Project Eliminate

MNT has been cleared from twocountries in two months. In July it was Ethiopiaand in August it was Haiti. A bulletin fromKiwanis states “With the news about Haiti,MNT has now been eliminated from the entireWestern Hemisphere.”

Validation assessments are scheduled yetthis year in three more provinces of Pakistan, and in the South East Region of Nigeria thismonth. A pre-validation assessment was to beheld in September in Kenya and one is sched-uled for mid-October for Chad with sufficientfunding.

Our Club’s Commitment According to the last report dated

August, our pledge was $37,500. As of Augustwe have paid $29,354 toward that pledge

“Excellence isn’t a matter of skill, but it is amatter of attitude!”

leaving a balance of only $8,146 to be paid byNovember of 2019. We are making greatprogress, but let’s aim to meet our goal by theend of 2018.

A Prayer Of ThanksA thankful prayer that Darlene doctorhas told her that she “had cancer.”

This Is Your New Board of DirectorsStarting with the board meeting on

October 25th, these are the elected boardmembers that will be representing you: Mike,Brad, Kevin, Lonnie, Ray, and Doug.

Shocking NewsAs a contributor, I receive a newsletter

from Feeding America. I was shocked by anarticle in their current issue about how muchfood (and other related resources) are wasted inour country. This food could instead bererouted to feed starving Americans.

If I didn’t catch your attention yet, let metry harder with a few statistics quoted in thisarticle. (1) $218,000,000,000 worth of food isthrown away each year worldwide. (2) Of thelandfill volume, 21% is food waste. (3) While42 million people in the US alone struggle withhunger, 72 million pounds of food is wastedevery year in the U.S. (4) And 21% of freshwater is used to produce food that is discarded.

So how does all at food go to waste? Some of it occurs at every stage of manufactureand distribution (i.e. a dinted can of food). Some happens in the grocery store when freshfruit spoils on the shelf. Plus, “20 billionpounds of fruit and vegetables never even makeit to the store because they are left in the fieldsto be ploughed over.”

What is Feeding America doing to help? “We are leading the way by mobilizing the com-munities to take action. Because of our unpar-

alled national and local partnerships withgrocery retailers, food manufacturers, foodservice operators, farmers and others across thefood supply chain, we have unique access tofood that might otherwise go to waste. Ournationwide network of food banks also quicklydistributes food to people struggling withhunger across the country. We’ve been able toprevent 2.8 billion pounds of food from going towaste and provide it to people in need.”

Active KiwaniansThe 2016-2017 Active Kiwanians have

been determined. The awards will be presentedat a celebration during our “business meeting”on November 7th at the First Interstate Bank byMenards. I was pleasantly surprised that 12members qualified, and there three moremembers that were within 10 or fewer hours ofqualifying. This is more than double the numberqualifying last year! Great job! See you onNov. 7th.

Board Meeting Summary The Board of Directors meton Sept. 26 at the Buffalo WildWings with seven memberspresent. The invocation was

given by Vern.Lonnie reported on the shoe purchase,

which this time was held after school at therequest of the school. As a result, only 66 of the120 students were invited attended. Year todate, 522 students have been served for a totalexpenditure of $13,420.84.

Kathy has set up Blaze Pizza fundraisersfor the third Tuesdays and Wednesdays ofOctober through December at both locations. Make sure to tell the person at the cash registerthat you are there for the Kiwanis fundraiserbefore paying AND check your receipt beforeleaving the register that it denotes “Fundraiser”by your payment.

The new way of doing the 50/50 was atthe end of the trial period so the question wasasked “Do we continue or not?”. A review ofcash benefit to the club administrative fundrevealed that in August the new method yielded$28.50 vs in July $12.00. The opinion was that

Page 3: A Publication of the Rapid City Kiwanis Club · The 2016-2017 Active Kiwanians have been determined. The awards will be presented at a celebration during our “business meeting”

there is more interest in the new method so amotion was made and passed to continue thenew method into the new year.

A review was made of the boardproposed budget for the 2017-2018 as presentedby Kathleen, Kevin, and Kathy. Motion passed. The budget will be presented to the club forapproval.

Kathy gave an explanation that shereceived for the $10 service charge on our bankstatement. It is for check images in the monthlybank statement. That charge could be eliminat-ed on both of our accounts if we get a debit cardwhich she did get. It could be used for shoepurchases if Lonnie didn’t want to use his creditcard, or if Lonnie couldn’t make it to a shoepurchase.

Health Note “Garden for Good”

“Gardening is a proven tension tamerand boosts your overall mental and physicalwell-being.” It may seem like this is an oddtopic to discuss in the Fall as the climate isapproaching Winter. But gardening takes prep-aration. In late December and beginning inJanuary seed catalogues begin appearing in themailbox kindling the “gardening fever.”

Now that the frost has killed the gardenand caused the leaves to fall from the trees, attention begins to turns to preparing the gardensoil for Spring planting. It is a key time tomulch leaves and turning them under the gardensoil so they can begin to compost instead ofenlarging the landfill. This is a good ecologicalchoice and a good cardiovascular activity on acool Fall day.

Other Ecological and Health ChoicesLess Food Waste: If you grow something

in your garden, you will eat it or give it to afriend before it spoils unlike a super-market.

Better for the Environment: The typicalpackaging used in the food industry is avoidedwhen you grow your own food. In the foodindustry only “28% is recycled, 40% goes inlandfills, and 32% ends up as litter on land or inthe water.”

Higher Self-Esteem: Gardening helpsyou feel productive giving you a purpose whichimproves your mental and physical health.

Improved Focus: In today’s world we aredaily bombarded with so many stimuli thatsometimes it is hard to focus. When we aredoing tasks like weeding or digging, we aremeditative which can give our brain practice infocusing.

Stronger Immunity: “More and moreresearch shows that children who garden (andplay in dirt) develop healthier immune systems. Experts suspect grown-ups get an immune boosttoo. Source: Better Homes & Gardens

Root Vegetable CrispsYou can feel good about eating and

sharing these snacks. Beets, both red andgolden, contain a powerhouse of anti-oxidantand anti-inflammatory properties, as well as lotsof potassium. They are baked with coconut oil,a superfood that’s good for people and dogs.

• 1 medium sweet potato• 1 large parsnip• 1 medium red beet• 1 medium golden beet• 2 tablespoons coconut oil, melted

Preheat the oven to 375 degrees Fahrenheit. Scrub the vegetables under running water toremove dirt. Dry them well, then peel them. Using a sharp knife or a mandolin, slice thevegetables as thin as you can, about 1/16" to1/8" thick. In a large bowl, toss the vegetableswith the melted coconut oil until all of the slicesare coated evenly. Place the vegetables in a single layer on abaking sheet lined with parchment paper. Ifnecessary, use two baking sheets, or bake theslices in batches. Bake for 15 minutes, then remove and checkfor doneness. You want them to be crispy, butnot burned. Remove any crisps that are done, and return the pan to the oven for five more

minutes. Keep checking the crisps every threeminutes until all are crisp. Transfer the crisps to a paper towel and letcool before eating. Season the human’s servingwith salt to taste. Store extra crisps in an airtight container for up to one day.
