The Ambruosi & Viscardi company has been leader in the cultivation and distribution of curly endive, escarole, sugarloaf chicory and red radicchio for 30 years.

The company’s strong point in these years has been the processing of first range produces. The project of the Ambruosi & Viscardi company evolves through the respect of precise planning rules that lead to high, monitored and, above all, continuing throughout the whole year quality standards. The fourth range warehouse comes up beside the first range processing to meet the new demands of a market in continuous development. All that, without ever forgetting the origins of the rural culture, those which transfer to the produces the love of the land and the warmth of the best agrarian tradition.

La produzione di insalata riccia e scarola nelle Marche è certificata secondo gli standard Global-GAP Version 3.1 2009.

Abbiamo sempre creduto nella conservazionedell’ambiente come aspetto fondamentale per la qualitàdella vita e per lo sviluppo sostenibile.

Le scelte adottate in materia di ambiente non solo assicurano il continuo e puntuale rispetto della legislazione e della rego-lamentazione applicabile, ma consente anche di conseguire un miglioramento continuo delle prestazioni ambientali, mirando sempre alla prevenzione dell’inquinamento. Tutto questo perché è volontà dell’azienda garantire che le proprie produzioni ven-gano ottenute nel pieno rispetto dell’ambiente. Di qui tutti gli investimenti fatti negli ultimi anni sono andati a limitare e ridurre l’impatto che la nostra filiera produttiva ha nei confronti dell’e-cosistema.

STAbILIMENTI Tutti gli stabilimenti di produzione di Sant’Elpidio a Mare sono alimentati interamente da energia pulita ottenuta mediante l’uso di 6600 pannelli fotovoltaici collocati nei tetti dei propri stabilimenti in grado di produrre 1.2 Megawatt di energia elettrica pulita che permette l’autosufficienza energetica.

Tutti i rifiuti ottenuti nel processo produttivo vengono gestiti attraverso convenzioni con ditte specializzate per il recupero differenziato e nel caso di rifiuti speciali con società qualificate allo smaltimento.

EnvironmEntal SuStainability The Ambruosi & Viscardi company considers the environmental conservation a fundamental aspect for the quality of life and the sustainable development.

The choices made on the subject of the environment not only ensure the continual and punctual respect for the legislation and the applicable regulation, but allow us also to achieve a continual improvement of the environmental performances, always aiming at preventing pollution. All this is done because the company wants to guarantee that its productions are made respecting the environment. Thus, all the investments made in the last years have limited the impact our productive chain has on the ecosystem.

FactoriES All the factories in Sant’Elpidio a Mare are entirely fuelled by clean energy obtained by using 6600 solar panels put on the factories’ roofs and able to produce 1.2 Megawatt of clean electric energy, which permits energy self-sufficiency. All the garbage got in the production process is managed through agreements with companies specialized in recycling and, in case of special waste, with waste disposal companies.

Sostenibilità Ambientale

TRASPORTIAnche nelle fasi di trasporto vengono valutate le possibili conseguenze ambientali, cercando ove possibile di ridurne gli impatti. Ecco perché durante la scelta dei terreni da coltivare, nei criteri di valutazione, sono stati introdotti anche le distanze dal centro aziendale e i consumi teorici di combustibile, al fine di ridurre gli spostamenti e le emissioni in atmosfera.Un’altra scelta è stata quella di acquistare mezzi di trasporto alimentati a metano sostituendoli a quelli a gasolio con l’obiettivo futuro di sostituire tutta la flotta.

SCARTI VEGETALI DI LAVORAzIONE Attualmente vengono utilizzati come concime organico sui nostri terreni di coltivazione ed in parte vengono trasportati ad un impianto biogas di proprietà per la produzione di energia elettrica. L’energia prodotta sarà utilizzata per alimentare il nuovo stabilimento di quinta gamma. Il composto residuo prodotto dall’impianto sarà utilizzato come ammendante organico per la concimazione dei terreni.

TransporTsWe consider the possible environmental consequences also in the transport phases, trying to limit the impacts where possible. Here is why during the choice of the lands to be cultivated, in the evaluation parameters, we have introduced also the distances from the business centre and the theoretical consumptions of fuel, in order to limit the transports and the emissions in the atmosphere.Another choice has been that of buying methane-fuelled means of transport, replacing the diesel-fuelled ones, and our aim is to replace all of them.

process vegeTable wasTe At present, it is used as organic fertilizer on our lands and in part it is carried to our biogas plant to produce electric energy. The energy produced will be used to fuel the new fifth range factory. The residual compost produced by the plant will be used as organic amendment to fertilize the lands.

La costante attenzione posta alla sostenibilità ambientale delle proprie produzioni ha conferito, oltremodo all’azienda, maggiore competitività nei confronti dei mercati interni ed esteri.

A completamento delle misure prese a sostegno dell’ambiente con la realizzazione del progetto “FILIERA CHIUSA” l’Azienda Ambruosi & Viscardi raggiunge il culmine delle iniziative adottate negli ultimi anni volte a migliorare ed ad ottimizzare le fasi della produzione in tutti gli aspetti.Le scelte strategiche dell’azienda, negli ultimi tre anni, sono state il rispetto dell’ambiente e l’autosufficienza energetica raggiunte traendo risorse prima di tutto dal processo produttivo stesso. La filiera è definita “CHIUSA” perché tutte le fasi del processo produttivo vengono eseguite direttamente dalla nostra organizzazione: dall’acquisto dei semi fino alla consegna del prodotto finito.Con l’acquisto del seme, rigidamente No-OGM, si avvia l’attività di produzione delle piantine ottenute all’interno del proprio vivaio. Le piantine vengono poi coltivate direttamente, sui propri terreni, utilizzando metodi certificati di produzione a basso Impatto Ambientale. Una volta raggiunto il giusto grado di maturazione i prodotti ottenuti vengono raccolti dai campi e inviati nei propri stabilimenti il cui processo produttivo risulta anch’esso certificato. L’azienda ha raggiunto l’autosufficienza energetica attraverso l’istallazione sui tetti di un impianto fotovoltaico (da 1.2 Mw) e di un impianto a biogas (da 250 Kw) nel quale si recuperano, come sottoprodotti, gli scarti della lavorazione giornaliera della materia prima. Dalla produzione del biogas (metano) si ottengono prodotti digestati che vengono utilizzati come ammendanti e concimi

cloSEd chain managEmEnt The company is paying attention to the environment on the production cycle to be more competitive on the local and European markets.Thanks to the new project “ closed chain management” the company Ambruosi & Viscardi complete the actions to achieve the target finalized some years ago to improve all the aspects in the production process.The company’s strategy in the last three years has been able to create the independent energy level to respect the environment, trough the inputs coming from production process itself. The chain is claimed “CLOSED” because all the production phase are implemented directly by the company organization, from the seed to the final product.We use only “OGM free” to produce young plant at our nursery, that we transplant in the our farms, to produce trough certified protocol with integrated pest management. After the harvest the product is processed in the our warehouse.We build the photovoltaic panel on the top of the pack-house (power 1,2 Mw) and a biogas plant (power 250 Kw) worked thanks to the daily lettuce waste.We use the residues of the biogas

organici, fondamentali per la fertilità dei terreni e con i quali si può dare inizio ad un nuovo ciclo produttivo. Non si trascura nemmeno il settore dei trasporti e della logistica in genere: qui la scelta di puntare su automezzi a metano dà nuovo slancio alla politica di rispetto dell’ambiente e alla rinnovata competitività.

La strategia adottata e che guida la politica aziendale può essere riassunta in tre punti:

Linea di Produzioneprima gamma

> Controllo sul campo del Responsabile di Campagna coadiuvato dal Responsabile Tecnico che abilitano i Lotti in raccolta;

> Controllo dei residui dei fitofarmaci con analisi chimiche periodiche;

> Taglio, in campo, del prodotto strettamente necessario al fabbisogno giornaliero dei magazzini (si fa ricorso il meno possibile allo stoccaggio in frigorifero);

> Personale formato idoneamente che lungo la linea di lavorazione controlla l’assenza di corpi estranei;

> Rispetto assoluto delle normative sull’igiene e sulla sicurezza sul lavoro (Reg CE 852/04 e Dlgs 81/2008);

> Mantenimento della “Linea del Freddo” dalla mondatura ai camion refrigerati destinati alla consegna, con temperature, costanti e controllate, tra i 2 e i 4 °C.

Il prodotto viene raccolto in campagna e trasportato ai nostri magazzini dove viene mondato da personale specializzato e ripulito dalla terra e dalle parti non commestibili con acqua potabile e di qui viene imballato (casse a perdere o casse pooling) e consegnato tempestivamente alla grande distribuzione.

Production linE - FirSt rangE The produce is picked in the countryside and carried to our warehouses where it is peeled by qualified personnel and cleaned off the earth and the inedible parts with some drinking water. From here, the produce is packed (one-way crates or pooling crates) and promptly delivered to the large retailers. The quality and healthiness of the produce are guaranteed by:

> Control in the field by the Campaign Manager assisted by the Technical Manager who qualify the lots of the picking;> Control of the plant protection products’ residues by means of periodic chemical analysis;> Cutting, in the field, of the produces that are strictly necessary for the warehouses’ daily requirements (we resort to the refrigerator storage as little as possible);> Qualified personnel that throughout the processing line control the absence of foreign bodies;> Absolute respect for the hygiene norms and the occupational safety (Reg CE 852/04 e Dlgs 81/2008);> Maintenance of the “Line of the Cold” from the peeling to the refrigerated trucks to be used for the delivery, with constant and controlled temperatures between 2 and 4 °C.

Nasce dalla necessità di soddisfare le richieste di una clientela sempre più rigorosa che deve rivolgere la propria offerta ad un consumatore sempre più attento ed esigente.

> La climatizzazione dei locali di lavorazione non supera mai i 13 °C, per non inficiare la salubrità e la fragranza del materiale vegetale lavorato;

> Oltre 4 controlli visivi, lungo il percorso, impediscono la presenza di corpi estranei nelle insalate;

> Tre vasche di acqua fredda gorgogliante (l’ultima delle quali a 3 °C di temperatura) e getti d’acqua ad alta pressione, lavano con accuratezza qualsiasi tipo di residuo;

> Dei nastri “scuotitori” ed una centrifuga asciugano le insalate già tagliate, per renderle maggiormente idonee alla conservazione in busta garantendone la croccantezza;

> Le acque utilizzate nella lavorazione sono integrate in un sistema di depurazione che le rende potabili.

Con l’ausilio dei supporti informatici, in ogni fase della lavorazione viene mantenuto costantemente efficace il Sistema di Rintracciabilità che permette in qualunque momento di risalire ai Lotti di provenienza della materia prima impiegata ogni giorno. Infine, una efficiente rete distributiva, dotata unicamente di mezzi refrigerati, rende possibile recapitare ai nostri clienti, il prodotto in busta, in meno di 24 ore dal momento della raccolta in campo delle insalate.

Production linE - Fourth rangE It is grown out of the necessity to satisfy the demands of our always more rigorous customers that has to address its supply to an always more careful and demanding consumer.

> The air-conditioning of the work places is never over 13 °C, in order not to nullify the processed vegetables’ healthiness and fragrance;> More than 4 visual controls, throughout the itinerary, prevent the presence of foreign bodies in the salads; > Three tanks filled with gurgling cold water (the last of the three is at 3 °C) and some high pressure jets of water wash accurately any type of residue;> Some “shaking” belts and a centrifuge dry the pre-cut salads, to make them more suitable for the conservation in plastic bags by guaranteeing their crispness;> The water used in the processing is integrated in a purification system that makes it drinking.With the use of data storage devices, in each processing phase the Traceability System, which allows us in any moment to go back to the Lots of origin of the raw material employed every day, is maintained constantly effective. Finally, an efficient distribution network, only equipped with refrigerated means, allows us to deliver to our clients the packed product in less than 24 hours from the moment of the salads’ picking in the field.
