The THAI Cooking demonstration Last month’s coffee morning was very well attended, and the tasters greatly enjoyed. Several people have since been interested in how the Thai sauces were made, therefore we’ve included the two menus used for those interested. AUTHENTIC THAI MASSAMAN CURRY PASTE Makes enough for 2 batches of this Massaman recipe adapted from Melbourne’s Chin Chin Ingredients: 2tbs fresh coriander, 2 red onions,3 Lemongrass stalks (white part only), 3 cloves of Garlic, 2 knobs of galangal (see notes), 10 dried red chillies soaked in boiling water and deseeded, Handful of peanuts, 2tbs Coriander seeds, 2tbs Cumin seeds and 5 cloves. Method: Start by chopping up the fresh ingredients super fine (Particularly the lemon grass and galangal) The smaller you get this, the better. If using a mortar & pestle…. Start by working the fresh ingredients and peanuts together until they start to break down, then add the spices. Keep working this (with well earned breaks in between) until a smooth paste starts to form. If using a food processer…. Add all ingredients to your processer and puree until smooth. If it needs a little help, add a splash of water and a pinch of salt and keep blending until paste forms. Kitchen Notes: To get the best result, head to your local Asian Grocer for your ingredients. Things like the coriander and lemongrass will be so much fresher and they’ll have fresh or frozen galangal. If that’s not an option, substitute galangal for ginger. Now you are ready to make your curry….

HOMEMADE THAI GREEN CURRY PASTE. Usually, the main reason to make homemade curry paste is because you just can’t get the same intense, fresh flavour in a jar. While that holds true for Green Curry Paste – the other very big advantage is that you can control the spiciness without compromising flavour or the signature green colour. 5 servings (51 calories) 4 green Cayenne pepper chilli’s – deseeded and chopped (note 1), 6 Thai green chilli’s Chopped (note 1) 2 red shallots/eschallots, chopped (Note 1), 2 Lemongrass stems, trimmed and finely chopped (about 2.5-3 tbsp) (Note 2), 2 tbsp galangal, grated (Note3) 5 cloves garlic, chopped, 2.5 tsp dried shrimp paste (Belacan) (Note 4). 2 tsp lime zest, grated, 1 tsp ground coriander. I tsp ground cumin, ¼tsp white pepper, ¼tsp turmeric, 2 tbsp chopped coriander/cilantro root and stem (Note 5), ¼ cup coriander/cilantro leaves, loosely packed, 2-3 tbsp water, as needed. Instructions: 1. Combine all ingredients except water in a powerful blender or food processor. Using a Vitamix makes the paste smoother. 2.Blend to a fine paste, scaping down the sides as you go. Add the water as required to help it blend (you may not need any as the herbs and chillies have moisture) Use this paste to make a Green Curry! Best to use immediately. Otherwise, refrigerate for up to 2 days, or freeze for one month. Notes: QUANTITY – makes enough curry paste for 1 quantity Green Curry which serves 5 people. 1) Spiciness: the green colour of green curry comes from the cayenne pepper which is not that spicy. The spiciness comes from the Thai green chillies. If you want a mild curry, skip the green chillies altogether. For a mild curry- just use 1. Using 6 makes it very spicy, but not outrageously so. It won’t blow your head off. 2) Lemongrass: Peel the tough green outer layers and use the white softer part. You’ll find the reedy layers can’t be finely chopped. 3) Galangal looks like ginger but is more citrusy and harder. You can find it in some grocery stores, if you can’t find it use the same amount of root ginger and the zest of 1 lime (in addition to what is already in the recipe) 4) Dried shrimp (Belacan) comes in small blokes. Just sort of crumble it to measure out, no need to rehydrate (per some recipes) Sold here on Amazon. DO NOT use shrimp paste in a jar – it will turn your green curry BROWN!! 5) Coriander/cilantro roots are commonly used in Thai cooking for terrific earthy coriander flavour in curries. In Western stores the roots are usual puny – also very dirty and hard to clean. So for practical reasons, we use a combination of roots and stems, then top up the flavour with leaves (this also helps the green colour) 51 Kcal/Carbonhydrates:10g/Protein:2g/Cholesterol: 28mg/Sodium: 390mg/Potassium: 67mg/ Fibre: 3g/ Sugar: 3g/ Vitamin C: 12.8mg/ Calcium:25mg/ Iron: 0.9mg.

More than 30 knives have been handed in across Cambridgeshire as part of a national knife amnesty which took place recently. Officers in Cambridgeshire joined others across the country in an operation to tackle a rise in knife crime. The week-long initiative, aimed at taking weapons off the streets and tackling associated offending, included an amnesty where members

of the public could hand in knives without fear of prosecution. Knife surrender bins were based at Thorpe Wood Police Station in Peterborough and Parkside Police Station in Cambridge. Knives could also be handed into any police station with an enquiry office across the county. In addition to this, test purchases - where someone under the age of 18 attempts to buy a knife to see if they are asked for identification - were carried out at more than 15 shops across Peterborough and Huntingdon. Two stores sold knives to the volunteers, who were under 18. One store failed to ask for ID. The other store challenged the person buying the knife for ID, but when they failed to produce some, still sold them it. The focus of the two operations was education and therefore advice was given to both of these stores, as well as positive feedback to the rest. Inspector Matt Snow said: “We are pleased that we were able to take a total of 31 knives off the streets of Cambridgeshire. “The test purchasing also offered the chance to educate stores on the dangers and risks associated with selling knives to anyone under the age of 18. It’s disappointing that two stores failed the tests, however continued working with them is ongoing to ensure the relevant checks are carried out. “Knives ruin lives and it’s important that all is done to tackle the issue. “Although the knife amnesty has ended for now, families and friends of people who carry knives are urged to encourage them to think twice, and consider the potentially devastating consequences of doing so. “If anyone is found to be carrying a knife in public, they could face a hefty fine and further prosecution by the courts.” Anyone who knows someone who carries a knife can report it anonymously by calling Crimestoppers on 0800 555 111 or visiting https://crimestoppers-uk.org/. YES One happy member using her Tempo Credits We spent the day in London yesterday and went to the Tower of London using the Tempo credits. It saved us nearly £60, only 2 credits each, and I just went to the ticket office and the salesgirl knew all about the Credits and didn’t question them at all. I would recommend them to everyone. We spent so long there, also went to the Natural History Museum, that we will have to go again to visit St Paul’s Cathedral, again using the Tempo credits!

Contact the coordinator – there is a £25 deposit (£50 for wheelchairs and buggy) which would be returnable for members providing all in good order. Plus, we now have a buggy for temporary loan.

(To vary size slightly, use No 9 or No 11 needles. To avoid any pressure on delicate skin, seams must be as flat as possible. Each hat takes about 25gm wool, which must be new. The Rosie are happy to have variations on the theme of traffic lights, e.g. stripes, blocks, patterns,

pompoms, as long as the main colour is predominant) Cast on 84 stitches, relatively loosely - K2, P2 rib for 4” - Next row K2, P2tog to end of row (63 stitches) Next row K1, P2 Repeat to end of row - Next row K2, P1 Repeat to end of row - Repeat last two rows twice more.
