polyunsaturated fatty acids are usually found in the “cis” form. Some fatty acids do exist naturally in the “trans” form, as well as artificially through industrial processing and hydrogenation, which also oxidised the EFAs. Today most of the polyunsaturated oils in the diet are derived from vegetable oils like soy, corn, safflower, sunflower and canola.

One reason the polyunsaturate caused so many health problems is that they tend to become oxidized (rancid) when subjected to heat, oxygen and moisture as in cooking and processing. Rancid oils are characterized by free radicals, which attack and damage cell membranes and red blood cells. Free radicals, together with trans fatty acid damages are the inherited problems of our modern world of industrialization and commercialization.
