    The American TaxpayerRelief Act of 2012 was

    signed by the President

    on Jan. 2, 2013.

    The most visible tax

    change in the new tax law is

    the two percent increase in the

    payroll tax. Everyone who

    draws a paycheck or has self-

    employment income will pay

    more in 2013. If youhave $40,000 in wages

    in 2013, you will pay

    an additional $800 of

    payroll taxes over

    what you paid in 2012

    on the same amount

    of wages.

    The new law

    keeps the income tax

    rates the same as theywere in 2012 for most

    taxpayers and makes

    them permanent.The

    new 39.6 percent tax

    rate will apply to sin-

    gle taxpayers making

    over $400,000 and

    couples making over

    $450,000.

    The law puts limitationson the itemized deductions and

    personal exemptions for singles

    making over $250,000 and

    married couples making over

    $300,000.

    The long-term capital

    gains rate will be 20 percent for

    singles making over $400,000

    and couples making over

    $450,000. The prior 15 percent

    and zero rates will continue to

    apply to those in the lowerbrackets as they did in 2012.

    The tax-free distribution

    to charity from an IRA by a

    taxpayer age 70-1/2 or older

    is extended through 2013.

    Special rules apply to

    December 2012 and January

    2013 distributions if the trans-

    fer is made to the charity by

    Jan. 31, 2013.

    A number of education

    tax incentives were extendedor made permanent in the new

    tax law.

    The new law makes per-

    manent the $1,000 child tax

    credit.

    The alternative minimum

    tax (AMT) has been perma-

    nently patched with a 2012

    exemption amount of $50,600

    for unmarried taxpayers and

    $78,750 for married taxpayers.

    The exemption amount will be

    adjusted annually for inflation.

    On the business front, the

    50 percent bonus depreciation

    and the $500,000 business

    expensing option are extended

    through 2013. There are alsonumerous business tax incen-

    tives extended through 2013.

    My column today

    starts with an e-mail

    I received from a

    client; no doubt he just for-

    warded it to me from one of his

    buddies who got it from one ofhis friends or co-workers. Ive

    devoted the next two para-

    graphs to sharing it with you.

    The Food Stamp Program,

    administered by the U.S.

    Department of Agriculture, is

    actually proud of the fact it is dis-

    tributing the greatest amount of

    free meals and food stamps ever.

    Meanwhile, the National

    Park Service, administered by the

    U.S. Department of the Interior,instructs us: Please Do Not

    Feed the Animals. Their stated

    reason for the policy is because

    the animals will grow dependent

    on hand-outs and will not learn to

    take care of themselves. This

    ends todays lesson.

    More people than ever in

    U.S. history are depending on

    the government to pay for

    their food, medical care and

    housing and I want to sharewith you a phone call I

    received last week in response

    to advertising a house I own in

    Morris County for rent. The

    caller was excited to hear that

    the price was rather reasonable

    for a three-bedroom rental at

    $1,800 per month. She told me

    she has four children and was

    being evicted from her current

    home because the county

    found out that she and her kidswere living in a two-bedroom

    rental, which was determined

    to be against the law. Three

    bedrooms would be acceptable.

    Arent you excited? she

    asked. Before I could answer,

    she chimed in again stating

    that the county would pay all

    but $60 of her $1,800 month-

    ly rent obligation. I asked

    about her husband, to which

    she replied, I havent got one,but the father of my four kids

    visits often.

    So what does he do? Iinquired. Her response severely

    surprised me. He works in

    management and makes

    around $70,000 annually

    before any bonuses are paid.

    Really, I replied in

    amazement. So the town pays

    your rent. Anything else?

    Yes, she proudly stated.

    They pay for all of our food,

    medical and busing the kids to

    school.I was really getting angry

    at this point. Your husband

    makes $70,000 annually and

    youre on the county dole?

    She responded that it was so

    expensive to live in the area

    and she needed some help. So

    what gives her the right to live

    in an expensive area that she

    cant afford? Answer: nothing!

    She and her boyfriend are

    scamming the system for theirown personal advantage and

    getting away with it. The gov-

    ernment cannot force people

    to marry and therefore she is a

    stay-at-home, non-working

    mother with four illegitimate

    kids. She is, in my opinion, a

    criminal, who has legally

    cheated the system for years.

    Consequently, I did not enter-

    tain her tenancy!

    Is there a lesson to belearned from these two related

    stories? The first one is have a

    family without the sanctity of

    marriage. The government cre-

    ated and perpetuated its own

    problem of abusive behavior by

    rewarding this behavior,

    instead of cutting-off aid after

    the second, third or fourth

    child. Secondly, if the animals

    are trained never to hunt because

    food is always provided, youregoing to have a lot of fat, lazy ani-

    mals waiting for more hand-outs!

    Worse yet, the rest of us con-

    tinue to pay for this behavior

    in perpetuity! One simple solu-

    tion would be to demand a

    level of work and activity for

    the public good and welfare in

    order to receive aid for all of

    those able to work. No work:

    no pay and no benefits. I

    should add here that theprospective tenant who called

    me works part time off the

    books at a local store so sheproduces not a single penny in

    revenue to off-set the thou-

    sands of county dollars shereceives every month. She has

    nothing to do to increase her

    income except to make morechildren with her boyfriend for

    the monthly reward. Given

    the chance to do the same

    thing, how many couples

    would not marry, have the

    same amount of kids and col-

    lect income, housing and ben-

    efits for decades? My guess is,

    this has and will continue to be

    a growth industry, until the

    government puts an end to it

    or modifies it! And that is partof todays lesson too. What

    about pride, up-bringing,

    morals and ethics? And not tomention religion? Shouldnt

    these also be factors?

    Well, introduce depraved

    violent video games into our

    culture, remove God from the

    pledge of allegiance and from

    the classrooms of American

    schools, and the results are an

    increase in violence (some

    involving guns), a decrease in

    academic achievement and an

    acceptance of mediocre grades.In turn, this leads to a depen-

    Professional tooth scal-ing was associated with

    fewer heart attacks and

    strokes in a Taiwanese study.

    Among more than 100,000

    people, those who had their

    teeth scraped

    and cleaned by

    a dental pro-

    fessional had

    a 24 percent

    lower risk of

    heart attackand a 13 per-

    cent lower risk

    of stroke com-

    pared to those

    who had never

    had a dental

    cleaning.

    Scientists

    c o n s i d e r e d

    tooth scaling

    frequent if it

    occurred atleast at twice

    or more in two

    years. Patients

    were followed for seven yearsand had no history of heart

    attack or stroke at the begin-

    ning of the study.

    Protection from heart

    disease and stroke was more pronounced in participants

    who got tooth scaling at least

    once a year, said Emily

    Chen, M.D., a cardiology fel-

    low at the Veterans General

    Hospital in Tapei, Taiwan.

    Dr. Chen said profes-

    sional tooth scaling appearsto reduce inflammation-caus-

    ing bacterial growth that can

    lead to heart disease or

    stroke.

    Martin Luther King,

    Jr. played a pivotal

    role in race rela-

    tions in the United States for

    nearly a decade. He helped

    secure the end of legal segre-

    gation of African-American

    citizens, created the Civil

    Rights Act of 1964 and

    served as a source of inspira-

    tion for black individuals

    across the globe.

    Dr. King did not begin

    his life as a crusader or public

    figure. He had much more

    modest beginnings in rural

    Atlanta. Born Michael King,

    Jr., he was the middle child

    of Michael King, Sr. and

    Alberta Williams King.

    Michael King, Sr. served as

    pastor of Ebenezer Baptist

    Church upon the death of his

    father-in-law, who was the

    churchs prior pastor. At this

    point, the elder king decided

    to change his name to

    Martin Luther to honor the

    famed Protestant religious

    leader. His son soon decided

    to adopt the name as well.

    A religious family, the

    Kings tried to shield their

    children from the realities of

    racism that were alive and

    well in the country. They

    believed racism and segrega-

    tion to be an affront to Gods

    will, and Martin, Sr. discour-

    aged separation of class and

    taught these lessons to his

    children. Those lessons res-onated with Martin, Jr.

    Dr. King attended

    Booker T. Washington High

    School and was so advanced

    he was able to skip both the

    9th and 11th grades. He went

    on to college at the age of 15,

    graduating from Morehouse

    College in 1948 with a

    degree in sociology. In his

    junior year of college, King

    enrolled in a Bible class that

    sparked a renewed enthusi-

    asm for the ministry. He later

    enrolled in the liberal

    Crozer Theological Seminary

    in Chester, Pennsylvania,where he received a

    Bachelors of Divinity. Later

    bility and basic music under-

    standing to young children as

    their muscles gain strength

    through repeated activity and

    practice. Introducing dance

    technique allows each child

    to explore new ways of mov-

    ing and stretching through

    this gross motor activity. The

    he attended Boston Univer-

    sity and earned a Ph.D. at the

    age of 25. It was during his

    time in Boston that he met

    his future wife, Coretta

    Scott. While he was com-

    pleting his dissertation work,

    Dr. King became the pastor

    for the Dexter Avenue

    Baptist Church of Mont-

    gomery, Alabama.

    Martin Luther King, Jr.

    became directly involved in

    the civil rights movement

    after the head of the

    local NAACP chapter in

    Montgomery met with him

    on the night that Rosa Parks

    was arrested for failure to

    give up her bus seat to a

    white passenger. Dr. King

    helped institute the Mont-

    gomery Bus Boycott. During

    this time, African-Ameri-

    cans refused to ride the

    public bus system in

    Montgomery. The boycott

    lasted 382 days. During that

    time, Dr. Kings home was

    bombed due to his involve-

    ment in the boycott, and he

    was arrested for conspiracy.

    His work paid off on

    December 21, 1956, when

    the Supreme Court ruled

    that racial segregation on

    public transportation was

    illegal.

    Dr. King promoted non-

    violent protests against

    unfairness to the African-

    American community, urging

    civil disobedience and peace-

    ful protests, tenets that

    formed the basis for

    the Southern Christian

    Leadership Confer-ence, or

    SCLC, which he led. He par-

    ticipated in numerous nonvi-

    olent protests and was arrest-

    ed several times. During one

    stint in jail, he penned his

    famous, Letter from a

    Birmingham Jail.

    Dr. King established a

    relationship with fellow

    African-American civil

    rights activist Bayard Rustin,

    who shared similar interests,

    including the teachings of

    Gandhi. Rustin would serve

    as Kings mentor and also was

    the main organizer of the

    March on Washington that

    took place on August

    28, 1963. Approximately

    250,000 demonstrators were

    involved in the march, and it

    was the largest demonstra-

    tion in the nations capital

    up to that time. In front of

    the Lincoln Memorial, Dr.

    King issued his famed I

    Have a Dream speech. He

    later met with President John

    F. Kennedy to appeal for

    greater rights for African-

    Americans and called for an

    end of segregation.

    As a result of his civil

    rights efforts, Dr. King was

    awarded the Nobel Peace

    Prize on December 10, 1964,

    at the age of 35. He was the

    youngest person ever to

    receive the honor. He donat-

    ed all of the prize money to

    his racial equality effort.

    Through the late 1960s,

    Dr. King expanded his Civil

    Rights Movement to other

    cities. But he was often met

    with criticism, especially

    when he appealed to white

    middle-class citizens. Many

    militant black organizations

    considered Kings methods

    too weak and ineffective. His

    support was faltering and Dr.

    King grew weary of marches,

    jail and protests. However, in

    April of 1968, a labor strike

    in Memphis drew Kings

    attention, and he gave a

    speech about the sanitation

    labor dispute, which would

    prove to be prophetic. The

    next day, on April 4, Dr.

    King was hit by a snipers bul-

    let while standing on an out-

    side terrace of his motel room

    at the Lorraine Motel. Kings

    words from the previous day,

    including, Ive seen the

    promised land. I may not get

    there with you. But I want

    you to know tonight that we,

    as a people, will get to the

    promised land, were haunt-

    ing. James Earl Ray was

    charged with the assassina-

    tion.

    In his honor, Americans

    have celebrated Martin

    Luther King, Jr. Day as a fed-

    eral holiday since 1986. King

    was posthumously awarded

    the Presidential Medal of

    Freedom in 1977. Many

    streets have been renamed in

    his honor, and Dr. King

    remains a source of inspira-

    tion decades after his death.

    Physical therapists can

    use a variety of envi-

    ronments and tools to

    provide therapy to patients.

    Aquatic therapy is the use of

    a water environment and

    specifically designed activi-

    ties to enhance and restore a

    persons functional abilities.

    Some of the inherent

    properties of water make it a

    very beneficial environment

    for many patients. The buoy-

    ancy of the water provides

    assistance with movement. It

    also decreases the effect of

    gravity on the body, which

    enables patients to support

    themselves more easily and

    to bear weight on weak or

    painful extremities due to

    the decreased stress placed

    on muscles, joints and bones.

    Aquatic therapy is pro-

    vided in a heated pool, tem-

    peratures ranging from 9296

    degrees. The warm water

    relaxes muscles and allows

    for improved joint range of

    motion.

    Hydrostatic pressure is

    the pressure of the water on

    the body. This pressure of the

    water surrounding the body

    helps circulate blood from

    the legs to the heart, often

    reducing swelling in the

    ankles and feet. Once

    swelling is reduced, joint ten-

    derness may decrease and

    range of motion can increase.

    Water provides resist-

    ance to movement, allowing

    for improvement in balance

    and strength in all muscle

    directions. On land, resist-

    ance is felt in only one direc-

    tion, which leads to an over

    development of some mus-

    cles and under utilization of

    others.

    After an illness, injury

    or surgery, pain and limited

    ability to bear weight may

    impact a patients ability to

    participate in land based

    physical therapy comfortably.

    In water, the pull of gravity

    on the body is not as strong

    as on land; therefore, motion

    and functional activity can

    be more comfortable in the

    pool. Water supports the

    body, reduces joint stress and

    provides resistance, as well as

    assistance to movement.

    Although aquatic thera-

    py does not work for people

    with some medical condi-

    tions, it is very beneficial for

    most patients with various

    diseases and conditions. This

    form of therapy helps to

    improve blood circulation,

    muscle strength, balance and

    endurance. It is also helpful

    Dog owners should

    take coughing very

    seriously. The issue

    could be tied to kennel

    cough, pneumonia, canine

    flu or similar bronchial issue.

    No matter the core issue,

    multiple rounds of medica-

    tions may have already been

    tried, only to find that the

    pet is still hampered by a

    coughing condition caused

    by some unknown organism,

    or pathogen. Perhaps, as is

    possible with most organ-

    isms, the involved strains

    have developed a resistance

    to common prescriptions.

    Causes of coughing

    Pneumonia, kennel

    cough, a foreign object,

    household products (any-

    thing that can be

    aerosolized) or genetic con-

    ditions such as tracheal

    hypoplasia can cause cough-

    ing issues. The most common

    infectious cause is kennel

    cough, also referred to as

    Bordetella (bordetellosis) or

    tracheobronchitis, and is

    among the more typical

    upper respiratory issues that

    may affect dogs.

    Kennel cough

    This common issue is

    highly contagious and is

    known to affect a high per-

    centage of dogs. The board-

    ing home or the groomers

    are easy places to contract

    the illness but exposure can

    be anyplace dogs contact

    each other. Causative agents

    of, or contributors to, this

    common upper respiratory

    issue may include: para

    influenza, Bordetella bron-

    chiseptica and mycoplasma.

    Canine adenovirus, reovirus

    and even the canine herpes

    virus have been known to be

    contributors. Usually, more

    than one of these are con-

    tributors. Initial symptoms

    include a hacking, dry cough,

    with a retching-like action.

    Often, the sound exhibited

    may resemble that of honk-

    ing or what a dog with a

    hairball may sound like.

    Occasionally, the cough is

    accompanied by a nasal dis-

    charge that is quite watery,

    rather than heavy. Advanced

    cases may lead to lethargy,

    along with fever and lack of

    appetite; occasionally, pneu-

    monia can result.

    Pneumonia issues

    Pneumonia has various

    forms, but as an inflammato-

    ry illness of the lungs, it can

    be life threatening, as it

    strongly affects the ability of

    the body to absorb oxygen

    from air taken in. With an

    infection resulting in pneu-

    monia, the sacs in the

    lungs, responsible for collect-

    ing the oxygen needed by the

    body, become filled with

    fluid, thereby inhibiting the

    ability to collect enough oxy-

    gen to support the body.

    Symptoms of pneumonia

    consist of coughing, elevated

    fever, difficulty breathing

    and chest pain. If these signs

    are noted then an emergency

    veterinarian visit is recom-

    mended.

    Dog flu

    Canine influenza (dog

    flu), is a highly contagious

    respiratory infection caused

    by a virus. Canine influenza

    is a relatively new condition.

    The first document-

    ed case in the U.S.

    was in January

    2004 at a Grey-

    hound racetrack in

    Florida. There have

    since been out-

    breaks throughout

    the country. The

    canine influenza

    virus is closely related to the

    virus that causes equine

    influenza. It is thought that

    the equine influenza virus

    mutated to produce the

    canine influenza virus.

    Two clinical syndromes

    have been seen in dogs

    infected with the canine

    influenza virus a mild

    form of the disease and a

    more severe form that is

    accompanied by pneumonia.

    Dogs suffering from the

    mild form of canine influenza

    develop a soft, moist cough

    but some dogs have a dry

    cough similar to the kennel

    cough caused by the

    Bordetella bronchiseptica/

    para influenza virus complex.

    Therefore, it is not uncom-

    mon for true dog flu cases to

    be misdiagnosed as kennel

    cough. Dogs with the mild

    form of influenza may also

    have a thick nasal discharge,

    which may be caused by a

    secondary bacterial infec-

    tion.

    Dogs with the more

    severe form of canine

    influenza will develop a high

    fever and show clinical symp-

    toms of pneumonia, such as

    rapid, labored breathing.

    Pneumonia may be caused by

    a secondary bacterial infec-

    tion.

    Because this is a newly

    emerging disease, almost all

    dogs, are susceptible to infec-

    tion and have no immunity.

    When a young adult

    leaves the comforts

    of home to set out

    on his or her own, homeown-

    ers are left with a bedroom that

    just calls out to be made over.

    However, the experience of a

    child leaving the nest can be

    bittersweet, and some parents

    struggle with the decision to

    renovate or leave the room

    intact. Converting a room can

    be an emotional process, but

    there are several different ways

    to put a newly vacated room to

    good use.

    What to do with a room

    may hinge on who still lives in

    the house. Another child, for

    instance, may be interested in

    upgrading to the room if it is

    larger or has amenities that the

    previous bedroom does not

    offer, like a better view or a

    bigger closet. Some have plans

    for a craft space or a library.

    Perhaps the room would be

    perfect for a man cave or a

    quiet sitting area.

    Keep in mind that the room

    may hold sentimental value for

    the child, so converting the

    space is not something that

    should happen abruptly or

    without prior notice given

    to the former occupant.

    Communication is key before

    the room can be permanent-

    ly changed into a new room.

    To get started, follow these

    guidelines.

    Start slowly. Broach the sub-

    ject with the former occupant

    of the room to gauge his or her

    reaction to the idea. If your

    child is supportive, then the

    process may move along more

    quickly. If not, you may need

    to wait a little longer before

    starting the renovation.

    Go through the rooms con-

    tents together. Your child may

    feel his or her private sanctum

    was violated if you simply box

    up belongings and ready them

    to be taken away. Instead, go

    through the room together and

    allow your son or daughter to

    pack away items of sentimental

    value. Other items can be

    donated. Consider which

    pieces of furniture might be

    kept and repurposed.

    Keep some items of value.

    Remember, you dont want

    your child to feel like his or her

    identity has been erased from

    the house. Find a way to incor-

    porate something from the

    bedroom into the new design

    to pay homage to the person

    who lived and grew up in the

    room. Keep a square of

    removed wallpaper and frame

    it. Put some well-read child-

    hood books on a shelf. Have a

    place of honor for the first soc-

    cer trophy. This way when

    your child returns home there

    will still be a piece of the

    rooms former identity.

    Work through your new

    design plan. Before removing

    furniture and any items, draw

    up a detailed renovation plan

    and establish a budget. If the

    room will become a guest

    room, the basics may already

    be there and you simply need

    to introduce new linens and a

    new paint color to transform

    the space. Consider keeping

    the room functional as a sleep-

    ing space in some way

    whether moving in a sleeper

    sofa or making a regular bed

    into a daybed so when your

    son or daughter comes to visit,

    he or she will have a comfort-

    able space.

    Make it sophisticated. Adult

    spaces differ from childrens

    spaces in their sophistication.

    Starting fresh with more

    streamlined furniture and

    bolder colors in the room will

    give it a grownup look.

    Converting a childs for-

    mer bedroom into a new and

    exciting living space for adults

    takes some planning and sensi-

    tivity. A collaborative effort

    between parent and child can

    make the process can go much

    more smoothly.

    seminar presented by Portas

    Karate Academy.

    The free community pro-

    gram was booked to capacity

    and attended by women of all

    ages from high school teens

    through senior citizens.

    Women participated in situa-

    tional awareness training

    along with learning various

    self-protection techniques

    that covered a wide range of

    assault situations. During the

    program, additional attention

    and special training were

    given to those in attendance,

    including law enforcement

    officials, security personnel

    Remodeling a basement

    is a popular home

    improvement project.

    A finished basement makes

    the space more functional

    and, when done correctly, can

    add a considerable amount of

    living space to a home.

    Finishing a basement

    pays dividends in additional

    space in a home that doesnt

    require the same level of

    investment as putting an addi-

    tion on the house. Also, the

    groundwork for a finished

    room is already there, as most

    basements are already set up

    with a poured concrete floor

    and some walls, usually cinder

    blocks. Some electrical com-

    ponents, plumbing and the

    creature comforts of drywall

    and a more inviting floor

    might be all thats necessary to

    finish a basement. The process

    can be labor-intensive, and

    many people prefer to leave it

    to a professional contractor.

    Whatever finishing method is

    chosen, homeowners should

    follow the proper procedures

    when doing the work.

    DO start with a detailed plan.

    Measure out the basement and

    mark any items that cannot be

    moved, such as a furnace,

    water heater or pipes. Create a

    design board that showcases

    the materials you plan to use

    on the project. Think about

    ways you plan to arrange furni-

    ture and consider all of the

    possible uses for the room.

    Will it be a home theater?

    Will someone be sleeping

    down there? Each scenario

    will require certain amenities

    and safety requirements.

    DONT plan to finish the

    entire basement. Doing so will

    leave you without a storage or

    utility area where you house

    holiday decorations, tools, lug-

    gage and similar items.

    DO get the scoop on building

    codes. Knowing what the

    municipality allows in base-

    ment remodeling will help you

    to customize a plan that is

    functional, safe and legal. No

    one wants to be slapped with

    fines for failing to follow the

    rules. Plus, failure to meet

    building codes could mean the

    work that has been done must

    be torn out and redone. It pays

    to follow the chain of com-

    mand and secure permits

    while having all work inspect-

    ed.

    DONT overlook adequate

    lighting in your refinishing

    plan. A basement is likely one

    area of the house that has lim-

    ited natural light pouring in.

    With traditionally small win-

    dows, or no windows at all, a

    basement needs ample light-

    ing in its design scheme. This

    may include a combination of

    overhead and task lighting.

    Ample lighting will help the

    room feel like part of the

    house and not just a forgotten

    storage area.

    DO take into consideration

    moisture issues in the base-

    ment. Many basements are

    plagued by moisture issues

    ranging from water seepage to

    condensation forming on

    walls. These situations may

    vary depending on the weath-

    er throughout the year.

    Certain materials may need to

    be used to mitigate water

    issues before finishing can take

    place. The installation of

    water-barrier systems, drain-

    age, sump pumps, or encapsu-

    lation products could drive up

    the cost of a basement renova-

    tion. It is essential to have a

    professional assess the base-

    ment water issues prior to

    starting and finishing work.

    DONT simply cover up

    potential hazards, such as

    mold or mildew. Have them

    treated instead. Otherwise,

    you could have a breeding

    ground behind drywall that

    could lead to unsafe condi-

    own Super Bowl party, the fol-lowing recipe for Thomas

    Marinated Gamecocks with

    Polenta from Debbie Mooses

    Fan Fare (Harvard Common

    Press) is perfectly suited for tail-

    gate parties or get-togethers at

    home.

    Thomas Marinated Game-

    cocks with Polenta

    Serves 414 cup honey14 cup soy sauce

    2 tablespoons chopped garlic

    2 tablespoons chopped fresh

    ginger

    1 tablespoon freshly ground

    black pepper

    1 cup water

    2 Cornish game hens with

    Polenta (at right)

    1.Combine the honey, soy

    sauce, garlic, ginger, pepper,

    and water in a small saucepan.

    Cook over medium-low heat,stirring constantly, until com-

    pletely blended. Allow to cool

    to room temperature.

    2.Use sharp kitchen shears to

    cut the game hens in half

    down the center of the back

    and breast, and place in a large

    zipper-top plastic bag. Pour in

    the marinade, seal the bag and

    refrigerate overnight.

    3.When ready to cook, pre-

    pare a medium-low fire in acharcoal grill or preheat a gas

    grill.

    4.Remove the hens from the

    marinade (discard the mari-

    nade) and grill until the juices

    run clear when the meat is

    pierced with a sharp knife,

    about 5 minutes per side.

    Serve over the polenta.

    Polenta

    2 teaspoons butter or olive oil1 teaspoon red pepper flakes

    1 tablespoon minced garlic

    1 cup finely ground cornmeal

    112 cups chicken broth

    112 cups water12 cup half-and-half14 cup grated Parmesan

    cheese, or to taste

    1 cup frozen green peas,

    thawed

    2 tablespoons julienned freshbasil

    Salt and freshly ground black

    pepper to taste

    1.Heat the butter in a largepot over medium-high heat.

    Add the red pepper flakes

    and garlic. Reduce the heat

    and cook until the garlic

    becomes opaque, about 30

    seconds. Add the cornmeal,

    then whisk in the chicken

    broth and water. Add salt

    and pepper.

    Bring the mixture to a

    low boil, then reduce the

    heat to low and simmer,whisking occasionally, until

    the mixture thickens, about

    20 minutes.

    2.Whisk in the half-and-half.If the mixture is too thick,

    add a bit more chicken broth

    or water. Whisk in the

    Parmesan, peas and basil.

    Taste and add more salt and

    pepper, if desired. Serve

    warm.

    Note: Those heading to the

    game can prepare the mari-

    nade and marinate the chick-

    en the day before. However,

    make the rest of the dish atthe tailgate.
