• Carefully read all instructions before operatingand save for future reference.

• Do not place the 800 Class Espresso Machinenear the edge of a bench or table duringoperation. Ensure the surface is level, cleanand free of water.

• Remove any promotional stickers beforeusing the 800 Class Espresso Machine forthe first time.

• Do not place the 800 Class Espresso Machineon or near a hot gas or electric burner, orwhere it could touch a heated oven.

• Always make sure the 800 Class EspressoMachine is properly assembled beforeconnecting to power outlet and operating.

• Use only cold water in the water tank. Do notuse any other liquid.

• Never use the 800 Class Espresso Machinewithout water in the water tank.

• Ensure the filter holder is firmly inserted andsecured into the brewing head before usingthe machine.

• Never remove the filter holder during the brewing operation as the machine isunder pressure.

Your 800 Class Espresso Machine will havethe Drip Tray, Storage Tray and Water Tank in place when you unpack it from the box.

The Storage Tray is located at the base of themachine against the back wall. The Drip Tray islocated in the base of the machine in front of theStorage Tray. The Water Tank is located over theDrip Tray, in the front opening of the machine.

The 2 stainless steel Filters, Cleaning Tool,Measuring/tamping Spoon, Filter Holder andFrothing Jug will all be packed inside the foampackaging. Ensure you have located all parts andaccessories before throwing out the packaging.

The Storage Tray is a convenient location tostore the Cleaning Tool, stainless steel filtersand Measuring/tamping Spoon when not in use, so they are not misplaced.

Remove the Drip Tray, Water Tank and StorageTray and wash all parts and accessories inwarm, soapy water using a non-abrasivewashing liquid. Rinse and dry thoroughly.

TO REASSEMBLE: STEP 1Insert the Storage Tray into the base of themachine and slide in towards the back wall.This is a convenient location to store theCleaning Tool, stainless steel Filters andMeasuring/tamping Spoon when not in use, so they are not misplaced.

STEP 2Place the Drip Tray full Indicator into the theDrip Tray and then place the stainless steel gridon top. Slide the Drip Tray into the base of themachine in front of the Storage Tray.

STEP 3Slide the Water Tank over the Drip Tray andinto the front opening of the machine and intoposition above the Storage Tray. Ensure theWater Tank aligns flush with the sides ofthe machine.

Before first use: It is recommended to completea water brewing operation without groundcoffee before brewing your first espresso coffeeto ensure that all internal piping has beenpreheated (follow Steps 1 and 4 in Operatingyour Breville 800 Class Espresso Machine –Pages 13 and 15).

NOTE: Do not clean any of the parts oraccessories in the dishwasher

STEP 1 – FILLING THE WATER TANK• Ensure the Power On/Off button is ‘Off’ and

the Selector Control is set to the ‘•’Standby position.

• Turn the machine off at the power outletand unplug the power cord.

• Remove the Filter Holder if locked into theBrew Head and move the Steam Wand to theside of the machine.

• Remove the Water Tank by pulling with the handle insert in the front of the Espresso Machine.

• When the Water Tank is removed, a black tubeslides and extends out from the Water Tankstorage area. Do not touch or try to removethis tube, it will automatically slide back intoposition when the Water Tank is reinserted.

• Fill the Water Tank with cold water to themaximum mark on the Water Window andslide the Water Tank carefully back intoposition in the machine.

• Alternatively the Water Tank can be accessedfrom the rear of the machine. Press thebutton at the back of the Cup Warming Plateand the Water Tank Filler will open. Ensure theWater Tank is fitted firmly into position. Fillwith cold water to the maximum mark on theWater Window and close the Water Tank Filler.

NOTE: Check the water level before useand replace the water daily.

The water tank should berefilled with fresh cold waterbefore each use.

Do not use mineral or distilledwater or any other liquid.

STEP 4 – PRIMING THE BREW HEAD

• Before placing the Filter Holder into position,it is recommended to run a short flow ofwater through the Brew Head.

• Ensure the Selector Control is in the ‘Standby’position and plug the power cord into a230/240V power outlet and switch on. Pressthe Power On/Off button and the buttonsurround will illuminate. When the machinehas reached the correct temperature theSteam button surround will also illuminate.

• The machine will make a pumping noise thenthe Heating Light will flash red. When thecorrect temperature has been reached thelight will go out. The heating light will cycleon and off while the machine is on in orderto maintain the correct temperature.

• Place a container or empty cup under theBrew Head.

• With the filter holder removed, prime theBrew Head by turning the Selector Control tothe ‘Espresso’ position momentarily. Apumping noise will be heard in this operation.

STEP 5 - PRE-WARMING THE CUPS• The Cup Warming Plate will start to warm as

the machine heats.

• Pre-warm the espresso cups by placing on theCup Warming Plate. This will help maintainthe coffee’s optimal temperature when brewedinto the cups.

STEP 6 – INSERTING THE FILTER HOLDER• Place the Filter Holder underneath the Brew

Head so that the handle is aligned with theinsert graphic. Insert the Filter Holder up intothe Brew Head and rotate the handle to theright until resistance is felt, this will be at anapproximate 90° angle to the machine.

STEP 2 - PREPARING THE COFFEE• Place the 1 or 2 cup filter into the Filter

Holder (use the smaller filter for 1 cup andthe larger filter for 2 cups). Or for producing alarger extraction for a mug of coffee alwaysuse the 2 cup filter and only extract 60ml.Should you require a larger coffee, add thehot water first and then extract the coffee.

• When using a 1 cup filter holder, for optimumflavour, you should only extract approximately30ml. When using a 2 cup filter holder, foroptimum flavour, you should only extractapproximately 60ml.

• Use 1 level measure of ground espresso coffeefor the 1 cup filter and 2 level measures forthe 2 cup filter. It is important to use thecorrect amount of coffee for each Filter as thefilter perforations have been constructed toutilise the pressure in the machine to extractoptimal flavour with each brewing. (Refer toThe Grind on Page 21).

STEP 3 - TAMPING THE COFFEE

• Distribute the coffee evenly in the Filter andpress down lightly with the tamping end ofthe measuring spoon (Refer to Coffee MakingTips on Page 21).

• Clean any excess coffee from the rim of theFilter holder to ensure a proper fit into theBrew Head.

STEP 7 - BREWING THE COFFEE• The red ‘Heating’ light cycles off when the

machine has reached the correct temperaturefor brewing.

• Ensure the Drip Tray and Grid are in place.

• Place one or two pre-warmed cups beneaththe Filter Holder outlet.

• Set the Selector Control to the ‘Espresso’position.

• After a few seconds*, aromatic coffee willbegin to brew into the cups. A pumping noisewill be heard in this operation.

• When sufficient coffee has flowed into thecups, set the Selector Control to the ‘Standby’position. This will stop the flow of coffee.

• If the steam function is not required, leavethe Selector Control to the ‘Standby’ position,unplug the power cord and allow the machineto cool.

PRE-BREW FUNCTION• When the Selector Control is set to the

‘Espresso’ position, the 15 bar pump pumpswater momentarily, followed by a pause, thencontinues to pump the water through to theground coffee in the Filter Holder. The groundcoffee is moistened by a small amount ofwater before full extraction and expandsresulting in greater pressure build-up toextract all the oils and full flavour from theground coffee. The ground coffee expands andwhen greater pressure is built up, the brewedcoffee is extracted with its full flavour.

STEP 8 – EMPTYING THE FILTER HOLDER• Remove the Filter Holder from the Brew Head

by turning the Filter Holder to the left until itreleases. To empty the used coffee grounds,turn the filter holder upside down in a binand gently tap out the coffee (used coffeegrounds should be thrown away withdomestic waste and not down the sink whichmay block drains). Remove the Filter by usingusing the indents on the side of the FilterHolder. Rinse the Filter and Filter Holder withwater and allow to dry.

The 800 Class Espresso Machine comescomplete with a Commercial Swivel Steam Wandand Stainless Steel Frothing Attachment. Whenusing the Frothing Attachment a large amount offroth is easily created.

If less froth is required, remove the FrothingAttachment and steam the milk using the SteamWand. To remove the Frothing Attachment,ensure it is cool then simply pull down andremove. The Frothing Attachment can be storedin the Storage Tray inside the machine if notused regularly.

To refit the Frothing Attachment ensure it issecurely attached to the Steam Wand byinserting it, from either end opening, onto theWand and pushing firmly upwards onto therubber surround. Ensure the fine steam holes oneither end of the Frothing Attachment are cleanto achieve optimal frothing.

• Turn the power button ‘On’

• The first step in making a cappuccino or lattéis to make a short espresso. Refer to“Operating your Breville 800 Class EspressoMachine” on Page 12.

• Then fill the stainless steel frothing jug 1/3 fullwith cold fresh milk.

• Turn the Selector Control to the ‘Steam’position. (Refer to information on Steam andHot Water buttons on Page 19.) The ‘Heating’light will start to flash indicating that theThermoblock Heating System is heating andpreparing to create steam.

STEAM BUTTON/HOT WATER BUTTON• The Steam button surround will automatically

illuminate after the machine has first reachedthe correct temperature.

• The machine will always automatically defaultto the Steam button when the appliance isfirst switched on.

• Both buttons cannot be operated at the sametime.

• To select steam: when the Steam buttonsurround is illuminated, just set the SelectorControl to ‘Steam’

• To select hot water: press the Hot Waterbutton and the surround will illuminate, thenjust set the Selector Control to ‘Steam’.

• If the machine remains switched ‘On’, the lastbutton function used (Steam or Hot Water)will stay illuminated.

HOW TO FROTH MILK FOR A CAPPUCCINO OR LATTÉ

• When the red ‘Heating’ light stops flashing,quickly insert the Steam Wand into the jug ofmilk so that the Froth Attachment is justimmersed into the milk.

• Hold the frothing jug at an angle so that theFrothing Attachment sits just below thesurface of the heating milk and the steam willmove the milk around the inside of the jug ina circular motion.

• When the milk starts to increase in volume,immerse the Frothing Attachment deeper intothe jug to heat the milk.

• Hold the jug at an angle with one hand andplace your other hand on the outer base ofthe stainless frothing jug.

• When the base of the jug becomes too hot totouch, set the Selector Control to the‘Standby’ position, stopping the steamingfunction before removing the jug. A pumpingnoise will sound for a short time, do not bealarmed as there will be a five second delayprior to the machine carrying out the Auto-purge function.

• Pour the steamed milk into each cup offreshly brewed espresso coffee and spoon inthe frothed milk, in the following ratios:Cappuccino - 1/3 espresso, 1/3 steamed milk,1/3 frothed milkLatté - 1/3 espresso topped with steamed milkand about 1cm of frothed milk, traditionallyserved in a glass)

NOTE: For brewing more coffeeimmediately after using thesteam function, the 800ESfeatures an auto-purge function.This ensures that ground coffeewill not be burnt by the initialwater flow from the thermoblockthat could be too hot. Insteadthis water is automaticallyreleased internally into the DripTray ensuring that the internalthermostat is at optimaltemperature for extractingcoffee. Your coffee will alwaysbe extracted at this optimaltemperature ensuring onlythe best flavoured coffeeis achieved.

NOTE: Always ensure that the Frothing Attachment has beenfirmly pushed onto the SteamWand and connects with therubber surround.

For best results use cold freshmilk (low fat milk will froth easier)

Always clean the Steam Wandand Frothing Attachment afterevery use. Refer to Care andCleaning on Page 20.

WARNING: MILK SHOULD NOT BE ALLOWED TO RUN OVER THE TOP OF THE FROTHINGATTACHMENT, OTHERWISE IT WILL NOT FUNCTION PROPERLY.

TO AVOID SPLATTERING OF HOT MILK, DO NOT LIFT THE END OF THE FROTHINGATTACHMENT ABOVE THE SURFACE OF THE MILK WHILE FROTHING.

ENSURE THE SELECTOR CONTROL IS IN THE ‘STANDBY’ POSITION BEFOREREMOVING THE FROTHING JUG.

NOTE: When the 800ES is creatingsteam a pumping noise can beheard. This is the normaloperation of the 15 Bar pump.

NOTE: If steam starts coming fromthe Steam Wand before it isimmersed in the milk, pause thesteam by turning the SelectorControl back to the ‘Standby’position. This will avoid thesteam pressure blowing milkout of the jug.

NOTE: The 800ES features a SwivelSteam Wand assembly so the position of the Steam Wand can be changed to acomfortable angle.

The 800ES features a separate Hot Waterfunction that can be used for making tea, hotchocolate and other warm drinks. The hot wateris dispensed from the Steam Wand.

To use the Hot Water function, remove theFrothing Attachment from the Steam Wand.Press the Hot Water button then turn theSelector Control to ‘Steam’ . The Hot Waterbutton surround will illuminate when selected.

Place a jug or cup underneath the Steam Wandto collect the hot water).

To turn the hot water off, turn the SelectorControl to the ‘Standby’ position.

Limit the extraction of hot water to 2 litres each use.

The machine is not designed to make wholepots of coffee and tea. The more the amount ofwater is extracted the cooler it becomes.

COFFEE MAKING TIPS

USING THE HOT WATER FUNCTION

Making a good cup of coffee is an art that issimple to achieve. Here are some tips to helpyou make the perfect coffee.

THE COFFEEPre-ground coffee can be used and should bestored in an air-tight container, in a cool, dryarea. Pre-ground coffee should not be kept forlonger than 1 week as flavour will diminish. Donot refrigerate or freeze.

Whole coffee beans, freshly ground just beforeuse, are recommended. Coffee beans should bestored in an air-tight container, in a cool, dryarea but should not be kept for longer than 1month as flavour will diminish. Do notrefrigerate or freeze.

WATER FLOWWhen brewing coffee, make sure the water flowsthrough the Coffee Filter at the correct rate.

If the water flow is too slow the coffee will beover extracted and will be very dark and bitter,with a mottled and uneven crema on top.

If the water flow is too fast, the coffee will beunder extracted – the optimal flavour will notdevelop, the coffee will be watery and lack thethick crema on the top.

The water flow can be adjusted by varying thepressure that the coffee is tamped (presseddown) in the Filter or by changing the grind ofthe coffee.

THE GRINDIf using a pre-ground coffee, ensure an espressogrind suitable for espresso/cappuccino machinesis purchased.

If grinding coffee beans, the grind should befine but not too fine or powdery. The grind willeffect the rate at which the water flows throughthe coffee in the Filter and therefore the taste ofthe coffee.

If the grind is too fine (looks like powder andfeels like flour when rubbed between fingers),the water will not flow through the coffee evenwhen under pressure. The resulting coffee willbe over extracted, too dark and bitter, with amottled and uneven crema on top.

If the grind is too coarse the water will flowthrough the coffee too quickly. This will result in an under-extracted coffee lacking in flavourand without the thick crema on the top layer of coffee.

COFFEE MAKING TIPS

NOTE: To enjoy an optimum flavouredespresso coffee, do not extractmore than approximately 30ml(using the 1 cup filter holder) orfor a double espresso do notextract more than 60ml (using a2 cup filter holder).

USING THE HOT WATER FUNCTION

NOTE: If the machine remains switched‘On’, the last button functionused will stay illuminated. Tochange to the steam function,simply press the Steam buttonso that the steam light surroundilluminates and turn theSelector Control to the ‘Steam’position. TAMPING THE COFFEEAfter measuring the ground coffee into the Filterit must be tamped (pressed down) using the flatend of the measuring spoon. The ground coffeeshould be tamped quite firmly.

If the coffee is not tamped firmly enough, thewater will flow through the water too quicklyand the coffee will be under extracted. If thecoffee is tamped too firmly, however, the waterwill flow through the coffee too slowly and thecoffee will be over extracted.

CLEANING THE STEAM WAND AND FROTHING ATTACHMENT• The Steam Wand and Frothing Attachment

should always be cleaned after frothing milk.

• Remove the Frothing Attachment and rinse inwarm tap water. Ensure the two fine steamholes on either end of the FrothingAttachment are clear. Use the pin on theCleaning Tool to unblock these holes.

• Wipe the Steam Wand with a damp cloth,then with the Steam Wand directed back intothe drip tray, briefly set the Selector Controlto the ‘Steam’ position and press the HotWater button. This will clear any remainingmilk from inside the Steam Wand.

• Ensure the Selector Control is in the ‘Standby’position. Press the "on/off" button to off,switch off at the power outlet, unplug thepower cord and allow the machine to cool.

• If the Steam Wand remains blocked, use thepin on the Cleaning Tool to clear the opening.

• If the Steam Wand continues to be blocked,the tip of the Steam Wand can be removed by using the spanner in the middle of theCleaning Tool.

• Soak the tip in hot water before using the pinon the Cleaning Tool to unblock. Replace thetip back onto the Steam Wand and securewith the Cleaning Tool.

CLEANING THE FILTERS, FILTER HOLDER ANDBREWING HEAD• The stainless steel Filters and Filter Holder

should be rinsed under water directly afteruse to remove all coffee particles. Should thefine holes in the filters become blocked, thefine pin on the Cleaning Tool can be used toclear the holes.

• The Brew Head interior should be wipedwith a damp cloth to remove any groundcoffee particles.

• Periodically run water through the machinewith the Filter Holder in place, but withoutany ground coffee, to rinse out any residualcoffee particles.

CLEANING THE OUTER HOUSING / CUP WARMING PLATE• The outer housing and cup warming plate can

be cleaned with a soft, damp cloth (do notuse abrasive cleansers, pads or cloths whichcan scratch the surface).

CLEANING THE DRIP TRAY• The Drip Tray should be removed, emptied and

cleaned at regular intervals, particularly whenthe Drip Tray Full Indicator is showing full.

• Remove the Drip Tray Full Indicator and Gridfrom the Drip Tray, wash with warm soapywater, using a non-abrasive washing liquid,rinse and dry thoroughly.

• If further cleaning is required the full indicatorcan be removed from the drip tray byreleasing the side snaps.

CLEANING THE STORAGE TRAY• The Storage Tray can be removed after the

Drip Tray is removed then cleaned with a soft,damp cloth (do not use abrasive cleansers,pads or cloths which can scratch the surface).

DECALCIFYING• After regular use, hard water can cause

mineral build up in and on many of the innerfunctioning components, reducing the brewingflow, power of the machine, and affecting thequality of coffee.

• We advise decalcifying the machine on aregular basis (every 2-3 months) using amixture of white vinegar and water. Follow theinstructions provided, or use the following asa guide:

Diluted solution (for softer water)

• 1 part white vinegar

• 2 parts cold tap water

Concentrated solution (for harder water)

• 1 part white vinegar

• 1 part cold tap water

DECALCIFYING THE MACHINE• Ensure the Selector Control is in the ‘Standby’

position, the Power On/Off button is set tothe ‘Off’ position and the machine is switchedoff at the power outlet and unplugged.

• Remove the Filter Holder and FrothingAttachment. Pour the mixture of white vinegarand water into the water tank.

• Plug the machine into the power outlet andswitch on.

• Set Power On/Off button to the ‘On’ positionand the Selector Control to the ‘Standby’position

• Place a large container under both the BrewHead and the Steam Wand.

• When the brewing temperature is reached the‘Heating’ light will switch off. Set the SelectorControl to the ‘Espresso’ position and let halfthe mixture of white vinegar and water runthrough the Brew Head.

• Set the Selector Control to the ‘Steam’position and allow the remaining liquid to runthrough the Steam Wand. When the liquidstops flowing, set the Selector Control back tothe ‘Standby’ position.

• After decalcifying, remove the Water Tank andrinse thoroughly then re-fill with fresh coldwater. To rinse the machine, run half thewater through the Brew Head and halfthrough the Steam Wand.

• The machine is ready for use.

NOTE: Do not clean any of the parts oraccessories in the dishwasher.

WARNING: DO NOT IMMERSE CORD, PLUG OR APPLIANCE IN WATER OR ANY OTHER LIQUID.

THE WATER TANK SHOULD NEVER BE REMOVED OR COMPLETELY EMPTIEDDURING DECALCIFYING.

BAKED CUSTARDS WITH FRESH RASPBERRYAND COFFEE FLOATServes 6

750ml cream3⁄4 cup caster sugar

2 vanilla beans, cut lengthways

1 tablespoon gelatine3⁄4 cup strong espresso coffee, cooled

1 punnet fresh raspberries

1 tablespoon caster sugar, extra

1. Combine the cream, caster sugar and vanillabeans in a saucepan. Stir over medium heatuntil just boiling. Remove the vanilla beans.

2. Add the gelatine and stir constantly with awooden spoon until dissolved. Remove fromheat. Allow the custard to cool.

3. Pour custard evenly into 6 x 150ml glasses.Refrigerate for minimum 3 hours or until set.

4. Place the raspberries into a medium sizedbowl, sprinkle with sugar and crush lightlywith a fork.

5. Fold the cooled coffee through the crushedraspberries. Cover and chill in the refrigerator.

6. To serve, top the custards, when set with theraspberries and coffee mixture.

7. Serve immediately with freshly brewed coffee.

11⁄2 cups mascarpone

11⁄4 cups cream

21⁄2 tablespoons icing sugar1⁄2 cup strong espresso coffee, cooled1⁄2 cup Tia Maria or coffee liqueur

16 sponge fingers

Cocoa powder, for dusting

1. Combine the mascarpone, cream and icingsugar in a large bowl. Whisk lightly until softpeaks form. Set aside.

2. Combine the coffee and liqueur in a bowl.Dip the sponge fingers into the coffee mixturea few at a time. Ensure all the coffee mixtureis absorbed evenly by the sponge fingers.

3. Layer half the sponge fingers evenly into thebase of 4 dessert bowls or glasses. Spreadthe layered sponge fingers with half of thecream mixture. Repeat the layers withremaining sponge fingers and cream mixture.

4. Dust evenly with cocoa powder andrefrigerate until required.

COFFEE, CINNAMON AND WALNUT MUFFINSMakes 12

21⁄2 cups plain flour

2 teaspoons baking powder

1 teaspoon ground cinnamon3⁄4 cup caster sugar

1 cup sour cream

2 x 60g eggs

1 teaspoon finely grated lemon rind1⁄3 cup olive oil3⁄4 cup strong espresso coffee, cooled

1 cup roughly chopped walnuts

1. Sift the flour, baking powder and cinnamoninto a large bowl and stir in the sugar.

2. Place the sour cream, eggs, lemon rind, oiland espresso coffee into a medium bowl, stiruntil well combined.

3. Fold creamed mixture and walnuts into thesifted ingredients, do not overmix.

4. Spoon the mixture evenly into 12 lightlygreased and base lined muffin tins until twothirds full.

5. Place into a preheated oven 180°C for 12-15minutes or until cooked when tested.

8. Serve warm, or cooled and spread with RichCoffee Icing. Delicious with a Cappuccino orCafé Latté.
