2008 Cabernet Sauvignon Reserve CHAMPOUX VINEYARD TASTING NOTES This intense and amazing wine creates an entire dictionary of adjectives to describe it. Spicy layers of cloves, allspice and cinnamon wrap vanilla bean ice cream in a root beer float. Followed decadently by dense forest floor that is dripping with molasses. Suddenly a spark of orange zest with cherries laced with cocoa nibs. Challenging to describe, but infinitely delicious, this wine is only for the curious. Allow time for your palate and your mind to appreciate all of its nuances. It is both supple and structured, elegant and bold, and most importantly not to be missed! BLEND/VINEYARD INFO 97% Cabernet Sauvignon, 2% Cabernet Franc, 1% Petit Verdot 97% Champoux Vineyard Cabernet Sauvignon, Horse Heaven Hills 2% Champoux Vineyard Cabernet Franc, Horse Heaven Hills 1% Alice Vineyard Petite Verdot, Columbia Valley WINEMAKER’S NOTES Always a perennial favorite, Champoux vineyard did not disappoint in 2008. The challenges of the harvest of 2008 have grown into positive characteristics for this vineyard. We know these grapes intimately, so after completing primary fermentation with 796 yeast in stainless steel tanks they underwent malolactic fermentation in new French oak barrels, and racked clean. They were “put to bed” in new French oak barrels for 38 months. This wine, year after year, creates itself. We added a few unique components to round out the intensity of the palate. This combination, in all of our tasting trials presented the most complete and decadent wine. With only 625 cases, please enjoy it while it lasts.
