Gluten Free FoodThe Southern Cross Club in conjunction with the Coeliac Society - Canberra Area Support Group held Canberra’s first Gluten Free Food Fair and Coeliac Information Day on Saturday 10th March 2007.

It is estimated that over 4000 people attended the fair. The sheer numbers demonstrated to the Club what an important issue gluten free food is to the community.

The Southern Cross Club caters for members that prefer a diet free from gluten by providing;

• Gluten free gravy, mushroom, pepper and Diane sauces at the Golden Grille (Woden) along with gluten free sausages and some casseroles and soups.

• Gluten free options in the Southern Cross Restaurant and Cocktail Bar (Woden)

include; gluten free pasta, gluten free bread and gluten free desserts.

• Almost 70% of the Peppercress Restaurant (Tuggeranong) menu is suitable for a gluten free diet. Members and guest should just discuss their requirements with the service staff.

• The Valley Grille has a selection of gluten free dishes just ask for the gluten free menu at the counter.

• Gluten free items on the menu at the Lotus Bay Restaurant.

Our Chefs are always happy to modify dishes for those with a gluten free diet.

Adopt a SchoolThe objectives of the Australian Governments Adopt a School programme is to get businesses involved in school-based learning, and students involved in work-based learning. Through the programme, students gain real experience, learn about career opportunities and find out about the kinds of skills employers are looking for.

This year the Southern Cross Club adopted St Clare’s as part of this programme. This partnership culminated in a Charity Dinner being held on Wednesday 19th September at the Top of the Cross. Girls from the school worked in positions in the kitchen and front of house. The school selected Fr. Frank Jones Latin American Mission Fund to receive the funds raised at the dinner. A great night was had by all who attended and the St Clare’s girls got fabulous insite into the hospitality industry.

September 2006 saw the 20th Anniversary of the Southern Cross Club Graduate Cooks Awards. The Awards are the pre-eminent competition for graduating students who have completed Certificate III in Commercial Cookery in the National Capital and surrounding areas.

For the second year the Graduate Cooks Award also included awards for service staff and acknowledgement of their contribution to the industry.

The 20th Anniversary motto “Twenty years of encouragement and reward” sums up exactly what the Award is all about. Each year students vie for one of three valuable

awards that not only give them major recognition of their achievements in their final year but a learning experience that puts them in the top echelon of young chefs emerging in the industry.

High profile guests like Serge Dansereau and Peter and Margaret Lehmann attended the 20th Anniversary dinner, providing their invaluable experience and knowledge to the eager students.

The 20th Anniversary of the Award was an important milestone for such a prominent industry event and for the Southern Cross Club. The 21st awards dinner will take place on the 22nd of October this year.

Careers & Employment The Canberra Southern Cross Club has enjoyed a solid performance over the last year and the contribution of our employees is at the very heart of this result. The Club’s ability to deliver quality products and services to our Members relies on our ability to maintain a committed and skilled workforce.

Across the hospitality industry, employers face new challenges as we deal with a shortage of skilled employees, especially in the areas of Kitchen staff (Chefs and Apprentices) and Operational Managers (Duty Managers, Supervisors and Venue Managers).

The Club’s goal over the coming year must be to continue to recruit the best applicants, retain our existing valuable employees, engage our workforce and develop the skills of all our employees, for the health of our business and the benefit of our Members.

The Club has always taken a pro-active approach to the development of its employees and is proud of those employees that have worked their way up through the ranks to senior management positions. Over the last year the Club has offered full-time 12-month industry traineeships for Certificate III in Hospitality and this program should see a new generation of managers coming through the ranks.

These traineeships are part of an ongoing program to see entry level employees given a taste of all areas of the Club’s operations before moving onto more specialised management training in a particular department. The program that has been set up is especially suited to school-leavers, but is also a worthwhile introduction for more mature employees looking to get a start in the hospitality or club industry.

Familiar Faces The Southern Cross Club has been part of the Canberra community for some 35 years. The Club also has a long history as an employer of choice in the ACT.

We would like to recognise the following 11 staff who have over 15 years service with the Club.

Lynda Wade – Entertainment & Members Service Officer

Lynda has worked at the Woden venue for 27 years. Starting as a waiter, Lynda has done everything from Payroll to Memberships. She is the face of Woden Reception and has been our Entertainment and Member Services Officer for over 15 years.

Kay Barrs – Memberships Assistant

Beginning in Functions over 23 years ago, Kay has worked in the Golden Grille and at Reception before moving to Administration about 12 years ago. Recently Kay has moved into a new position as Memberships Assistant.

Raija Johnson – Golden Grille

Raija joined the Southern Cross team back in 1985 and for 22 years she has served our members in the Golden Grille.

Garry Spokes – Maintenance Manager

Garry left a career in retail to join the Club 21 years ago. He started as a casual Bar and Golden Grille attendant in 1986. He then became the Assets Officer before moving into his current role as Maintenance Manager in 1988.

Janelle Patten - Office Manager/Accountant

With almost 20 years at the Club, Janelle has also moved around the Club. Starting in Functions in 1987 she also worked in Stores and Bookings before moving into Administration where she is now the Office Manager.

Linda Kirkpatrick – Café Melrose

Linda has worked part time at the Yamba Sports Club for over 18 years. She has seen the Club go through many changes and currently works at Café Melrose.

Josephine Azzopardi – Golden Grille

Jo first began with the Club in 1986 before leaving for a few years, she then returned to the Club in 1989 and has been in the Golden Grille for the past 18 years.

Paul McRae – Duty Manager

In 1991 Paul joined the Southern Cross Club’s Kitchen staff and has moved up through the ranks to Duty Manager. Over the past 16 years he has worked at both Woden and Tuggeranong.

Mona Thomas – Café Melrose

Mona started with the Southern Cross Club 15 years ago and currently works at Café Melrose at the Yamba Sports Club.

Marianna Norgrove – Golden Grille

Moving from a local hotel to the Southern Cross Club over 15 years ago, Marianna has been part of the Golden Grille team since 1992.

Gus Sorrentino – Venue Manager, Tuggeranong

Gus has had over 15 years service at the Club. Like many of the senior managers, Gus has worked in all facets of the Club and is now Venue Manager at the Tuggeranong Venue.

Due to my indifferent health over recent years I have not been able to give the time and attention to the Club that I would have otherwise wished. However I have appreciated the directors continuing to put my name forward each year at the Annual General Meeting to remain as patron! God willing, I will be able to stay on as Patron until such time the good Lord chooses another path for me to follow!

Whenever I do get the opportunity to speak to the President and Directors I am always assured that they take their responsibilities very seriously particularly with regard to the sale of alcohol and the management and control of the gaming facilities. I also note that the level of community support continues to grow each year and I am assured that the Club continues to trade profitably and that the Club’s assets are capably managed.

I recall from the earliest days of its foundation that it was always the Club’s intention that it would be very

family orientated and it gives me great satisfaction that this culture continues today. It is very pleasing for me to see that the major benefactors of the Club’s many facilities are not only families but there is also a growing patronage developing among the younger adult groups. I am very encouraged by this especially as our young people, through their membership, are the future of the Club.

I urge the Directors to continue the standards set by the founding Directors which sets the Club apart from its competitors.

This year I am pleased to report a $2.3million surplus. A healthy result considering the anticipated downturn from the introduction of the smoking bans in December 2006. Following the changes to the ACT smoking laws, the club industry reported a 10% downturn across the industry. Fortunately this was not the case at our Woden and Tuggeranong venues.

The patronage of our Club sites has increased with membership numbers now above 73,000. Revenue has increased in both food and beverage, aided by:

Yacht Club:• Refurbished Interior• Additional car parking• Additional boat parking provided• Plans for an additional wharf,

Yamba Club:• Upstairs area sub-leased to Health Club giving

improved facilities to gym participants• Provision of Bocce Courts

Woden:• Renovation of the Henry’s Restaurant area and

the provision of the “soft toy” area• The continued success of “The Southern Cross

Restaurant and Cocktail Bar” (Clubs ACT 2007 Best Restaurant)

• Provision of two outdoor smoking areas

Our key priority remains on track, focusing on running an efficient club during these uncertain times. While we are optimistic about the long term, we are forecasting a smaller surplus in 2007– 08.

From 1 July 2007 the ACT Government has increased gaming tax by about 17%; resulting in an additional cost to the Club estimated at $500,000.

Our forecast also accounts for the smoking ban as it continues to impact across the industry. Our planning has positioned us well with recent renovations including provision for smoking areas easily accessible from the various lounges.

The Board has now introduced a formula for the provision of our community support; it is benchmarked above the Government’s statutory requirements. Last year we provided an additional $400,000 in community support, bringing a year total of $1.3 million from the Canberra Southern Cross Club. The additional funds were a direct consequence of our strong financial year.

With the cash reserves in an excellent position and with positive cash flow, we have continued over this last year to plan for the major rebuild of the Yacht Club and The Function Centre at Woden. Both projects have now been costed and we are confident that building will be underway inside the next six months, once our due diligence and consultations have been completed.

The Planning and Member Services committees have also been working on a new plan for the Golden Grille kitchen area, and the Valley Grille area at Tuggeranong. Both will result in larger kitchen areas providing better facilities for members.

The Canberra Southern Cross Club competed again this year in the annual ClubsACT Awards for

The Canberra Southern Cross Club has continued to provide an outstanding level of support to the Canberra community during the past year.

The Southern Cross Club is well-known for its generosity and corporate citizenry. Each year the Club contributes a percentage of its net profits to the community in the form of grants, donations and other forms of financial support.

I commend the Club for its generous contribution to the community of over $1.3 million. This figure is far in excess of that required by legislation, and over 90 local organisations have benefited from this support.

The ACT Government’s vision is for a city in which all people can reach their potential and share the

benefits of our community. That vision is clearly shared by the Southern Cross Club.

Canberra’s incredible community spirit is strengthened by many people and organisations, and it has been an inspiration to see the support and generosity generated by the Southern Cross Club.

I would like to take this opportunity to thank the Club for its ongoing contribution to the Canberra community.

measured against a regimen of accepted industry benchmarks, a new revamped Internal Audit Program and a comprehensive Risk Management Plan. For their support and guidance I thank them.

The Directors were pleased to welcome Chris Behrens to a position on the Board during the year. I thank Chris for his valued contribution this year.

Finally, I would like to thank you our members for continuing to support our club and its objectives. I look forward to the challenges of 07-08, and ask for your patience during the refurbishments. Be assured our club is expanding with your needs in mind , and these changes will introduce something that we can all look forward to with great expectation.

Once again the Canberra Southern Cross Club has achieved an outstanding result considering the introduction of the non-smoking in enclosed places legislation in December 2006.

The good growth in gaming revenue early in the financial year was quickly absorbed by the expected decrease in gaming revenue once the smoking ban was introduced. The end result was only a slight decrease in total gaming revenue across all venues compared to the previous year. It should be noted that each venue was affected differently by the ban.

The continued popularity of the Clubs’ food outlets and function facilities is a tribute to all staff concerned, from the Venue Manager, kitchen staff to the waiters/waitresses. All staff should be proud of their efforts in ensuring that all Club facilities, products and service continue to be on a high standard.

Whilst the Club had been able to maintain its financial position as well as continuing to upgrade facilities as required, it must continue to closely monitor the ongoing effects of the smoking ban.

Keeping the above in mind this year’s budget and cash flow forecasts indicate that consideration may be given to the commencement of the early planning stages of two major projects, the Yacht Club extension and the Woden Club’s new function room fit out. The progression of these projects will be contingent on achieving forecasted cash flows.

The Canberra Southern Cross Club has continued to support the community of Canberra with community contributions totalling $1.3 million, 50% above the Government’s required contribution level.

The Canberra Southern Cross Club will always strive to make significant contributions to the community while financially able.

However, this continues to be difficult with gaming machine revenue tax being increased by 17% from July this year. This increase will mean that an additional $500,000 tax will be paid for the full financial year.

The Canberra Southern Cross Club’s finances, like any household or business, is becoming harder to balance with the continued increases in the cost of goods.

The Canberra Southern Cross Club has always endeavored to absorb these costs whenever possible to enable it to continue to provide excellent meals at reasonable prices. However, budget forecasts this year include modest increase in food and beverage prices to enable the Club to recoup recent cost increases in purchases and wages.

I am sure that the new prices will still reflect good value as expected by members.

The Canberra Southern Cross Club continues to participate in the ClubACT Clubs of the Year Awards. The Club once again received a number of awards including:

Earlier in the newsletter you would have noticed a number of our staff have achieved significant milestones with the Canberra Southern Cross Club.

I would personally like to thank all staff concerned for their support and dedication over the many years with the Canberra Southern Cross Club.

During the year Mrs Carol Sawyer returned to the Club as General Manager. I welcome Carol back and look forward to her strong support in her new role.

The Canberra Southern Cross Club continues to be in a strong financial position; however this position is not taken lightly. Management and staff endeavour to provide the very best facilities, products and service to attract and maintain patronage from our members to ensure the Clubs ongoing viability. However, there are a number of influences beyond the control of individual Clubs, such as taxation, the introduction of new technology and equality with other states that if not viewed in a positive way by all concerned and in particular the regulators could have a significant impact on the Canberra Southern Cross Club’s future position as well as the viability of all Clubs in the ACT.

The past 12 months have been tremendous

for the growth of the services provided at the

Southern Cross Health Club, and the attendance by

Members. The latter has exceeded all expectations

with 30,000 plus visits per month now the norm.

Membership numbers have grown since the

business expansion was completed in June 2006,

and are currently stable at 5,400 active Members.

The most amazing part of this is that just over

2,200 of these Members are over the age of 50,

a staggering result when you consider that most

Health Clubs struggle to attract 20% of their

database from this age bracket.

Management and staff are proud of the fact that we

are able to serve this section of the market so well.

We are of course, pleased to serve many other

market segments equally as well. From people

wanting long-term weight-loss results, to the hardcore

Bootcampers, the mind-body enthusiasts, to serious

bodyshapers, we strive to continually offer and improve

the services and the environment to help everyone

achieve their health and fitness objectives.

I would once again like to extend my gratitude to the

CEO and Board of the Southern Cross Club for their

continued support and financial subsidy. Without

this, it would be impossible to continue to offer many

of the services we currently provide, in particular

many of the low cost over 50’s programs.

I also want to thank the Management and exceptional

Staff at the Health Club. Without their dedicated and

friendly day to day service, our fantastic facility would

not make the same impact on so many Members

on a daily basis.

Finally, thank you to all the Members of the Health Club,

many of whom have now been part of the Club for over

NOTE1–BasisofPreparationThe concise financial report has been prepared in accordance with the Corporations Act 2001 and Accounting Standard AASB 1039 ‘ Concise Financial Reports’. The concise financial report, including the financial statements and specific disclosures included in the concise financial report, has been derived from the full financial report of Canberra Southern Cross Club Limited.

All amounts are presented in Australian dollars.

A full description of the accounting policies adopted by the consolidated entity is provided in the 2007 financial statements, which form part of the full financial report.

In the current year, the entity has adopted all of the new and revised Standards and Interpretations issued by the Australian Accounting Standards Board (the AASB) that are relevant to its operations and effective for the current reporting period. The adoption of these new and revised Standards and Interpretations has not had any impact on the entity’s accounting policies or amounts reported in current or prior periods.

Under our Constitution, three Directors of the Board must retire at each Annual General Meeting (but are eligible for re-election, subject to the usual criteria) which is determined on a rotation basis and the three Directors who need to retire this year are Bob Lloyd, Adrian O’Loughlin and Simon Plummer. They are all eligible for re-election and have been nominated for election. In January Christopher Behrens was invited to join the Board to fill a casual vacancy and Chris will also need to stand for election. Therefore this year there will be four (4) positions declared vacant.

One other candidate has nominated for election and therefore we have five candidates standing for the four positions to be declared vacant.

Details of all candidates appear on the next page in this report and members will be requested to vote for

the four vacant directors positions. The ACT Electoral Commissioner is to be responsible for counting votes for this year’s election and the Board has appointed the Company Secretary, Rod Frazer as the Returning Officer.

After the ACT Electoral Commissioner has advised the results of the election the successful candidates will meet with the other seven Directors of the Club (prior to the Annual General Meeting on 17th October 2007) and elect the Board Executive for the forthcoming year, which will be announced at the AGM

The remaining seven Directors who did not need to stand for election at this time are, Paul Rollings, Jack Rice, Adrian Caddy, Mary Laughlin, Kim Marshall, David Grimmond, and John Lewis.

AdrianO’LoughlinI have been a Director of the Southern Cross Club for 31 years. I joined the club as a Contributory Life Member before its opening in 1972. I was made an Honorary Life Member in 1992 in recognition of my voluntary services to the Club.I have represented all members, without preference to any particular group, however I have a special interest in sport and good financial management.My intention over the next few years is to ensure the Club maintains and improves its excellent facilities and services for the benefit of members.

BrianArkleyI have been with the club for many years. I have been involved with many of the social groups within the Southern Cross Club, such as snooker darts bowls and cards. I run cribbage club every Wednesday morning.

SimonPlummerSimon is a well known face at the Southern Cross Club having been involved with Club Management for 7 years and 8 years as a Director. Self employed he has owned several small businesses in the hospitality and sporting industry. Currently a member of the Finance Committee, Member Services Committee and Risk Management Sub Committee. He is interested in all aspects of the Club, particularly member services.

ChristopherBehrensChris has been involved with the Club as a legal advisor for over 10 years. He joined the Board in January 2007. He is a Senior Executive Lawyer with the Australian Government Solicitor and formerly worked with Mallesons Stephen Jaques,Solicitors. Chris is a past President of the Woden Valley Youth Choir and has served as a board member of Capital Football. He is married with 3 school-age children and lives in the Woden Valley.

BobLloydBob has been a life member of the club since 1972 and a Director since 1996. He is currently Club President and previously served as Senior Vice President and Vice President.

Bob is dedicated to maintaining the Club’s high standards, and providing members with the widest possible range of sporting and social activities. As President, and Planning Vice President, Bob has worked extremely hard on the redevelopment of the Club’s facilities at all venues, especially the forward planning of the new look Yacht Club and the Woden function centre.
