Aged Farmhouse • Natural Pastures Cheese Company Courtenay, British Columbia • naturalpastures.com
All the milk that goes into Natural Pastures cheese comes from local farms on Vancouver Island. Hand-made under the guidance of head cheese maker Paul Sutter, this rich tasting firm cheese is aged for about 1 year. The texture is creamy with small crystals that have formed in the cheese and the lingering flavour is slightly sweet.

This firm washed rind cheese is made in a similar method to typical Swiss mountain style cheeses. Owner and cheese maker, Shep Ysselstein studied cheese making in Switzerland and it influences all of his cheeses. Handeck is rich with complex flavours and a nutty aroma. All of the milk for this cheese comes from the family’s dairy farm.

Fromagerie de L’Abbaye Saint-Benoît is the only cheese dairy in North America that is run by Benedictine monks. Made from pasteurized whole cow milk, this premium semi-soft blue is aged at least three months in natural caves under the monastery to make it superb, with an extra-creamy texture and a complex, pleasantly lingering flavour.

The Niagara Icewine Festival Discovery Pass is your key to three weekends of wine and culinary adventures at wineries across Niagara. Discovery Pass holders can enjoy eight experiences per pass and designated drivers can also indulge in the culinary offerings with a Driver’s Discovery Pass.
There is no finer way to experience the bounty of winter than travelling along the wine route, sipping and savouring the best in local Icewine, table wines and cuisine. Experiences are $10 each without a Discovery Pass, unless otherwise stated.
