Homeowners who have not yet upgraded to a programmablethermostat could be doing themselves a significant disservice.Not only are programmable thermostats key to saving energy,they also save money.

The Alliance for Environmental Sustainability note that forevery degree they adjust their thermostats, homeowners savebetween 1 and 3 percent on their heating and cooling bills.Setting the thermostat slightly warmer in the summer and a notchor two cooler in the winter can save a considerable amount ofenergy and money. The United States Department of Energy sayshomeowners who make slight seasonal adjustments to their ther-mostats can save as much as 10 percent a year on heating andcooling costs.

But such adjustments are only truly effective when homeown-ers commit to them on a daily basis. The best way to stay on topof temperature settings is to purchase a programmable thermostat,which allow homeowners to predetermine when heat or air condi-tioning will turn on and off.

According to Energy.gov, a common misconception associatedwith thermostats is that a furnace or an air conditioning systemworks harder than normal to get the space back to a comfortabletemperature after the thermostat has been set back, and that this

hard work means the overall savings are negligible. However,when a home's interior temperature is similar to the temperatureoutside, the home will lose energy to the surrounding environ-ment more slowly. The lower the interior temperature, the slowerthe heat loss in cold weather, and a higher interior temperaturewill slow the flow of heat into your house in hot weather.

Programmable thermostats are available in a variety of mod-els. Some are easier to program than others. Certain thermostatscan be linked to a home's wireless system so that adjustments tothe thermostat can even be made when you are not at home.Consult with an HVAC expert to see if a particular thermostatworks best with your system.

The location of the thermostat also is important. The thermo-stat should be placed where it can get the most accurate readingof the house. It should be on an interior wall away from directsunlight, doorways, drafts, and windows. It should not be directlyfacing an air vent. Avoid placing furniture above or below thethermostat, as such furnishings can impede proper air flow.

If you feel like your HVAC system is cycling on and off evenafter programming, you may need to call a technician, who candetermine if there are any obstructions to the thermostat or if theunit is the appropriate size for your home.

Separating flu facts from fictionCold and flu season seems to arrive earlier and earlier each year. As more people

begin to sniffle and sneeze and feel lousy, they may look for ways to shorten the timethey spend battling the flu.

Myths about the flu are nearly as plentiful as the myriad home remedies to banishit. Separating flu facts from fiction can help people more effectively deal with theirnext bout of influenza. The following are a few of the morewidely spread myths with regard to the flu.

•Cold weather causes the flu. Going out in the coldweather with your hair wet is probably not a goodidea if you want to keep your immune systemhealthy. However, the weather is not a direct causeof cold or flu. Rather, contact with the virus throughcontaminated surfaces or by saliva or mucous trans-mission is how many people catch the flu.

•The flu shot injects the body with the flu virus.Some people vehemently oppose getting the flushot because they believe the immunization itselfwill cause them to get sick. Actually, the virus inthe flu shot is inactive and cannot make a personill. The virus used in the vaccine is grown inchicken eggs and killed off before it wouldcause illness. Minor reactions, such as mus-cle soreness, can occur at the injection site.Nasal flu immunizations do contain the livevirus, but even with nasal applications, it isvery rare to get sick from the immunization.

•You can starve a fever. Chills, fever and nausea are potential flu symptoms. Thenotion that you should "feed a cold and starve a fever" has prevailed through the years,but this treatment method really isn't beneficial. Although a person with the flu maynot feel like eating much, he or she should try to remain hydrated and eat as healthy aspossible. Salt and potassium are important electrolytes, so consuming crackers,bananas, vegetable soup, and fruit juices can help the body fight the illness.

•Zinc and vitamin C can kick the flu to the curb. Evidence that taking zinc and highdoses of vitamin C will help make the cold or flu go away faster is somewhat mixed.Some indications point to throat lozenges with zinc as helping the body fight the flu.Although some people stand by mega-dosing with vitamin C, the body most likelywon't absorb that much of the extra vitamin C for it to have any benefit. •Antibiotics banish the flu. Running to the doctor for an antibiotic prescription willnot make the flu go away more rapidly. Antibiotics cannot treat viral infections, eventhough they may be used to treat certain side effects or bacterial infections that resultfrom the flu, such as an ear infection.

While we are one big United States, thevastness and diversity of our country ismost obvious in the food we eat. While weall salute the same flag, when it comes tofood, we form smaller, ferociously loyalgroups. Our culinary inheritance wasgranted to us by the distinct land that eachof us calls home, and the place where wetook our first bites.

There are certain foods that are nativeto a New Englander’s dinner table -- foodthat for decades, even centuries, sustaineda whole line of Pilgrims -- that someonefrom Colorado wouldn’t consider eating.Historically, there were many good reasonsfor that.

Today, there are even more reasons toappreciate the different foods that are com-mon to our particular part of the continent.Thanks to the farm-to-table movement, weare all coming to understand the true valueof eating local, and cooking with what isavailable in our area.

If you are a Southerner, you’ve proba-bly had more than one bowl of Purple Hullpeas. They are a cultivar of a bigger familyof Southern peas, or cow peas. Most peo-ple have heard of its more popular cousin,the black-eyed pea, even if they’ve neverspent New Year’s Day boiling up a pot fla-vored with a smoked ham hock. In theSouth, we also enjoy crowder peas, creampeas and the more exotic pink-eye. Manytimes, people from this region refer to thewhole lot of them as “peas,” which some-one from the North would strongly dis-agree with.

It’s all a little confusing, with so manysimilar types that are each slightly differ-ent from the other. Especially since all ofthem are not really peas by botanical defi-nition, but beans. Peas also possess all thewonderful qualities of beans as a meatless

source of protein and daily fiber.It is believed that Southern peas were

brought here from Africa and planted byplantation and farm owners as food forlivestock. That's how black-eyed peasbecame known as cow peas.

Peas often are a confusing category ofvarieties that only Southerners truly under-stand. But in deep summer, all of thesetypes of peas are available. Peas are sopopular that there are festivals celebratingthe harvest all over the South.

As with so many foods, though, whatwas once scorned is now craved. Folkswho’ve grown up eating them covet freshpeas, which cook up in no time. But if youcan’t get fresh, then use the ones in thefrozen vegetable section of your grocery.Whether fresh or frozen, they’ll be deli-cious in my recipe for Southern Succotash.

Southern SuccotashThis the perfect recipe to prepare in a

slow-cooker! I love the addition of fresh orfrozen okra at the end of the cooking time.If using fresh okra, don’t cut the pods untilright before adding them to the pot to pre-vent them from becoming slimy.

1 smoked ham hock (about 1 1/2pounds) or 1 package of smoked turkeywings (about 1 1/2 pounds)

1 1/2 cups water or low-sodiumchicken broth

1 can (28-ounces) diced tomatoes,undrained

2 cups fresh black-eyed peas or 1(16-ounce) package black-eyed peas orcrowder peas, thawed

2 cups fresh corn kernels or 1 pack-age (10 ounces) frozen corn, thawed

1 1/2 cups fresh lima beans, shelledor 1 1/2 cups frozen lima beans, thawed

1 medium green pepper, seeded andchopped

1 medium onion, chopped3 celery ribs, chopped1/3 cup ketchup2 tablespoons poultry seasoning1 1/2 teaspoons salt1 teaspoon paprika1 teaspoon black pepper1 teaspoon sugar, stevia or honey1/4 teaspoon cayenne pepper or sev-

eral dashes of hot sauce, to taste1 bay leaf1 cup sliced fresh or frozen, cut okraIn a Dutch oven or large, 5-quart slow

cooker, add in ham hock or smoked turkeywings, tomatoes, fresh or frozen black-eyed peas, corn, lima beans, green pepper,onion, celery, ketchup, poultry seasoning,salt, paprika, pepper, sugar, cayenne pep-per or hot sauce, and bay leaf, and stir tocombine.

If using a Dutch oven, bring mixture toboil and immediately turn heat down to asimmer. Simmer, uncovered, for 45 min-utes. Add okra and simmer, uncovered, for15 minutes longer. Discard bay leaf beforeserving. Serves 12-16.

If using a slow cooker, cover and cookthe mixture on HIGH for 4 to 6 hours. Addin the okra and cook on HIGH for another20 minutes. Discard bay leaf before serv-ing. Serves 12-16.

2 cups all-purpose flour 1 tablespoon baking powder 1 1/2 teaspoons ground cinnamon 1 teaspoon ground ginger 1 teaspoon baking soda 1/2 teaspoon salt 1/4 teaspoon ground nutmeg 1/8 teaspoon ground cloves 1 1/3 cups sugar 4 tablespoons (1/2 stick) light corn-

oil spread1 can (10 3/4 ounces) condensed

tomato soup 2 large egg whites 1 teaspoon vanilla extract Confectioners' sugar, for garnish1. Preheat oven to 350 F. Spray 13- by

9-inch metal baking pan with nonstickcooking spray.

2. In medium bowl, combine flour,baking powder, cinnamon, ginger, bakingsoda, salt, nutmeg and cloves.

3. In large bowl, with mixer at highspeed, beat sugar and light corn-oil spreaduntil well-mixed, about 2 minutes, con-stantly scraping bowl with rubber spatula.

4. Reduce speed to low, beat in undilut-ed tomato soup, egg whites, vanilla and1/4 cup water. With mixer at low speed,gradually add flour mixture and beat untiljust blended.

5. Pour batter into baking pan, spreadevenly. Bake cake 30 minutes or untiltoothpick inserted in center comes outclean. Cool cake completely in pan onwire rack. When cool, sprinkle lightlywith confectioners' sugar. Cut cake length-wise into 4 strips, then cut each stripcrosswise into 4 pieces. Makes 16 serv-ings.

1 cup diced unpeeled cucumber1/4 cup (3/4 ounces) crumbled feta
