Dog daysof summer

People frequently refer to the month ofAugust as "the dog days of summer."

The dog days of summer get theirname from the star Sirius, commonlyknown as the "Dog Star." In ancienttimes, when artificial lights did notobscure the stars, people looked to thesky as a source of inspiration and answersto questions they otherwise could notexplain. Groupings of stars known as"constellations" were used to tell stories,and these stories were part of ancientfolklore.

One constellation prominent during thesummer months is Canis Major, whichincludes a bright star named "Sirius."Ancient peoples surmised that this star'sbrightness warmed the Earth, not unlikethe sun. In addition, Sirius rises and sets

in conjunction with the sun in the sum-mer. It was believed that Sirius addedeven more heat to the sun, creating thehumid and especially hot days of summer.This time on the calendar was thuslynamed the dog days of summer.

Thanks to scientific study and a betterunderstanding of astronomy and weather,it is known that the dog days of summerdo not owe their extreme warmth toSirius. Rather, the heat is a direct result ofthe Earth's tilt on its axis during this timeof the year.

Ancient people used constella-tions in the night sky to explainnatural phenomena.

Few things elicit the ire of homeownersmore quickly than insect infestationsinside a home. Though many types ofinsects can find their way into a home,ants tend to be especially skilled at suchinvasions, causing many a headacheamong homeowners hoping to send theiruninvited houseguests packing once andfor all.

Ants are attracted to food, water andshelter, making kitchens, bathrooms andlaundry rooms ideal havens for theseunwelcome critters to congregate. Suchinfestations can frustrate homeowners andmake them uncomfortable in their ownhomes, but curtailing an ant infestationneed not be so difficult.

•Identify the point of entry. Upon dis-covering an ant infestation, homeownersshould conduct a thorough inspection oftheir homes to identify where the ants areentering the home. Ants are tiny and capa-ble of crawling through the smallest ofcracks or gaps, so every home is vulnera-ble to an ant infestation. Once you discov-er an ant inside your home, follow the antrather than killing it, as foraging ants aretypically sent from a colony located out-side the home in search of moisture andfood to bring back.

•Set the bait. Once you have identifiedthe point of entry, you can then set someindoor ant bait. Adult worker ants cannotdigest solid food, which they must bringback to the colony for additional process-ing. Liquid ant baits exploit this physiolo-gy by making it easy for ants to transportthe liquid bait back to the rest of thecolony, where more ants will ultimatelysuccumb to the bait. In addition, as theworker ant carries the bait back to thecolony, it's also dropping a pheromone trailfrom the bait to the nest, ensuring thatother ants will know where to find the bait,which they will hungrily seek out, makingit easy for homeowners to eradicate theentire colony of ants.

•Expect to see more ants after settingthe bait. Baiting ants requires somepatience on the part of homeowners, whoshould expect to see more ants appear inthe hours after initially laying down the

baits. That's because the bait is intentional-ly attempting to draw ants out and attractas many of them as possible, so the moreants you see in the first couple of daysafter laying the bait, the more effectivethat bait will be at eradicating the colony.Especially large ant colonies may take upto 10 days to curtail, but smaller infesta-tions can usually be controlled within 24to 48 hours.

•Address the outdoors as well. Nearlyall ant infestations can be traced to acolony beneath the ground outside a home.Though ants prefer to invade the interiorof a home where they can find food, waterand shelter, that does not mean yourhome's exterior is immune to such infesta-tions, which can typically be found bysearching for foraging trails that look likea line of traffic filled with ants. That lineoften leads directly into a home via win-dows, doors, exhaust vents, faucets, slidingglass doors, and along gutters and exteriorwalls.

•Maintain an environment inside thehome that's uninviting to ants. Once baitshave been set and ant colonies have beencurtailed, homeowners can take steps tomake their homes less inviting to ants inthe future. Clean kitchens regularly, quick-ly cleaning up spills or crumbs, and use anexhaust fan in bathrooms and laundryrooms to cut down on the type of moisturethat may prove attractive to thirsty ants.

Wet a kitchen towel, then wrap it aroundthe wine. Twist the ends to secure, and putthe whole thing in the freezer for 30 min-utes.

If you have a little bit of touchup paintleft in your gallon can, transfer it to amason jar. Write the exact color and brandon the lid, and it will be much easier tostore.

Keep a basket by your front door foranything you need to take along when youleave. This can be store returns, back-packs, exercise gear for the gym, your sun-glasses, whatever. When you leave thehouse, check the basket!

Fresh, ripe summertime peaches - fat,deep-yellow globes, awash in the color ofa sunset.

Peaches epitomize the extravagance ofthe season of sunshiny days and the abun-dance that comes with them. It takes somany things to happen at just the righttime for this truly precious fruit to produceits bounty. If the winter is cold for justenough days, and if the spring comes atjust the right time, and if the lovely pinkbuds are allowed to bloom and are notinterrupted by mixed-up temperatures, andif rain comes but not the hail, and if thesun shines for long enough, we arerewarded.

Unlike some berries and melons thatproduce flowers in succession, and there-fore have an extended fruiting season,peach trees, like most fruit trees, form theirflowers in unison, and like a choir, theycome to a crescendo all together, at thesame time. The only grace is that differentvarieties bloom at different times. If youhave a favorite peach, you need to knowthis important fact and be ready to claimyour share. No wonder we cherish themso.

This delicious fruit is good in sweet aswell as savory dishes. Peaches shine incobblers and preserves, pies and cakes,and as a relish, salsa or a chutney. Peoplewill debate whether a sugary fresh peachshould be messed with at all, but peachesare so good at holding their unique flavor,even when boiled with sugar and cinna-mon for a jam, that a good peach will ele-vate whatever it is you decide to do withit.

Peaches, too, are like a symphonic vari-ation on a theme, with hundreds of typesthat grow well in temperate climates.There are yellow peaches and white peach-es, freestone and clingstone, all withslightly different characteristics that lendthemselves to one culinary use over anoth-er. Clingstone peaches are usually the first

to become available in many regions andare delicious for out-of-hand eating.

Freestone peaches arrive later in theseason. Because the flesh comes away eas-ily from the pit or stone in this variety,freestone peaches are easier to work within culinary preparations, and they're alsofirmer and will hold up to heat. Whitepeaches are usually sweeter, like juicycandy, but because they contain morewater, they don't hold up as well as yellowpeaches when cooking. They are wonder-ful for raw preparations, though.

No matter what variety of peach youselect, they'll shine in this recipe for mySeashore Layered Peach Salad. It's likesummertime on a plate!Seashore Layered Peach Salad

Sometimes my palate craves fresh,lump crabmeat, but my purse isn't inagreement with the price. In those cases, Iuse the more budget-friendly imitationcrabmeat, which is made of pieces ofwhite fish flavored to taste like crab.

1 pound fresh jumbo lump crabmeat2 tablespoons lemon zest1 tablespoon mayonnaise1 tablespoon Greek yogurt1/2 teaspoon dry mustard or stone-

ground mustard5 tablespoons fresh lemon juice,

divided1/2 jalapeno pepper, seeded and fine-

ly diced1/4 cup finely diced celery2 green onions, green and white

parts, finely chopped1 teaspoon salt1 teaspoon black pepper5 to 6 medium peaches (about 1 3/4

pounds), unpeeled and coarselychopped

1 tablespoon honey3 medium avocados, dicedSalad Mix (arugula, kale, spinach,

romaine, carrots, etc.)1. Pick through crabmeat, removing

any bits of shell. Whisk together lemonzest, mayonnaise, yogurt, mustard and 1tablespoon of the lemon juice. Gently foldin the jalapeno pepper, celery, onions, salt,

pepper and crabmeat, using a rubber spatu-la to keep lumps of crabmeat intact.

2. Stir together the peaches and remain-ing lemon juice. Reserve 3 cups of thepeach mixture. In a food processor, pulsehoney, remaining peach mixture and 1/2teaspoon of salt and pepper 8 to 10 timesor until smooth.

3. Spoon 1/4 cup pureed peach mixtureonto a chilled plate. Place a 3 1/2-inchround cutter in center of peach mixture onplate. (A ramekin or a clean, empty tunacan with both ends removed may be usedinstead.) Spoon one-fourth of diced avoca-dos and 1/2 cup reserved chopped peachmixture into cutter or ramekin, packingeach layer firmly. Top with about 1/2 cupof the crab mixture. Carefully remove cut-ter or ramekin from the plate.

4. Repeat procedure with remainingpureed peach mixture, avocado, choppedpeach mixture, and crab mixture on eachplate. Arrange desired amount of lettucegreens around each layered salad. Serveimmediately. Serves 4.

flavor of apricots that aren't as tasty asthey could be. If you have some freshblueberries or raspberries on hand, scatterthem over the top.

1 large lemon1 cup water8 large apricots, each cut in half and

pitted (pits reserved)2/3 cup sugar1/8 teaspoon vanilla extract1. From lemon, grate 3/4 teaspoon peel

and squeeze 3 tablespoons juice.2. In nonreactive 2-quart saucepan,

combine water, apricot pits, sugar andlemon juice and peel; heat to boiling overhigh heat. Reduce heat; cover and simmer10 minutes.

3. Strain syrup through fine sieve intosmall bowl. Return syrup to same cleansaucepan along with apricots and heat toboiling; reduce heat and simmer just untilapricots begin to soften, about 2 minutes(they will continue to cook in hot syrup).Stir in vanilla. To serve, spoon warm apri-cots with some syrup into dessert dishes.Makes 4 servings.

How one defines veg-anism is ultimately up to the individual, but sub-scribing to a process-based definition can make liv-ing a vegan lifestyle very difficult.

Back-to-school saving starts with a budget

or your own back yard, summertime activities can pro-vide endless opportunities for keeping young kids' mindssharp.

Try some of these day-to-day ideas to maintain andstrengthen the estimation skills of your preschool andschool-age children. They'll see how math relates toeveryday life.

QUANTITY: Before you open a package of peanuts,sunflower seeds or raisins at snack time, have each fami-ly member guess how many food items are inside. Writeeach guess on a piece of paper, and then count the itemsin groups of 10. Count by 10s and ones to determine theexact amount. Finally, divide evenly among family mem-bers with the "winner" receiving his or her share and the"remainder."

SIZE: Size estimation is fun to do when you unloadbulk items from the grocery store and farmer's market --or maybe some will be harvested from your own treesand vegetable garden. Let your child arrange peaches,

plums, potatoes, tomatoes, etc. in order from smallest tolargest or lightest to heaviest. Using a kitchen scale,weigh the produce to see if the sizes were estimated cor-rectly. Try estimating the weight of other random items

from around the house, too, such as toys, shoes andbooks.

TIME: When your child wants to know how longsomething will take, give him the time and an exampleof that time length. For example: 30 minutes is as longas "Sid the Science Kid" television show; 15 minutes isas long as it takes to drive to Natalie's house; and fiveminutes is the walk to the bus stop at the corner.

As you do chores together, guess how long a particu-lar task will take, such as setting the table, feeding thedog or washing the car. Write down each guess. Recordthe beginning and ending times and show how close youcome. Or, make it exciting and play "Beat the Clock" ifit's appropriate to the activity. Set a timer and try to com-plete it in the estimated allotted time.

phrase sends shivers of dread down thespines of most parents. While some expen-ditures can't be avoided, planning can go along way toward minimizing the damageto your wallet. Here are eight ways tosave:

1) Step one, as always, is to create abudget. What can you reasonably spendper child, both now and in the months tocome?

2) Before you start spending, makelists: What do you have, and what do youneed? Go through closets and see what canbe worn (at least for a few months) whenschool starts.

3) Start reading the inserts in the papernow. Your school likely will have pro-duced its "must have" supply list for eachgrade. But before you buy a single pencil,look at what's left over from last year, and

incorporate those items into your planning.Look at the dollar-type stores for consum-ables like paper, pens and erasers. Try toget enough for the whole year if you findbargains. But beware: Some stores willhave a few items priced for less on lossleaders to get you into the store, wherethey hope you'll do all your shopping.

4) Buy enough to get them through thefirst few days with new outfits, not thewhole winter. After the first week, yourchildren will see what the others are wear-ing, and you might find items coming onsale at that point.

5) Save those receipts. Sometimes anitem will go on sale after you've bought it.With receipt in hand, you might get arefund from the store.

6) Backpacks are expensive. See if afew stitches here and there on a beat-upbackpack, as well as a few colorful sew-onpatches, will make it serviceable again.

7) Make use of Goodwill, SalvationArmy and other charity shops. Theyounger the child, the more you're likely toget away with this. Once children reachmiddle school, they become more aware offashions and want to dress like their peers.Still, with careful shopping you can netreal bargains. If you need heavy wintercoats, this is the place to look, as coatstyles don't change as radically from yearto year.

8) If older children want expensivename brands, insist that they pitch in onthe cost.
