    1. Let the bottle adjust t to room temperature.

    Unscrew and discard the solid cap

    2. Drop the pill into the bottle and firmly screw

    3. Store upright and out of direct sunlight at

    room temperature (not below 19 degrees Cel-

    sius) until beer comes clear (approximately 2

    weeks)

    4. Refrigerate upright for at least 12 hours (this

    beer will explode and spray out of the bottle

    if it is not well-chilled prior to opening)

    5. Pour carefully

    and dissolve the sugar.

    750 ml or sparkling water or club soda

    3/4 cup granulated sugar

    1 cup fresh raspberries

    1 cup diced strawberries

    1 cup diced nectarines or peaches

    2 blood oranges or navel oranges

    1 lemon

    Oregon and Washington are also producing some incredible

    Zinfandel wines.

    Because red Zinfandel wines tends to be a powerful, robust

    wine, it tends to pair well with hearty meat dishes, heavy pas-

    tas, pizza, and intensely flavoured cheeses like aged cheddar

    Spotlight on ZinfandelThe taste of a red Zinfandel wine is

    largely affected by the ripeness of

    the grapes from which the wine iscreated. Cooler climate Zinfandel

    wines are often associated with

    wines with a red berry like flavor

    such as raspberry. Warmer climate

    Zinfandel wines typically have fla-

    vours of blackberry, anise and pep-

    per!

    Zinfandel is the mostly widely

    known grape variety in California,

    but many people are surprised to

    learn that the US Southwest states

    such as Arizona, Colorado, New

    Mexico, Nevada, and Texas also

    grow Zinfandel grapes.

    Zinfandel is a red grape variety

    that is widely planted in Califor-

    nia vineyards. Surprisingly, Zin-fandel is the genetic equivalent to

    Primitivo

    Many folks associate Zinfandel

    wines with sweet blush wines

    originating from California; how-

    ever, Zinfandel grapes can actu-

    ally produce a robust, hearty red

    wine that can pack quite the

    punch. The high sugar content

    in Zinfandel grapes can be fer-

    mented into a wine that can ex-

    ceed 15% alcohol.

    Ingredients:

    3 tbsp butter, plus more as needed

    10 ounces white mushrooms sliced

    1/2 to 1 tsp chili powder

    1/2 tsp kosher salt

    1/4 cup coarsely chopped fresh cilantro

    4 (10-inch) flour tortillas

    8 oz Monterey jack cheese

    2 oz crumbled feta cheese

    Sour cream, cilantro, salsa to garnish

    Instructions:

    Preheat the oven to 350 degrees F. Line

    a baking sheet with aluminum foil.Melt 2 tablespoons of the butter in me-

    dium skillet over medium-high heat. Add mushrooms, shake pan to dis-

    tribute evenly, & cook without moving until the mushrooms begin to

    brown, about 5 minutes. Do not salt. Add remaining tbsp butter along

    sides of pan if pan seems dry. Toss mushrooms, & continue to cook until

    nicely browned. Season mushrooms with the chili powder & salt & cook 1

    minute more. Stir in the cilantro & set aside.

    Toast tortillas directly on a medium gas burner, turning occasionally until

    slightly blistered on each side. (If you have an electric burner, do this in a

    dry cast iron skillet.) Place tortillas on prepared baking sheet. Spread jack

    cheese on one half of each tortilla, top with some of the mushrooms, and

    sprinkle with feta. Fold other half of the tortilla over the filling, to make a

    half moon shape. Lay another sheet of foil over the quesadillas. Bake until

    the cheese melts, about 12 minutes. Serve whole or sliced into wedges,

    with optional garnishes.

    Canadian Diabetes Association 13th

    Annual Wine & Food Fest in support of

    Camp DiaBest, a summer camp for

    children living with type 1 diabetes.

    Saturday May 12 at the Delta Frederic-
