Instructions:

Heat the oil on a large soup pot over medium heat. Add the onions, celery, fennel, and garlic. Stir and cook until the onions are tender, about 5 minutes. Stir in mushrooms and continue to cook for 5 more minutes.

Pour in chicken broth and add grains and remaining ingredients.

Bring to boil then reduce to low. Cover and simmer until grains are tender, about 20 minutes.

Serve hot.

1/2 Cup - Sweet Pickle Relish

1/4 tsp - Garlic Salt

1/4 tsp - Celery Salt

1 Tbs - Mustard

1/4 Cup - Mayonnaise

Ground Black Pepper, to taste

Mama’s Potato Salad

Instructions:

Bring a large pot of salted water to a boil. Add potatoes and cook until tender, but still firm for about 15 minutes. Drain, cool, peel and mash.

Place eggs in a saucepan and cover with cold water. Bring water to a boil; cover, remove from heat, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.

In a large bowl, combine the potatoes, eggs, celery, onion, relish, garlic salt, celery salt, mustard, pepper and mayonnaise. Mix together well and refrigerate until chilled.
