    May 2011 Volume 1, Issue 6Daves pick of the month is the Grand Cru International South African

    Chenin Blanc. Dave recommends this unique white wine to any cus-

    tomer that wants a refreshing, lightly floral mid-priced wine that they

    can enjoy during the warm and humid days of summer.

    Says Dave, I like the lemony scent and how fresh and crisp it is.! I love

    drinking this Chenin Blanc while digging into steamed mussels or

    shrimp

    Called Steen when grown in South Africa, this graceful wine is light-

    bodied with a pale straw colour. The fruity scented nose has hints of green apple and lemon with

    a subtle floral bouquet rounding out the nose. On the palate the wine is delightfully refreshing.

    These four malts give it a unique and full bodied

    flavor. Deep hazelnut brown in colour, this beer

    has a malty, nutty flavor.

    The hop oil compound contributes to a complex

    and hoppy character. The micro bubble dispersion

    of the hop oils promotes maximum absorption of

    flavor and aroma components into the brew. Beer

    will be 4.5% - 5.0% ABV.

    This beer only takes 2 weeks from beginning to end!!!

    1. Let the bottle adjust t to room temperature. Unscrew and discard the solid

    cap

    2. Drop the pill into the bottle and firmly screw on the pressure cap NOTE:

    NEVER use the solid cap, the bottle will explode!

    3. Store upright and out of direct sunlight at room temperature (not below 19

    degrees Celsius) until beer comes clear (approximately 2 weeks)

    4. Refrigerate upright for at least 12 hours (this beer will explode and spray out

    of the bottle if it is not well-chilled prior to opening)

    5. Pour carefully

    Mixologists Corner

    Recipe of the MonthInstructions:

    Put ribs into a large roasting pan. Whisk together the tomato

    paste, orange juice, brown sugar, Dijon, cider vinegar, Worces-

    tershire sauce, soy sauce, chili powder, and salt. Pour over the

    ribs. Cover with foil and bake until the ribs are fork tender,

    about 2 1/2 hours.

    Pair with a glass of California Hang Ten!

    BBQ Ribs

    Ingredients:

    2 racks baby back ribs

    1 can tomato paste

    1 cup orange juice

    1 cup brown sugar

    1/4 cup Dijon mustard

    1/2 cup cider vinegar

    1/4 cup Worcestershire sauce

    1/4 cup soy sauce

    1/4 cup chili powder

    Salt

    Iced Lychee Green Tea

    8 cups water

    8 green tea bags

    1 bunch fresh mint

    1 bottle Lucious Lychee Green Tea

    wine

    1/2 cup freshly squeezed lime juice

    Sugar to taste (if desired)

    ing wine that pairs well with a variety of

    foods. North American Pinot Grigio wines

    tend to be fuller-bodied than their Euro-

    pean counterparts, with a stronger fruiti-

    ness on the palate and the nose. In fact,

    some California Pinot Grigio wines even

    have a hint of sweetness when compared to

    Italian Pinot Grigios.

    While Pinot Grigios heritage can be found

    in the Burgundy region, it is now com-

    New Zealand, Oregon, California, and even

    The Bar Harbor Cellars Winery proudly

    presents the 2011 Bar Harbor Mussels

    & Festival, an annual event at the winery

    to raise money for Angel Flight NE.

    Angel Flight NE is a non-profit organi-

    zation that files those in need to medical

    care.
