SRA & FoodSaveConsiderate Hoteliers are pleased to support an initiative being run by theSustainable Restaurant Association (SRA) to help food service businessesincluding hotel restaurants reduce the amount of food they waste. TheSRA is running FoodSave, funded by the Mayor of London in partnershipwith the European Regional Development Fund and the London Wasteand Recycling Board, for SMEs in London. Restaurants of all kinds arebenefitting from taking part in the month-long audits which involve stafflogging the food they throw in the bin which sits on a set of scalesconnected to a tablet programmed with information about the site’s menuand food costs. The SRA then works with the catering teams to find waysof reducing food waste and tracks this over time. The SRA have also juststarted running a “snap shot” waste audit providing a high level overviewof food waste over one week. Using all the insights from the detailedFoodSave audits this is a condensed version of the project which will allowmore businesses to take part.A review of the first ten participating restaurants found average annualsavings of 1.7 tonnes (equivalent to 24 180 litre bins) and £5,500 in directfood costs. FoodSave has also acted as an inspiration for catering teams,

helping them to reassess purchasing and storage practices as well as re-jig their menus. Mark Jarvis, Head Chef at the Bingham Hotel, whichrecently completed the FoodSave programme, said: “FoodSave reallyhelped us focus on inventory waste.
