This demonstration provides a general overview of techniques and applications
for manufacturing edibles. CBD continues to gain momentum within the
confectionery market, making it an easy add-on to your product line. Engage in
this demo, tasting, and discussion about Charles’ recent experiences with
developing chocolate and confectionery products with CBD and THC.

Institute of Culinary Education, Consultant, and Brand Ambassador for Les

Hone your candy-making skills with a focus on the use of fruit purees in
contemporary confections and explore the underlying science of both new trends
and refined classic techniques. With an emphasis on composition and function
of ingredients (including sugars, gelling agents, fats, and flavors) the session will
unite basic confectionery theory with practical recipes featuring fruit-based
ganache, caramel, marshmallow, and gelled centers.
