  • rides Essence interviewed wedding photographer Gerhard de Bruin of SilverZone Images in KZN.

    Gerhard please tell us about yourself.A: I am in my late 40s, married with two lovely daughters. We live on the lovely dolphin coast of KwaZulu-Natal, a stones, throw from Ballito; almost on the beach. I come from a media background and worked at one of SAs leading newspapers for 20 years as a inhouse photographer and a senior journalist. I then went out on my own as a professional freelance photographer. I love cooking, braaing, beer, rugby, women I guess I am just your typical South African male. Oh yes and I forgot to mention I also love photography.

    Where did you grow up?A: I grew up in the Karoo in a small town called Cradock, in the Eastern Cape.

    Where are you based and what geographical area do you cover?A: I am based in Westbrook, KwaZulu-Natal about 6km from Ballito where I do a lot of my business.

    What made you choose photography as a profession?A: I have been interested in photography ever since I was a teenager and took my first photographs with an old Yashica camera that belonged to my dad.

    Did you study photography?A: Yes I studied it at School of Art at Port Elizabeth Technicon.

    How long have you been a wedding photographer?A: Over the last 30 years or so I have photographed a few weddings, however since I started Silverzone Images I have photographed alot more weddings.

    How many weddings do you photograph per year?A: It all depends on the year. On average around 22 per year. Remember I am not just a wedding photographer, I photograph a lot of other stuff too, so I have to make space for that as well in my timeframe.

    What sets you apart from other photographers?A: I do not like to compare myself to other photographers. I guess we all have our own style. I am a perfectionist, and will go the extra mile to get the perfect pictures for my clients.

    What do you offer in your bridal packages?A: I try and target the middle to budget weddings. My prices vary from just over R3000 to about R12 000 for the most expensive. It must be a win win situation for both the bridal couple as well as the photographer. I believe there are a lot of photographers out there who just charge exorbitant prices.

    Do you take pre-wedding photographs?A:Yes I do if asked, or if it is included in the particular wedding package.

    Do you have any advice for Brides on how to choose the right photographer?A: Beware of those ultra cheap photographers.Those sort of wedding packages where you get 4 photo albums, three canvass prints, even a free chocolate, a zillion prints etc for only R2999! or even lower. It might be a good thing to ask the guy if he does photography as a living, or just on the side. Also find out how long he has been a professional. Not everyone is a crook but do be wary.

    Are you able to match a brides budget?A:I try my best to. Each wedding package is worked out very carefully to give clients the most value for their money.

    Do you have a favorite pose for Brides?A: Not really. Each brides is different, you

  • can sort of read them beforehand and only then decide how youd like them to pose and what will work best.

    What is your preferred equipment brand?A:I use Canon, but I also have no problem with Nikon. To me those two are the leading brands in the world when it comes to DSLRs.

    What is your favorite photography accessory, other than your camera?A: My tripod.

    If you had to choose one lens which one would it be and why?A: I guess the Canon 24 70 mm F2.8 is a pretty good choice for wedding photography, as well as for a lot of other stuff. You can shoot in decent low light, have a medium wide angle to medium zoom capability, and the images that those lenses deliver are crisp and sharp. I guess, arguably, among the best lenses ever made.

    How important is Photoshop in your final images?A: I see it as important tool, however only to do slight tweaks with color and contrast, to accentuate the sky and clouds, and to take away the odd pimple etc.

    Do you use a Mac or PC? Which do you prefer?A:I use a PC. I just find it to be cheaper and it does the job I want it to.

    lanning a wedding is an exciting season. It is a special time for engaged couples to plan the day their two lives are knitted into one and their dreams are brought together.

    A big part of this perfect day is finances. If not planned correctly, finances can cause your dream day to turn into a nightmare! It can even leave a newly married couple with much unwanted and unplanned debt; debt that can take many years to pay off.

    The best place to start your wedding planning is with the creation of a budget. There are several ways to pay for a wedding. Traditionally the brides parents paid for the majority of the wedding and the parents of the groom paid for the

    drinks, a few other smaller items and the honeymoon. However, this is no longer always the case and weddings can be paid for by both sides of the family, or either set of parents. Many couples opt to pay for the wedding themselves. Before planning anything it is best to speak to both sets of parents and discuss finances. Also talk to one another and clearly set out the budget.

    Once the budget is set, decide on the city and country you wish to get married in. Also discuss the theme and style of your dream wedding. Write an extensive list of possible expenses and start contacting venues, restaurants, dressmakers and florists to get an idea of costs. If the costs exceed your budget, it is good to go

    Other expenses not to forget are the cost of flowers, rings, hiring of the church and party favours. Make sure all the expenses fit into your budget, leaving some funds for unplanned expenses.

    Once you have decided upon the location, style and theme of your wedding, book the venue, caterers and send out the invitations. Whilst organising your wedding, constantly check and recheck your budget to make sure all the expenses are still within your budget. Your dream wedding can fit into your budget, even if it means adjusting your expectations to fit into the budget.

    Whilst planning for your big day, remember to dream big as all dreams can come true with a little help from your imagination. It is a special time, so make the most of it but dont let run away expenses ruin your day. Have fun planning!

    About 14 years ago, Kathleen Quillinan an opera singer at the time began selling fresh sauces made in her home kitchen, as a creative way to fund her singing career.

    Pesto was quite new to South African palates back then, and people were thrilled to discover the fresh flavour, revealing to Kathleen that it was possible to create a business with pesto as the signature product. And so it came to be that she laid her singing career to rest and began a new adventure, with plenty of its own theatricality!

    When designing the centrepieces for your wedding, its important to keep the tone and style of your wedding in mind as well as the time of year in order to tie everything together seamlessly. Obviously an elegant occasion calls for an elegant centrepiece design, while a casual wedding calls for something less formal and structured.

    Always try to choose flowers that are in season and local, as this will ensure that when you order, your flowers are readily available. Also choose flowers that complement your other dcor.     When briefing your floral designer make use of lots of different images that give a feel for the colours, look, feel & tone you hope to achieve. Have a look at Pinterest for fabulous wedding ideas - making your own mood board can be a lot of fun.

  • tables are rectangular a few smaller table centrepieces or centrepieces of varying sizes would look more aesthetically appealing.

    The size of the wedding centrepiece is also very important. The centrepiece shouldnt be so small that it has no impact whatsoever, or too large that it doesnt allow enough room on the table for other items such as place cards, cutlery and dinnerware. You certainly dont want a table that feels cramped and over-crowded.

    The height of the centrepiece also needs to be considered carefully. If the centrepiece is a full floral arrangement, ensure that it is short enough for wedding guests to see each other over the arrangement and be included in the conversation around the table. However, if your heart is set on a tall floral arrangement, its best to consider a single tall flower, with perhaps a few thin long branches or

    leaves so your wedding guests can clearly see each other across the table. Alternatively; tall, thin candles are also an excellent choice and can look very romantic.

    Obviously your budget will largely determine the wedding centrepiece you choose and centre-pieces can be affordable or very extravagant. Its up to you to decide how much to spend.

    There are many options available when choosing a centrepiece, and they do play a major part in the overall wedding dcor. Give them the time, thought and attention they deserve and you can create a spectacular statement at your reception.

  • Working in the online travel industry, George was born in Zimbabwe and later raised in the suburb of Woodstock in Cape Town, South Africa. Jade is a born-and-bred Capetonian of Malay, Dutch, Indian and Filipino origin, who works for an international NGO named M.S.F (Doctors without Borders).

    How we metJade: We were both working at an Australian-based customer service centre for an internet company situated in Cape Town. We gazed at each other as I was taken across the call centre floor during my introduction, with an instant connection it felt like we knew each other from somewhere. It wasnt until four weeks later that either of us found the courage to strike up a conversation. We bumped into each other in the canteen hallway and both said at the same time, Dont I know you from somewhere?! This was followed by ages spent suggesting possible places we may have met, to no avail. To this day, how we may have known each other remains a mystery. I like to believe it was just destiny.

    How he proposedJade: Its very difficult to surprise me because I am a very curious individual and nothing really goes unnoticed - I swear I should have been a detective! George wrote me a note and drew a ring on it and left the note in a place where I could find it. I found the note and was totally blown away! It was the sweetest thing.

    Our weddingThe wedding was small, intimate and lots of fun. Putting everything together was the most exciting experience. As we had a limited budget and a short time to plan, we soon learnt that creative thinking is essential. Some of the main highlights included the following: Jade: George blew my mind with the wedding car because he kept it a secret. When my dad arrived to collect me for the ceremony, I was just blown away! It was not at all what I was expecting but it was everything I wanted.George: The Sushi was absolutely amazing - it was made fresh and really had a lot of people interested.We did the twist as our wedding dance, and our wedding cake was beautiful - it even featured our best friend Renji the Chow Chow.

    Our honeymoonGeorge: I work for a travel and accommodation company, who were able to help me find an amazing yet affordable Camps Bay villa within short notice. We had a short honeymoon at the Clifton Beach Bungalow, with a longer late honeymoon planned in Zimbabwe. I am so excited because I havent been to Zimbabwe since I was five years old and I am sure Jade will love it. I want to take her on an amazing, romantic safari experience and kiss her at Victoria Falls.

    but a life styleGrant Derrick, Editor of Brides Essence caught up with Professor Tim Noakes to find out more about the LCHF diet that is currently the buzz. We also review his latest book The Real Meal Revolution. Here is the interview.

    It is believed that the Scots consumed oats. What were the effects on their health?

    Prof. Noakes: Historically the Scots included a great deal of oatmeal in their diets. It was the major carbohydrate in their diet. Apart from this they ate protein and fat. The Swiss only ate rye which they grew and milled themselves.

    The famous Canadian dentist Dr Weston Price in 1930s noticed that the children he was treating in Toronto had malformed mouths and dental caries and so he realised that a novel dental problem was developing and he wondered if it was related to changes in their nutrition. For 10 years he travelled around the world and visited 14 countries to determine what was the health of those populations that continued to eat their traditional foods and avoided the modern industrial diet, which already then was becoming full of sugar and refined flour.

    In Switzerland he found a group of people that had been isolated for 1000s of years. All they ate was meat, milk and cheese from their cattle which grazed on the most nutritious alpine spring grasses. This group of people was the healthiest that he had encountered in his 10 years of searching. They had none of the chronic diseases that are our modern scourge and no dental caries. Obviously once access was gained to this group, foreign foods were introduced and so their health began to deteriorate.

    Historically the Jews have been the healthiest of peoples. They lived according to the over 600 Levitical rules or laws. About 300 of the laws are about personal health. They recognise that infections came from external factors and thus were scrupulous in their cleanliness. Whenever plague struck a city, the Jewish communities in those cities always had the lowest death rates because they best understood the principles of hygiene. Today Jews living in Israel are not healthy. They have very high rates of heart disease, almost certainly because they eat the modern industrial diet with an extraordinarily high intake of harmful partially hydrogenated vegetable oils. This is a modern food against which the Levitical Laws are powerless.

    Out of all the different grains available, is there something that is better than wheat and high carbohydrate?

    Prof. Noakes: It all depends on an individuals tolerance to carbohydrates, also known as their level of insulin resistance. For someone who is profoundly insulin resistant, then 25-30 grams per day is the limit of the amount

    of carbohydrate they should ingest each day. Included in this list is anyone who is morbidly obese or who has diabetes. For people who dont have a weight issue, then in my opinion to maximize their health and to minimize the risk that they will develop diabetes in the long-term, they should simply limit their daily carbohydrate intake to about 200g a day. Grains can also cause other health problems because of the anti-nutrients they contain. They also contain proteins that can induce allergic reaction in many. A typical example is irritable bowel syndrome and hay fever. I suffered with IBS for 61 years and it is now completely gone as is my hay fever. And both went within weeks of my cutting out all cereals and grains in my diet. Eating grains can be acceptable for some but one has to be very cautious. Again it is down to each individual and if you have any allergic symptoms, it normally points to the grain.

    How does LCHF affect the balance of the interflora in the intestines?

    Prof. Noakes : This is still a novel science. All we know is that the people who are

    the healthiest have the greatest variation in intestinal bacteria. A lower variation seems to be related to certain diseases. In mice, obesity can be induced by

    changing the gut flora and obese rats can become lean by simply changing the intestinal flora. So if you eat mainly carbohydrates,

    your variation in intestinal flora is reduced, which may be

    an important mechanism whereby carbohydrates lead to disease. White flour is probably the worst offender in terms of its effects on gut

    flora.

    What affect do pulses and legumes have on the gut?

    Prof. Noakes : I havent really studied them enough but what I do understand

    is that all plants contain a certain amount of anti-nutrients including lectins as an inherent

    defence mechanism. An example of how this works : an animal can run away from you as a defence mechanism,

    but when you catch it, it is easy to digest. Cereals and grains on the other hand cant run, but they still have to defend

    themselves, and their only defence is making themselves less attractive to being eaten by containing these toxic elements.

    What if today is my birthday and splurge at an all you can eat buffet? What effects will this have on my LCHF metabolism?

    Prof. Noakes : If you are a fat-adapted athlete and you have a high-carb day, then the following day your metabolism will be noticeably different and will take about 3 days to return to normal. So it is not really relevant but it will definitely have a short term effect. But if you have diabetes, then your carbohydrate balance is very fragile and the recovery period will be much longer. If you are healthy, the effects are not as serious compared to someone who is unhealthy. There is also the addiction component which is key. A relapse can really start with just one teaspoon of sugar. So if you are not

    addictive and can control the occasional sugar/carb binge without slipping back into the addiction, then it is not really a big issue.

    What sort of research is going into LCHF, bearing in mind that it goes against the grain of the traditional sciences?

    Prof. Noakes : Last week I was in Washington DC with four of the worlds leading researchers in this field. We gave a talk to a diabetes conference organized by the Joslin Hospital, one of the most famous diabetes organizations in the world. Jeff Volek and Steve Phinney are the two researchers who were funded in 2000 by Robert Atkins (founder of the Atkins diet). In 1962 Robert Atkins began his work. He treated over 60 000 patients but never funded any research.

    If Robert Atkins had started to fund this research in the 1970s we would not be having this debate; the world would know that this is the diet that works in diabetes and obesity. Jeff Volek deserves the Nobel prize because he has shown that a high fat diet improves all the risk factors for heart disease every single one of them, whereas in those who are insulin resistant which is all people with Type II diabetes and probably a majority of the obese - a high carbohydrate diet does the opposite. The key finding in all this work is that carbohydrates not fat - causes the most dangerous form of abnormal blood lipid patterns- high blood triglyceride and small dense LDL-cholesterol particles and low HDL-cholesterol concentrations combined with high blood glucose and insulin concentrations. It is these changes that drive heart disease and they are reversed by a high fat, low carbohydrate diet. What we now know is that fat, especially saturated fat

    in the diet, acts quite differently in the body when it is ingested together with either a low- or a high-carbohydrate intake. When fat is ingested without a low carbohydrate intake it is entirely safe. But when fat and a high carbohydrate intake are combined, the outcome is very unhealthy.

    Gary Taubes organized the session at which we spoke. He wrote the book Good Calories Bad Calories, which is probably what got me involved. His book describes where the whole nutrition story went wrong and how the food industry influenced it and so on. The next great book on this topic has just been released. It is Denise Mingers Death by Food Pyramid. Anyone interested in their health has to read both books as should all medical practitioners and dieticians. Prof Noakes : I have published a paper in Novembers South African Medical Journal. It is simply an account of information sent

    to me over the years by more than 120 people. The average reported weight loss on the LCHF diet was 15kg these are the most astounding results, better than any other clinical trial in the world. One of the subjects lost 83kg, another lost 70kg. The report includes a medical doctor who cured himself of diabetes, hypertension, hypercholesterolemia, sleep apnoea and atrial fibrillation when he went on the LCHF diet. At the age of 57 he realised he would not make it to 65. So he told his wife that she should be prepared for that eventuality. Today he is disease free, on no medication and after checking all his blood records I expect him to live to 100. Another subject is Simon Gear, who cut 3 hours off his previous Two Oceans 56km ultra- marathon time of 7 hours to below 4 hours in less than a year.

    So there has been a great deal of research done on the LCHF, but no one knows about it because it is simply not

    taught to our doctors and dieticians. For the life of me, I cannot understand why not.

    I believe you have a new book coming out. Tell me more about it ?

    Prof. Noakes : It is called The Real Meal Revolution by Quivertree Publications. It is a great book that has been put together and edited by myself and two adventure chefs, Jonno Proudfoot and David Grier, with expert nutritional input from Sally-Ann Creed. There are over 100 delicious recipes in this book. There is a comprehensive section introducing the LCHF diet and the story behind it with some great guidelines on how to implement the diet. At the back of the book the science of the diet is explained.

    This is serious comfort food. It takes no time to prepare and stays in the oven for quite a while so you can bang it in and forget about it.

    800g courgettes 1 onion, roughly sliced 1 handful thyme sprigs

    1 head garlic, cloves peeled 250ml cream

    100g butter, broken into piecessalt and pepper

    1. Preheat the oven to 150C.2. Cut the courgettes into quarters down the middle.

    3. Lay the onion, courgettes, thyme and garlic in a lasagne or casserole dish, mix well and then press down.

    4. Dot butter over the top of the dish and cover with cream.5. Place in the oven, uncovered, for approximately one and a half hours.

    Serve hot.

    Note: If you want some extra goodness, before you serve it, give it a layer of grated cheese on top and pop it back under the grill for a cheesy crust.

    FOR THE CHICKEN:500g boneless, skinless chicken thighs 1 cup extra-thick yoghurt

    1 tbsp fresh ginger, grated 3 cloves garlic, minced salt and black pepper

    1. Mix the yoghurt, ginger and garlic and season to taste.2. Add chicken and marinate for at least 30 minutes.

    FOR THE SAUCE:3 tbsp butter 2 tsp olive oil 2 cloves garlic, minced

    1 tbsp ginger, peeled and minced 1 red chilli, minced (seeds removed if you dont want it spicy)

    2 tbsp tomato paste 2 tsp paprika 1 tsp garam masala7 roma tomatoes, diced (or 1 tin chopped peeled tomatoes)

    1 tsp salt 2 cups water cup cream 1 handful fresh coriander, roughly chopped

    1. Place a large pan on medium heat, then add the butter and olive oil. When the butter has melted, add the garlic, ginger and chilli and

    saut until lightly browned.2. Add the tomato paste and cook until the tomato has darkened

    in colour, about three minutes.3. Add the paprika and garam masala and saut for another minute.

    4. Add the tomatoes, salt and water. Bring the sauce to a boil, then turn down the heat to a simmer and cover.

    5. Cook for 20 minutes, take the pan off the heat and allow the sauce to cool for five minutes.

    6. Meanwhile, preheat your grill and cover a roasting tray with foil.7. Remove the chicken thigh chunks from the marinade and place on the

    tray. Place under the grill and cook for about five minutes on each side, until lightly charred and cooked through. Dont worry if the chicken is still a little

    uncooked but charred on the outside it will cook in the sauce.8. Use a blender or food processor to blend the sauce until smooth.

    Pour back into the pan. Bring the sauce back up to a boil and add the chicken.

    9. Reduce heat to a simmer and cook, covered, for about 10 minutes.

    10. Add the cream and fresh coriander, stir through and serve.
