• Balthazar is a modern answer to Parisian fin de siecle brasseries. With signature red leather banquettes, aged mirrors and a vast twenty-seven foot bar, owner Keith McNally creates the most beautiful bustling brasserie this side of the Atlantic.
Balthazar patrons can order bistro favorites such as Steak Frites, Chicken Riesling, and Brandade de Morue as well as multi-tiered platters of oysters, clams, shrimp, and scallops from the on-display raw bar.
Chefs de cuisine Lee Hanson and Riad Nasr oversee the Balthazar kitchen which serves full breakfast through late-night bistro supper.
• Balthazar offers a French wine list of over 300 bottles, from country table wines to the great growths of Bordeaux and the Grand Crus of Burgundy.

Accessibility:Fondue is fun for everyone!
-Aisles and spaces between tables will be at least 36” wide for circulation.
-Wheelchairs must be able to access a minimum of 19” under the table so that center of tabletop is within arm’s length.
-Checkout counters must be a maximum of 36” high and must have a front clearance space of at least 36” for accessible approach.
-Tables must be a minimum of 36” from a wall.
-the base should not exceed 2” in height.
-the underside should be a minimum of 27” high, with the tabletop not exceeding 34” in height.
-At a condiments or toppings counter, 10” is the maximum distance from the counter’s edge that any item can be.
-The maximum height for any shelved item is 54”.

-The bathroom space will be 72”x90”.
-The entrance must have a clearance of 32” minimum.
-The sink counter must not exceed 19” in depth from the wall and must be 12” from the doorway.
-there must be 30”x48” of clear floor space directly in front of the sink.
-The toilet must be situated in a corner, 18” from the corner wall on one side and 42” from another wall or sink on the other.
-Attached ends of the grab bars must be positioned a maximum of 12” and 42” from the corner.
Kitchen Accessibility
-Ovens may not be over 30” from the floor.
-shelving cannot exceed 51”Above the floor.
-Clear knee space should be present under the sink and a portion of the working counter space should be likewise accessible.
-A clear floor space of 30”x48” should be present directly in front of the sink.
-All controls, including vent hood and stove, should be located at the front edge of the appliance or counter to eliminate reaching.
Adjustable shelving is convenient on the wall above the sink, etc..
-A retractable breadboard or working surface is convenient anywhere where efficient and accessible.

This first diagram is around the Idea of a seating-based atmosphere with the main service center being situated at the side of the space with the display area non-interfering as well.
